TURKEY MEATLOAF
Turkey meatloaf is a favorite in our house! This healthy meatloaf recipe made with lean ground turkey is easy and delicious.

Steps:
- Preheat the oven to 350F.
- In a small bowl combine 2 tbsp of the ketchup with Worcestershire sauce.
- In a small skillet, heat olive oil and onion on low heat until translucent, 3 to 5 minutes, remove from heat.
- In a medium bowl combine the turkey, onion, breadcrumbs, egg, 1/4 cup ketchup, salt and marjoram.
- Place mixture into a loaf pan or shape into a loaf and place on a baking pan. Spoon sauce on top.
- Bake uncovered for 55-60 minutes, remove from oven and let it sit for 5 minutes before slicing.

TACO TURKEY MEATLOAF
Ground turkey makes this meatloaf lighter and healthier; cheese and taco seaoning make it delicious. From betterrecipes.com. Again altered even further for calorie and fat content. You might not be able to find whole wheat bread crumbs. I usually de-crust 1-2 slices of whole wheat bread and dry in the oven and then crumble. The last two ingerdients are for the topping. Easily halved or even cut into thirds.

- Mix together eggs, taco seasoning, black pepper, onion, garlic, tomato sauce, brown rice, bread crumbs and cheese.
- Add turkey and mix until thoroughly combined.
- Grease sheet pan with Pam
- Form two loaves of meat mixture on pan.
- Top each loaf with tomato sauce and cheese.
- Bake at 375 degrees for 1 1/4 hour or until meat thermometer registers 165 degrees.
- Let rest for 5 minutes before slicing.
MEXICAN TACO MEATLOAF
My Mexican grandmother would use leftover corn tortilla chips in our meatloaf and everyone loved it! They all wanted seconds along with the recipe. A delicious Mexican-American comfort food.

- Preheat the oven to 350 degrees F (175 degrees C).
- Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.
- Whisk eggs, milk, and taco sauce together in a separate bowl. Add to meat mixture and stir until well combined.
- Press mixture into a 9x5-inch loaf pan and top with a strip of taco sauce down the center.
- Bake in the preheated oven until cooked through and browned on top, 45 to 60 minutes.

- 1. Preheat oven to 375 Cook peppers and onions for 3 minutes over medium heat in a pan sprayed with nonstick spray. In a large bowl, combine onions and peppers with turkey, corn and seasoning mix. Spread half of the mixture evenly into the bottom of a loaf pan (about 9" x 5" sprayed with nonstick spray. Layer the two slices of fat-free cheese on top of the mixture ( try to keep slices away from the pan's edges). Evenly top with the remaining meat mixture. Poor the salsa over the top of the loaf. Cook in the oven for 30 minutes. Top loaf with shredded cheese. Return loaf to the oven and cook for another 15 minutes. per serving (1/6 of loaf) calories 127 fat 1g sodium 688mg carbs 7g fiber 0,5g

- Combine bread and milk in a large bowl; let stand until liquid is absorbed. Add next 14 ingredients and 1/3 cup salsa; mix lightly but thoroughly., On an 18x7-in. piece of heavy-duty foil, shape meat mixture into a 10x6-in. oval loaf. Lifting with foil, transfer to a 6-qt. oval slow cooker. Press ends of foil up sides of slow cooker., Cook, covered, on low 3-4 hours or until a thermometer reads 165°.
