"AS THE YEARS went by, I added this American side dish to our menu. My children enjoyed the rich cheese flavor, and it enhanced the rest of the meal. I also like these potatoes because I can make them early in the day and then simply heat before serving."

6 tablespoons butter, cubed
6 tablespoons all-purpose flour
3/4 teaspoon salt
1/4 teaspoon pepper
3 cups milk
12 ounces Velveeta, cubed
About 4 pounds potatoes, peeled, cooked and thinly sliced (8 cups)
Paprika

Steps:

  • Melt butter in a saucepan; add flour, salt and pepper. Cook over low heat, stirring until mixture is smooth and bubbly. Add milk all at once; cook and stir over medium heat until thickened and bubbly. Cook and stir 1 minute more. Remove from the heat. Add cheese and stir until melted. Place potatoes in a large bowl; gently stir in cheese sauce. Transfer to a greased 2-1/2-qt. baking dish. Sprinkle with paprika. Bake, uncovered, at 350° for 30 minutes or until heated through.

Number Of Ingredients 10

4 medium baking potatoes (2 pounds)
1 cup chopped leeks (white portion only)
1 cup chopped onion
2 garlic cloves, minced
2 teaspoons olive oil
3/4 cup fresh or frozen corn
1/2 cup 2% cottage cheese
1/2 cup reduced-fat plain yogurt
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Wrap each potato in foil. Bake at 375° for 1 hour or until tender. Cool. , Remove foil; cut potatoes in half lengthwise. Scoop out pulp, leaving a 1/4-in. shell; set shells aside. In a bowl, mash pulp until smooth. , In a skillet, saute the leeks, onion and garlic in oil. Add to mashed potatoes. Stir in the corn, cottage cheese, yogurt, salt and pepper. Spoon into potato shells. , Place on a baking sheet. Broil 6 in. from the heat for 3-5 minutes or until tops are golden brown.
