OVEN BAKED TASTY COUNTRY FRIES
A satisfying and tasty side dish of fries to serve along with a nice steak or as a compliment to your burgers. Much better than deep fried! These make the house smell sooo goood! Another great Taste of home recipe.

Steps:
- In a shallow bowl beat egg whites until foamy.
- In another shallow bowl combine the flour, bread crumbs, parmesan cheese and seasonings.
- Cut each potato into wedges. Dip potatoes into egg whites, then coat with crumb mixture. Place in a single layer on a baking sheet coated with non stick cooking spray. Bake uncovered at 375 for 40-45 minutes. *Serve with Lighthouse ranch dressing or ranch dressing of your choice & fresh parmesan cheese.

HEAVENLY COUNTRY-STYLE HOME FRIES
These country-style home fries are a wonderful accompaniment to any breakfast, brunch or (in my family's case) breakfast for dinner. They turn out buttery and savory with a crispy brown outer coating. I like to serve these home fries when I make breakfast for dinner for my family. We enjoy them with a juicy, smokey ham steak cooked in my cast iron skillet with a side of baby peas. Yum!

Steps:
- Place diced potatoes, onion, paprika, garlic powder, salt and black pepper in a medium mixing bowl. Toss to evenly coat the potatoes.
- In a large, non-stick skillet over medium heat, melt butter.
- Increase skillet heat to medium-high and add potato mixture. Toss to coat evenly with butter.
- Cover skillet and cook for 10-12 minutes, turning and scraping the potatoes to prevent burning.
- When potatoes are fork-tender, remove skillet cover.
- With the back of your spatula, pat potatoes down into an even layer in skillet. Allow to fry untouched for 2 minutes. Then turn potatoes over and do the same for another 2 minutes. This will nicely brown and crisp the outside of the potatoes.
- Serve immediately.
QUICK & CRISPY HOME FRIES
In order to get a crispy crust like the fries at your local diner you need to precook and cool them. When you pan fry a cold starch, it gets a beautifully crispy surface.

Steps:
- Arrange potato pieces evenly on a microwave-safe plate. Microwave on high until just tender, about 4 minutes. Let cool to room temperature. Cut potatoes into bite-size chunks.
- Heat butter and olive oil in a non-stick skillet over medium-high heat. When butter melts and starts to turn brown, swirl the pan and add the potatoes. Shake pan to arrange in an even layer. Season with salt, pepper, paprika, garlic powder, and onion powder.
- As potatoes brown, toss them and keep turning them every few minutes until they are crusty and crispy-edged and a rich reddish-brown color, 10 to 12 minutes. If potatoes seem to be cooking too quickly, reduce heat to medium. Serve topped with chopped chives.

KITTENCAL'S EASY SEASONED HOME FRIES
This is easy but the potatoes will need a few hours or overnight soaked in cold water, the garlic powder and seasoned salt may be adjusted to taste, I have left the cayenne as optional I like to add it in for a little heat, if you are not a garlic-lover then omit the garlic powder --- throw in some chopped green onions the last few minutes of cooking if desired :)

- Cube the potatoes in about 3/4-inch squares.
- Place into a large bowl then cover with cold water, rinse then cover once again with water.
- Refrigerate for at least 3 hours or up to 48 hours (the longer soaking time the better!).
- Drain very well in a colander (I like to pat the potatoes dry using paper towels).
- Melt the butter in a large skillet over medium heat, then add in garlic powder, seasoned salt and cayenne pepper (if using).
- Place the potatoes in the skillet and stir to coat with the butter.
- Cover with a lid and cook for 8-10 minutes.
- Remove the lid and cook for another 10 minutes, turning frequently with a spatula for even browning and crisping.
- Season with more seasoned salt to taste and black pepper.
- Delicious!

EASY HOME FRIES
This is a very easy recipe for home fries that I got from my dad! It takes approximately 20 minutes from start to finish and you can season them however you like. I'll list the ingredients for rosemary and garlic potatoes.

- Scrub the potatoes to clean them, then chop them into bite-sized pieces.
- Place all potato pieces onto a microwave-safe plate and cover with plastic wrap. Place plate in the microwave and cook for approximately 4 minutes (on the standard setting, which I believe is "high").
- While the potatoes are cooking in the microwave, place a griddle (or frying pan) on the stove top and turn the burner(s) on to medium heat. Add a small amount (1 tablespoon) of olive oil to the pan.
- When the potatoes are done in the microwave, carefully remove hot plate and take off plastic wrap. Watch out for steam. Drizzle the rest of the olive oil over the potatoes and then sprinkle the dried rosemary and garlic powder over them.
- When the griddle is heated, dump the potatoes onto it. After 2-3 minutes flip them over using a spatula. Continue to flip and stir them every couple of minutes as they cook, until they are done to your tastes. I usually leave them on for a total of 10 minutes.
- Remove from griddle and serve.

PAT'S AMERICAN HOME FRIES
This is the best way I know to use up leftover baked potatoes from the previous evening's steak-fest. I've pretty much settled in on this recipe and it's served me well for about 30 years. My daughter always loved these for breakfast with some leftover hunks of re-heated grilled sirloin and a couple of over-medium eggs. And, this is a good, easy recipe for NEW CHEFS. Enjoy these for breakfast drenched in white gravy along with scrambled eggs.

- Leave the peelings on the potatoes and dice into 1/2-inch cubes.
- Melt the butter and add the oil in a large no-stick skillet over medium-high heat. When the butter/oil is hot, add in the diced potatoes and chopped onion.
- Fry until at least 1/2 of the sides have browned -- stirring and turning should be kept to an absolute minimum.
- Transfer the home fries to a serving plate with a couple of paper towels on it to absorb extra oil.

RUSTIC GRILLED HOME FRIES
This was created by my dad and I when we discovered fingerling potatoes in the grocery store. We cut them with a fancy cutter to make the ridged edges but you can just use a regular old knife. Very simple and easy and taste better than deep fried fatty french fries you get in the pub-without the guilt! excellent served alongside fish. You can add more spices if you like-but the basic salt and pepper allows the lovely flavour of the potatoes to shine through.

- Scrub potatoes and cut in half or into thirds lengthwise (depending on the size-try to make them all equal and fairly big so they'll hold up well).
- Place potatoes in a pot with boiling salted water and blanch for 8 minutes.
- Strain potatoes and immediately immerse in a bowl of ice water to stop cooking process.
- Let sit 5-10 minutes.
- Drain potatoes well, pat dry and return to bowl.
- Add olive oil and salt and pepper and toss well to coat -Be careful because some potatoes may be soft, you don't want them to break
- Place potatoes on grill on medium heat 6-8 minutes or until they begin to brown.

LINDA'S AWESOME HOME FRIES
I was looking for a little added flavor in my home fries this morning and created this luscious recipe. They were AWESOME! I splurged and had them with fried eggs and toast for a DELICIOUS weekend breakfast. GREAT flavor and just a little spiciness from the seasoning. They are REALLY good! I cooked these on med-high, and from the starting of peeling the onion to putting them on my plate was 45 mins., so if you cook them on high it is going to take less time, and if you cook them on med. it's going to take longer. Med-high worked perfect for me, as it browned the home fries nicely and didn't scorch the onions! See my picture. If you have a lg. cast iron frying pan, I would suggest using it, as they make the "BEST" home fries :)

Steps:
- In a lg. cast iron frying pan add olive oil.
- Fry sliced onions on med-high, for about 5 minutes and often so they don't stick.
- Push onions to one side of the frying pan, and add raw chopped potatoes.
- Cook potatoes and onions turning often to brown evenly. When potatoes are a golden brown, mix onions in with potatoes.
- Add garlic, and mix in with potatoes and onions.
- Add Tony Chachere's Creole Seasoning. Mix in with potatoes.
- Salt and pepper, to taste.
- Serve.
