Flaked salmon and black beans, which make up the bulk of salmon cakes, are both good sources of calcium. The cakes are coated in a spicy bread-crumb mixture and then baked at a high temperature to make them crisp.

Number Of Ingredients 14

One 15-ounce can salmon, drained and flaked (about 2 cups)
1 cup canned black beans, rinsed and drained
1 small red bell pepper (or half of a large pepper), seeded and finely chopped
3 scallions, white and light-green parts only, finely chopped
1 large whole egg
3 large egg whites
1 teaspoon mustard powder
1/2 teaspoon paprika
1/4 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
Few dashes Tabasco (optional)
1 cup bread crumbs
Mixed greens, for serving
Cooking spray

Steps:

  • Preheat oven to 450 degrees. Coat a baking sheet with cooking spray. In a bowl, combine salmon, beans, bell pepper, scallions, egg, egg whites, mustard, paprika, salt, pepper, Tabasco (if using), and 1/2 cup bread crumbs. Using hands, combine well.
  • Pour remaining 1/2 cup bread crumbs into a shallow bowl. Form salmon mixture into 12 2 1/2-inch patties. Coat patties in bread crumbs; place on prepared baking sheet. Cook until golden brown and crisp, flipping cakes over halfway, about 30 minutes. Serve warm over greens.

2 (240 g) cans red salmon
1/4 cup oats
1/2 cup fat-free ricotta cheese
2 egg whites
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh cilantro (coriander)
kosher salt
pepper

Steps:

  • Mix all ingredients together.
  • If the mixture is too soft, add more oats. If the mixture is too dry add another egg white.
  • Shape into cakes.
  • Spray non-stick frying pan and cook until golden on each side.
  • These are delicious hot or cold.

1 pkg. (6 oz.) STOVE TOP Lower Sodium Stuffing Mix for Chicken
1 cup KRAFT 2% Milk Shredded Mozzarella Cheese
3/4 cup water
1/3 cup KRAFT Light Mayo Reduced Fat Mayonnaise
2 green onions, sliced
1 Tbsp. lemon juice

Steps:

  • Combine ingredients; shape into 12 patties, using about 1/3 cup stuffing mixture for each patty. Refrigerate 10 min.
  • Heat large heavy nonstick skillet on medium heat. Add patties, in batches; cook 6 min. or until golden brown on both sides, turning carefully after 3 min.

Since my husband started eating healthier during the last year or two, I have been attempting to live up to the challenge of cooking great healthy food that is high in flavor, and inexpensive. This one is very yummy, healthy, and fills your belly on a budget.

1 (14 ounce) can salmon, drained, skin and bones removed
1/2 cup panko breadcrumbs
1/4 cup egg substitute
4 scallions, minced
1/2 cup mayonnaise, light or 1/2 cup fat, free
2 red bell peppers, roasted with skin and seeds removed
2 tablespoons pepperoncini peppers, chopped
1 teaspoon hot pepper sauce
1 tablespoon chopped dill
salt
pepper

Steps:

  • In a large bowl, place the salmon, bread crumbs, 3 minced scallions, 1/4 cup mayonnaise, egg substitute, dill, hot sauce, and 1/2 of one of the bell peppers (minced). Mix together until well incorporated. Season with salt and pepper.
  • Shape the mixture into 4 even sized patties.
  • Spray a skillet with non-stick spray and add patties, cooking at medium high heat. Cook for about 3-4 minutes on each side until browned and cooked through. Remove and place on a platter or four plates.
  • In a food processor, pulse the red bell pepper, remaining mayonnaise, pepperoccini, and season with salt and pepper. Place a dallop on the top of each salmon cake. Sprinkle remaining scallions on top to serve.
  • This is a very healthy meal. If you prefer, feel free to add full fat mayo, a real egg (instead of the substitute), and olive oil instead of the non-stick spray.
