HEAVENLY "CHICKEN" (FRICHIK) CASSEROLE



Heavenly

A great vegetarian comfort food that also makes a great holiday dish. This recipe is a favorite among many that have discovered the deliciously tasting Worthington FriChik. You can also use real chicken, mayonnaise, milk and even add some cheese if you're not vegetarian. Before becoming vegetarian I made a casserole very similar to this one regularly. I got this recipe from a good friend that got it from another friend's cookbook. Worthington FriChik has egg white in the ingredients and there is cream in the mushroom soup, so its not vegan. I've been trying to use as little dairy as possible so I use soy milk and vegenaise (the yummiest soy mayonnaise).

1 cup celery, diced
1/2 cup onion, diced
2 cups cooked brown rice
2 cups vegetarian chicken substitute, diced (Use Worthington FriChik & include the gravy it comes in!!!)
1 (10 1/2 ounce) can mushroom soup
1 (14 ounce) can mushrooms
1/3 cup soymilk
1/2 cup soy mayonnaise (I use Vegenaise. A friend of mine uses sour cream instead and of course it tastes great that way too)
1/2 teaspoon salt
paprika, for topping
sliced almonds, for topping

Steps:

  • Saute celery and onion in a very small amount of oil or water.
  • Put into mixing bowl and add remaining ingredients, mixing well.
  • Sprinkle top with paprika and sliced almonds.
  • Put in oiled casserole dish and bake at 350 degrees F about 45 minutes. (The 1 1/2 passive work time listed includes the time to cook the two cups of brown rice ahead).

2 tablespoons butter
3 medium sweet Spanish onions, sliced
8 ounces fresh mushrooms, sliced
1 cup shredded Swiss cheese
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (5 ounces) evaporated milk
2 teaspoons soy sauce
6 to 8 slices French bread (1/2 inch thick)
6 to 8 thin slices Swiss cheese (about 4 ounces)

Steps:

  • In a large skillet, melt butter over medium-high heat. Saute onions and mushrooms until tender. Place in a 11x7-in. baking dish or 2-qt. baking dish. Sprinkle shredded cheese on top. Combine the soup, milk and soy sauce; pour over cheese. Top with bread and cheese slices. Cover and refrigerate 4 hours or overnight. , Remove from the refrigerator 30 minutes before baking. Loosely cover with foil and bake at 375° for 30 minutes. Uncover and bake 15-20 minutes longer or until heated through. Let stand for 5 minutes before serving.

This is another recipe handed down from my husband's family. During the stressful meeting-of-the-parents times over the course of our relationship, this hash brown casserole was perhaps one of the only things I could look forward to without some level of hesitation! We still make it as often as we can justify it, which sadly is less often than we wish it were. (Stupid calories.) We have tried making it with low-fat ingredients and it does work nicely, but full-fat ingredients will make it shine. Note that the sizing of frozen hash brown bags doesn't always allow for you to buy a two-pound bag, so you may need to mix and match until you get that amount. We usually have some frozen hash browns left over when we make it, which can be used in any number of other recipes as desired. Also note that the topping is technically optional, but we highly recommend using it. It adds a wonderful texture that we would miss if it weren't included. If you have any casserole left over (no promises!) then this reheats well too.

Steps:

  • Brown the ground beef then drain and add sugar, salt, garlic powder and tomato sauce. Let simmer 10 minutes.
  • Boil 16 oz egg noodles, drain, and add sour cream and cream.

  • Layer ½ meat mixture, noodles, and then repeat in oblong pan.

garlic powder
1 tsp sugar
1 tsp salt
1 can(s) tomato sauce, 15 oz
2 oz cream cheese
1/2 pt sour cream
12 oz egg noodles

Steps:

  • 1. Preheat oven to 350. In frying pan brown beef and drain.
  • 2. Sprinkle on a little garlic powder over beef.
  • 3. Add sugar, salt, and tomato sauce. Mix it all up in the pan and simmer for 15 minutes.
  • 4. Meanwhile, in a bowl mix sour cream, cream cheese and some onion powder until mixed well.
  • 5. Cook and drain egg noodle as package tells you.
  • 6. Grease a 9X13 baking dish.
  • 7. In baking dish spread half of the noodles.

  • 9. Top with half of the mozzarella.
  • 10. Now cover with all the meat sauce from the pan.

2 Tbsp flour
1-1/4 c hood's light cream

1-1/2 c good quality shredded, sharp white cheddar cheese
6 Tbsp melted butter
1-1/4 c italian style fine breadcrumbs
1 Tbsp fresh thyme, chopped

  • 1. Heat oven to 350. In a medium sized pot, melt 2 Tbsp butter over low heat. Whisk in the flour until smooth. Slowly whisk in the light cream. Increase heat to medium and cook & stir until thickened. Add salt & pepper to taste.
  • 2. Add mustard and nutmeg. Add 1 cup of the cheese. Cook, stirring until cheese is melted. Stir in onions. Spoon into a 1 quart casserole dish.Sprinkle the top w/ remaining cheese.

1 cup sugar
2 eggs
1 teaspoon vanilla
1/2 cup milk
1 stick butter
1 cup brown sugar

  • Step one: Preheat oven to 350 degrees, then boil, peel and quarter sweet potatoes
  • Step two: While sweet potatoes are boiling, combine last 4 ingredients (for topping), mixing until there are no more lumps exceeding 1/4 inch and set aside.

1 med to large chopped onion, i use large as we are onion fans
2 tsp minced garlic
1/2 tsp salt
1 tsp italian seasoning
29 oz tomato sauce
8 oz cream cheese, room temperature
16 oz sour cream
1 lb egg noodles
2 c shredded mozarella

Steps:

  • 1. Cook the noodles according to package directions, drain and set aside (I add a bit of butter to mine afterwards to keep them from sticking, or you can rinse it in cold water instead). Meanwhile, cook the ground beef, onion and minced garlic in a skillet until browned; drain off fat. Add in salt, italian seasoning and tomato sauce. Simmer for 30 minutes on low. In a separate bowl mix together the cream cheese and sour cream. In a 13×9″ greased baking dish layer 1/3 of the sauce, 1/2 of the noodles, 1/2 of the cream cheese mixture, 1/2 of the mozarella. Repeat again, ending with 1/3 of the sauce on top, or I end with cheese, makes a prettier dish. Bake at 350 degrees for 30-45 minutes, uncovered

2 C. sliced fresh mushrooms
1 1/4 C. chopped onion (1 medium)
1/2 C. chopped bell pepper
2 Tbs. minced jalapeno pepper

1/4 C. milk
3 Tbs. all-purpose flour
1 1/2 C. water
3/4 tsp. chili powder
1/2 tsp. salt
1/2 tsp. ground cumin
1/4 tsp. pepper
8 corn tortillas
1 C. shredded cheddar cheese
1/2 C. tomato, chopped and unpeeled
1/4 C. sour cream

Steps:

  • Cook chicken and dice, set aside. Sauté mushrooms, onion, bell pepper, & minced jalapeno pepper until tender. Remove skillet from heat; stir in chicken and green chilies. Set aside. Combine milk and flour in a small saucepan. Gradually stir in water; place on medium heat-cook & stir until thick & bubbly. Stir in chili powder, salt, cumin, & pepper. Add to chicken mixture and set aside. Wrap tortillas in damp paper towels & then in foil & bake at 350 degrees for 10 min. Arrange half of the tortillas in a 12x8x2 dish. Top with half of chicken mixture. Repeat with rest of tortillas and chicken mixture. Cover and bake at 350 degrees for 25 min. Uncover and sprinkle with cheese; let stand 10 min. 1 lb ham, cubed
1 cup shredded cheddar cheese
1 can cream of mushroom soup
Paprika

Steps:

  • 1. In slow cooker or crock-pot, layer 1/2 potatoes, then 1/2 onion, then 1/2 ham and cheese, repeat with rest of potatoes/onions/ham/cheese.
  • 2. Spread soup over top so air doesn't get to potatoes if possible. Sprinkle with paprika.
  • 3. Cook on low for 8-10 hours.
