Enjoy this sweet, refreshing salad alongside grilled meat or fish to cut through the richness and refresh the palate. If you like a little heat, adding jalapeño will give you the kick you crave. While packs of prechopped pineapple are convenient, they're almost always more expensive. When pineapple is in season, it's best to buy fresh and chop it yourself. Look for a pineapple with a golden-yellow exterior, which is a good indicator of ripeness.

2 tablespoons avocado oil or extra-virgin olive oil
2 tablespoons lime juice
¼ teaspoon salt
¼ teaspoon ground pepper
1 medium pineapple, peeled, cored and cut into bite-size pieces
2 cups halved and thinly sliced cucumber
1 small jalapeño pepper, seeded and finely chopped
½ cup coarsely chopped fresh cilantro

Steps:

  • Stir oil, lime juice, salt and pepper together in a large bowl. Add pineapple, cucumber, jalapeño (if using) and cilantro; stir well to coat.

½ pineapple - peeled, cored, and cut into chunks
1 English cucumber, quartered lengthwise and cut into chunks
2 green onions, thinly sliced
3 tablespoons finely chopped fresh cilantro
3 tablespoons finely chopped fresh mint
3 tablespoons sweet chili sauce
2 tablespoons sesame oil
2 tablespoons fresh lime juice
1 lime, zested
1 tablespoon fish sauce
1 tablespoon brown sugar, or to taste

Steps:

  • Place pineapple, cucumber, green onions, cilantro, and mint in a large bowl.
  • Whisk chili sauce, sesame oil, lime juice, lime zest, and fish sauce together; whisk in brown sugar, 1 teaspoon at a time, until dressing has desired sweetness. Pour chili dressing over pineapple mixture; toss to combine.

1 small pineapple (or half a large one)
2 English cucumbers (seedless)
1 red onion
1/4 cup chopped of fresh mint
2 tablespoons extra virgin olive oil
coarse salt & freshly ground black pepper

Steps:

  • Slice top and bottom off of pineapple, stand pineapple on a cutting board, and slice off the peel with a sharp knife. Next, lay pineapple on its side and cut out the eyes. Cut pineapple in half the long way, cut each half in half again, and cut out core. Cut each quarter into bite-size pieces and drop them into a wide salad bowl.
  • Cut off ends of cucumbers and discard. Slice cucumbers into 1/4 inch thick rounds and add to pineapple. Slice onion into thin half moons and add to salad.
  • Add mint, drizzle on the oil, and season with salt and pepper. Toss. Serve right away or cover and refrigerate for a few hours.

1 large garlic clove
1/4 teaspoon salt
2 tablespoons fresh lime juice
1 tablespoon sugar
2 tablespoons vegetable oil
1 (2-inch-long) fresh serrano or jalapeño chile, minced, including seeds
1/4 to 1/2 teaspoon Asian fish sauce
1/2 seedless cucumber (often plastic-wrapped), halved lengthwise, then thinly sliced crosswise
1/2 pineapple, peeled, quartered lengthwise, cored, then sliced crosswise 1/4 inch thick (2 cups)
1/2 cup coarsely chopped fresh cilantro
1/4 cup coarsely chopped fresh mint
2 medium tomatoes (1 lb total), cut into 1/2-inch-thick wedges

Steps:

  • Mince garlic, then mash to a paste with salt using side of a large heavy knife.
  • Whisk together lime juice and sugar in a large bowl until sugar is dissolved, then whisk in oil, garlic paste, chile, and fish sauce (to taste). Add remaining ingredients, tossing to coat, and add salt to taste.

Steps:

  • 1. Cut Pineapple and Cucumber according to preference (I recommend pineapple chunks and cucumber slices myself). 2. Shred the mint. 3. Combine in a bowl and refrigerate for at least 1 hour prior to serving - this allows the flavors to combine.
