TYRA'S HEAVENLY GLUTEN-FREE CARROT CAKE
I make this cake for birthdays!!! Family favorite

Steps:
- Pre-heat oven to 350 degrees Spray two round 8" cake pans with cooking spray
- Mix flour, baking powder, baking soda,cinnamon,ginger, and nutmeg in a bowl whisk together until thoroughly combined. Set aside
- Beat the sugar, and eggs together then add pineapple in a large bowl until smooth. Add vanilla and remix thoroughly
- Slowly add flour mix into wet ingredients, beat at medium speed until mixed well, fold in carrots, walnuts, and coconut
- Pour batter evenly into the prepared cake pans. Bake for 50 minutes or until toothpick inserted comes out clean
- Cool on wire racks, once cool Frost cake with gluten free cream cheese frosting
HEAVENLY CARROT CAKE
Steps:
- Cake instuctions: Cream sugar & oil throughly and unbeaten eggs. Sift dry ingredients together. Add to creamed mixture, add carrots and pecans. Pour mixture into cake pans or 9 x 13 in. baking dish. Bake cake in 300 degree oven for 1 hour. Icing Instructions: Spread over cooled cake

Steps:
- Preheat the oven to 350 F. Spray a 13 x 9 x 2 inch pan with cooking spray. In a large mixing bowl, mix all the dry ingredients until fully mixed.
- Stir in the wet ingredients just until everything is well blended.
- Pour the batter into the prepared pan and bake at 350 for 35 - 40 minutes or until a wooden pick inserted in the center comes out clean..
- Mix up the frosting by mixing together the softened butter and cream cheese, then stir in the powdered sugar and whiskey. Let the cake cool before frosting it.
