A satisfying and tasty side dish of fries to serve along with a nice steak or as a compliment to your burgers. Much better than deep fried! These make the house smell sooo goood! Another great Taste of home recipe.

2 egg whites
1/4 cup flour
1/3 cup dry breadcrumbs
2 tablespoons parmesan cheese
1 1/2 teaspoons onion salt
1/4 teaspoon cajun seasoning
1 teaspoon paprika
1/4 teaspoon pepper
3 potatoes
ranch salad dressing

Steps:

  • In a shallow bowl beat egg whites until foamy.
  • In another shallow bowl combine the flour, bread crumbs, parmesan cheese and seasonings.
  • Cut each potato into wedges. Dip potatoes into egg whites, then coat with crumb mixture. Place in a single layer on a baking sheet coated with non stick cooking spray. Bake uncovered at 375 for 40-45 minutes. *Serve with Lighthouse ranch dressing or ranch dressing of your choice & fresh parmesan cheese.

Heavenly Country-Style Home Fries image

These country-style home fries are a wonderful accompaniment to any breakfast, brunch or (in my family's case) breakfast for dinner. They turn out buttery and savory with a crispy brown outer coating. I like to serve these home fries when I make breakfast for dinner for my family. We enjoy them with a juicy, smokey ham steak cooked in my cast iron skillet with a side of baby peas. Yum!

2 tablespoons butter
3 large potatoes, diced, unpeeled (white or red)
1 medium onions, chopped or 1 cup chopped onion
1/2 teaspoon ground paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Place diced potatoes, onion, paprika, garlic powder, salt and black pepper in a medium mixing bowl. Toss to evenly coat the potatoes.
  • In a large, non-stick skillet over medium heat, melt butter.
  • Increase skillet heat to medium-high and add potato mixture. Toss to coat evenly with butter.
  • Cover skillet and cook for 10-12 minutes, turning and scraping the potatoes to prevent burning.
  • When potatoes are fork-tender, remove skillet cover.
  • With the back of your spatula, pat potatoes down into an even layer in skillet. Allow to fry untouched for 2 minutes. Then turn potatoes over and do the same for another 2 minutes. This will nicely brown and crisp the outside of the potatoes.
  • Serve immediately.

KITTENCAL'S EASY SEASONED HOME FRIES

This is easy but the potatoes will need a few hours or overnight soaked in cold water, the garlic powder and seasoned salt may be adjusted to taste, I have left the cayenne as optional I like to add it in for a little heat, if you are not a garlic-lover then omit the garlic powder --- throw in some chopped green onions the last few minutes of cooking if desired :)

3 medium russet potatoes, cubed (peel left on or removed)
3 -4 tablespoons butter
1 pinch cayenne pepper (optional)
1/2-1 teaspoon garlic powder
1/2 teaspoon seasoning salt (or to taste)
fresh ground black pepper (optional and to taste)

Steps:

  • Cube the potatoes in about 3/4-inch squares.
  • Place into a large bowl then cover with cold water, rinse then cover once again with water.
  • Refrigerate for at least 3 hours or up to 48 hours (the longer soaking time the better!).
  • Drain very well in a colander (I like to pat the potatoes dry using paper towels).
  • Melt the butter in a large skillet over medium heat, then add in garlic powder, seasoned salt and cayenne pepper (if using).
  • Place the potatoes in the skillet and stir to coat with the butter.
  • Cover with a lid and cook for 8-10 minutes.
  • Remove the lid and cook for another 10 minutes, turning frequently with a spatula for even browning and crisping.
  • Season with more seasoned salt to taste and black pepper.
  • Delicious!

This is the best way I know to use up leftover baked potatoes from the previous evening's steak-fest. I've pretty much settled in on this recipe and it's served me well for about 30 years. My daughter always loved these for breakfast with some leftover hunks of re-heated grilled sirloin and a couple of over-medium eggs. And, this is a good, easy recipe for NEW CHEFS. Enjoy these for breakfast drenched in white gravy along with scrambled eggs.

4 medium potatoes, baked (leftover, cold)
1/4 small onion, chopped
1/2 teaspoon seasoning salt
1/4 teaspoon white pepper (canned)
2 tablespoons salted butter
4 tablespoons corn oil

Steps:

  • Leave the peelings on the potatoes and dice into 1/2-inch cubes.
  • Melt the butter and add the oil in a large no-stick skillet over medium-high heat. When the butter/oil is hot, add in the diced potatoes and chopped onion.
  • Fry until at least 1/2 of the sides have browned -- stirring and turning should be kept to an absolute minimum.
  • Transfer the home fries to a serving plate with a couple of paper towels on it to absorb extra oil.

This recipe is a little time consuming and has frying and re-frying involved, but in my opinion, it is worth every minute it takes to do it.

Number Of Ingredients 11

1 -2 large onion, chopped
4 -5 large potatoes
5 tablespoons canola oil (for deep frying)
salt
2 tablespoons salt (for soaking potatoes)
2 cups flour (seasoned or plain)
2 teaspoons black pepper
2 tablespoons garlic powder
salt (to taste)
1 onion, diced (optional)
1 medium bell pepper, diced (optional)

Steps:

  • Peel and cube or wedge the potatoes.
  • Place cubes in ice water and add salt. Let sit in ice water about 10-15 minutes.
  • Heat oil in skillet.
  • Get flour ready in flat bottomed pan so you can dredge wet potato wedges when they are done soaking.
  • While oil is heating, in a colander drain potatoes.
  • Flip potato pieces into the flour in pan and dredge until all sides of potato are well coated.
  • When oil is hot put potato cubes or wedges into oil and fry. Fry until beginning to be golden, then turn and brown on other sides the same way.
  • **Note: As potatoes fry you can cover them temporarily to increase heat -the secret to crispiness is leave them long enough on each side to form a little crust before turning them. The other secret will be frying the potatoes twice over, letting them cool in between. I find it helps to use tongs and a fork and individually flip the potato cubes or wedges so they all get browned evenly, but that is up to you. I also flip them all with spatula from time to to time.
  • When browned and lightly crisped remove from oil and drain on paper towel.
  • While potatoes are cooling heat oil back up and fry bell pepper and onion in same oil medium high heat.
  • Fry veggies until onion starts to turn brown and golden around edges but don't let them turn too dark.
  • Remove fried veggies and drain on paper towel. Lower heat temporarily while you thoroughly remove all fried vegetable pieces from hot oil.
  • Add a little more oil and turn heat back up to get it hot.
  • (Watch and have lid ready to protect yourself in case of "spitting" oil from moisture in vegetables in oil, until it boils off. Can lower heat a touch if gets too bad).
  • Now, to the hot oil add back the once-fried crisp coated potatoes -- and fry again same way until the potatoes have formed a nice, brown crust on all sides.
  • When potatoes are medium dark golden and just right (crispy enough), add back the onion and bell pepper to the crispy potatoes.
  • Fry together for a very short time then remove before they burn. Vegetables burn relatively quickly so don't fry them long, then quickly remove all from oil and let drain on paper towels. Re-season the potatoes with pepper and onion, checking for garlic powder and saltiness to be just right.
  • You are ready to eat. I like to set the potatoes aside in warm place covered with paper towel and fry eggs to go over the top of the potatoes when served.
  • When ready to serve, if potatoes have cooled off too much, gently reheat in microwave real quickly.
  • Enjoy.

LINDA'S AWESOME HOME FRIES

I was looking for a little added flavor in my home fries this morning and created this luscious recipe. They were AWESOME! I splurged and had them with fried eggs and toast for a DELICIOUS weekend breakfast. GREAT flavor and just a little spiciness from the seasoning. They are REALLY good! I cooked these on med-high, and from the starting of peeling the onion to putting them on my plate was 45 mins., so if you cook them on high it is going to take less time, and if you cook them on med. it's going to take longer. Med-high worked perfect for me, as it browned the home fries nicely and didn't scorch the onions! See my picture. If you have a lg. cast iron frying pan, I would suggest using it, as they make the "BEST" home fries :)

4 -5 tablespoons olive oil
2 large potatoes, about 1 lb
1 large onion, cut in half and sliced
4 teaspoons garlic, chopped (I use the stuff in the jar)
tony chachere's creole seasoning (in the green can)
salt and pepper, to taste

Steps:

  • In a lg. cast iron frying pan add olive oil.
  • Fry sliced onions on med-high, for about 5 minutes and often so they don't stick.
  • Push onions to one side of the frying pan, and add raw chopped potatoes.
  • Cook potatoes and onions turning often to brown evenly. When potatoes are a golden brown, mix onions in with potatoes.
  • Add garlic, and mix in with potatoes and onions.
  • Add Tony Chachere's Creole Seasoning. Mix in with potatoes.
  • Salt and pepper, to taste.
  • Serve.

In this recipe, the smokiness of thickly cut bacon flavors Yukon Gold home fries. We used small potatoes; if your potatoes are larger, adjust the cooking time.

2 1/2 pounds small Yukon gold potatoes
Coarse salt
3/4 pound thick-sliced bacon, cut into 1/2-inch pieces
1 small red bell pepper, cut into 1/2-inch dice
1 small yellow bell pepper, cut into 1/2-inch dice
1 red onion (about 10 ounces), cut into 1/2-inch dice
1 tablespoon fresh thyme leaves
2 tablespoons roughly chopped fresh flat-leaf parsley
Freshly ground black pepper

Steps:

  • Place potatoes in a medium saucepan. Cover with water; bring to a boil over high heat. Salt the water. Reduce heat to medium-high; cook until potatoes have softened but are still slightly firm, 12 to 15 minutes. Drain in a colander. When cool enough to handle, peel potatoes; cut into 1-inch pieces. Set aside.
  • Cook bacon in a large skillet set over medium heat until all fat has been rendered and bacon is crisp and brown, about 15 minutes. Remove bacon with a slotted spoon; set aside on a paper towel to drain. Pour off all but 2 tablespoons of the bacon fat. Add reserved potatoes; cook over medium heat, stirring occasionally, until golden on all sides, about 10 minutes. Add reserved bacon, peppers, onion, and thyme; cook until vegetables have softened, 5 to 7 minutes. Stir in parsley, and season with salt and pepper. Remove from heat, and serve.
