Diana Lauhon of Minerva, Ohio modified a soup recipe to suit her family's tastes while taking advantage of convenience foods. "Once you brown the sausage, it's a snap to throw in the other ingredients and let them simmer. Frozen tortellini is added minutes before serving for a savory soup that tastes like you spent hours making it."

3 uncooked Italian sausage links (1/2 to 3/4 pound)
4 cups water
2 cans (14-1/2 ounces each) Italian stewed tomatoes
1 can (10-1/2 ounces) condensed French onion soup, undiluted
2 cups broccoli coleslaw mix
2 cup frozen cut green beans
2 cups frozen cheese tortellini
Grated Parmesan cheese, optional

Steps:

  • Cut sausage into 3/4-in. pieces; brown in a Dutch oven or soup kettle. Drain. Add the water, tomatoes, soup, coleslaw mix and beans; bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until vegetables are tender. Uncover; add tortellini. Cook for 3-5 minutes or until pasta is tender. Garnish with cheese if desired.

2 garlic cloves
1 tablespoon margarine
2 (13 3/4 ounce) cans chicken broth or 2 (13 3/4 ounce) cans beef broth
1 (8 ounce) package cheese tortellini, either fresh, frozen
1 (10 ounce) package spinach, thawed either fresh, frozen
1 (16 ounce) can stewed tomatoes, undrained and coarsely chopped
grated parmesan cheese

Steps:

  • In large saucepan, cook garlic in margarine over medium heat for 2-3 minutes.
  • Add broth and tortellini, heat to boil.
  • Reduce heat, simmer for 10 min, then add spinach and tomatoes.
  • Simmer 5 mins and serve with parmesan cheese.

2 cups chopped yellow onion, about 1 large
2 cups chopped fennel bulb, about 1 large
1/4 cup minced fresh garlic
2 (8-ounce) packages sliced cremini mushrooms
2 tablespoons unsalted tomato paste
8 cups unsalted vegetable stock
4 cups water
1 teaspoon freshly ground black pepper
3/4 teaspoon kosher salt
2 (15-ounce) cans fire-roasted diced tomatoes, undrained
2 (15-ounce) cans unsalted chickpeas, rinsed and drained
6 cups stemmed, chopped curly kale
1 1/2 (9-ounce) packages whole-wheat 3-cheese tortellini
1 1/2 tablespoons red wine vinegar
1/3 cup chopped fresh flat-leaf parsley

Steps:

  • Heat oil in a large Dutch oven over medium-high. Add onion, fennel, garlic, and mushrooms; cook 15 minutes or until liquid evaporates, stirring occasionally. Stir in tomato paste; cook 1 minute. Add stock, water, salt and pepper, fire roasted diced tomatoes and chickpeas; bring to a boil. Reduce heat and simmer 5 minutes. Stir in kale. Add tortellini. Cook 8 minutes or until tortellini are done. Remove pan from heat; stir in vinegar. Divide soup among 12 bowls; sprinkle with parsley. HOW-TO FREEZE: Cool soup completely. Once cool, add tortellini. Freeze flat in a large ziplock freezer bag for up to 2 months. THAW: Microwave soup in bag at MEDIUM (50% power) for 8 minutes or until pliable. REHEAT: Pour soup into a large Dutch oven; bring to a simmer over medium heat. Cook 25 minutes or until tortellini are done. Stir in red wine vinegar. Top with parsley.

1 CAN 14 OZ KIDNEY BEANS, DRAINED
8 CUPS BEEF STOCK
2 CUPS CHOPPED CABBAGE
1-1/2 CUPS CUT GREEN BEANS
1 CUP DICED PEELED TURNIP
1 CUP DICED UNPEELED ZUCCHINI
1 TBSP GRANULATED SUGAR

  • IN 32 CUP (8L) STOCKPOT, HEAT OIL OVER MEDIUM HEAT. ADD ONIONS, CELERY, CARROTS & GARLIC; COVER AND COOK 5 MINUTES. While the granddaughters were here, the 12 year old requested tortellini soup. So, she and I went into the kitchen and created a delicious soup from what I had on hand in the pantry and freezer. She took notes, made suggestions and helped with every step. It was such a hit that I promised her I would post the recipe for her so that she could make it for herself when she goes back home. I love my little sous chef!

1 tablespoon(s) olive oil
1 pound(s) ground italian sausage
1 medium yellow onion, chopped
2 clove(s) garlic, minced
1 or 2 pinch(es) black pepper, freshly ground
1 or 2 pinch(es) crushed red pepper flakes
1 can(s) tomato puree (15 oz.)
1 lg. can(s) whole peeled tomatoes, 28 oz. cut up in can
1 can(s) beef broth (14.5 oz.)
1 can(s) chicken broth (14.5 oz.)
2 to 3 cup(s) water (depending on how thick you like it)
1/2 teaspoon(s) balsamic vinegar
1 tablespoon(s) italian herbs seasoning
1/4 to 1/2 teaspoon(s) salt
10 ounce(s) dry cheese tortellini
1 1/2 cup(s) chopped spinach or kale (frozen or fresh)
1 teaspoon(s) freshly grated parmesan cheese, per serving for garnish

Steps:

  • Pour 1 tablespoon olive oil into a dutch oven or large pot over medium-high heat. Add 1 pound ground Italian sausage; stirring frequently, cook until no pink remains.
  • Add chopped onion, stirring frequently until onion is translucent.
  • Add 2 cloves minced garlic, freshly ground black pepper and crushed red pepper flakes; stir and cook for about 30 seconds.
  • To the pot, add 1 can tomato puree, 1 can chopped tomatoes, 1 can beef broth, 1 can chicken broth, 2 cups water, 1/2 teaspoon balsamic vinegar, 1 tablespoon Italian herbs seasoning, and salt.
  • Bring to a boil, reduce heat, cover and simmer for about 5 minutes or so.
  • Uncover, stir, increase heat to medium-high, then stir in 10 ounces of dry cheese tortellini. Bring to boil, reduce heat to medium. Cook, stirring occasionally, for 10 minutes, until pasta is tender.
  • Add 1 1/2cups chopped spinach or kale when the pasta is almost finished cooking, increasing heat a bit if needed.
  • Serve hot, garnished with freshly grated parmesan cheese.

2 can(s) diced italian style tomatoes
1 package(s) fresh or frozen tortellini
1 box(es) vegetable broth
1 package(s) fresh baby spinach
1 pound(s) (browned)ground sweet italian sausage
1 package(s) cream cheese cubed

Steps:

  • Crock Pot Version: Brown Italian sausage put all ingredients in crock pot(frozen tortellini for this version). Except spinach. Be sure to cube the cream cheese and place on top. Cook on low for 5-6 hrs Put in spinach minutes before serving just long enough for the leaves to melt into the dish.
  • Stove Top Version: Brown sausage in bottom of large pot. Put all ingredients except spinach in the crock pot (use refrigerated tortellini for this version). Cook on low flame till tortellini is thoroughly cooked through. Add spinach and let wilt before serving.
  • for a wetter soup use one extra box of vegetable broth
