Steps:
- Cut pork into 1/4" cubes. In a large resealable plastic bag, combine pork cubes and flour. Seal bag, and shake to coat pork.
- In a large Dutch oven, heat oil over medium-high heat. Add pork, and cook 6-8 minutes, or until browned. Add onion and celery, and cook 5 minutes, stirring frequently.
- Stir in potatoes and remaining ingredients; bring to a boil, reduce heat, and simmer 30 minutes or until vegetables are tender.
- Can add additional beef broth or water if desired or needed.

BEEF AND CHICKEN STEW
I received this recipe from my mother-in-law. Everyone in my family likes this recipe. Especially my son. Great with cornbread.

- Place all ingredients in a pot (including juice from cans); add some of the broth or water if it is too thick.
- Simmer for about 45 minutes. stirring occasionally.
- Can be put in crock pot on low.

- Sprinkle pork with salt and pepper; transfer to a 4-qt. slow cooker. Add carrots, celery and onion. In a small bowl, whisk broth and tomato paste; pour over vegetables. Add plums, garlic, bay leaves, rosemary, thyme and, if desired, olives. Cook, covered, on low 5-6 hours or until meat and vegetables are tender., Discard bay leaves, rosemary and thyme. If desired, sprinkle stew with parsley and serve with potatoes.

- In a small bowl, toss beef and 1/4 teaspoon salt. In a large bowl, combine 4 tablespoons flour and paprika. Add beef, a few pieces at a time, and toss to coat. , In a Dutch oven, brown beef in oil over medium heat. Stir in tomato paste, herbes de Provence and garlic; cook until fragrant and color starts to darken slightly. Add wine; cook until mixture just comes to a boil. Simmer until reduced by half, about 5 minutes. Stir in broth, 1 teaspoon rosemary and bay leaves. Bring to a boil. Reduce heat; cover and simmer until meat is almost tender, about 1-1/2 hours., Add potatoes, onions and carrots. Cover; simmer until meat and vegetables are tender, about 30 minutes longer., Discard bay leaves. In a small bowl, combine remaining 1/2 teaspoon rosemary, remaining 1/4 teaspoon salt and remaining 2 tablespoon flour. Add cold water and vinegar; stir until smooth. Stir into stew. Bring to a boil; add peas. Cook, stirring, until thickened, about 2 minutes. If desired, top with additional fresh rosemary.
