Creamy potatoes with garlic and herbs is a satisfying side to any meat dish. Sandi Richard came up with this, but I changed it a bit. Enjoy!

2 lbs potatoes
4 garlic cloves, whole, peeled
1 1/2 teaspoons butter or 1 1/2 teaspoons olive oil
1/4 teaspoon dried sage
1/8 teaspoon salt
black or white pepper, to taste
1/4 cup nonfat sour cream or 1/4 cup 1% fat buttermilk

Steps:

  • Peel potatoes and cut in half. Place in large stovetop pot with 4 whole garlic cloves. Cover with cold water and bring to a boil. Reduce heat to a gentle boil and cook until potatoes are tender.
  • When potatoes are tender, drain and mash along with garlic cloves using a potato masher or electric beaters.
  • Stir butter or olive oil, sage, salt, pepper and sour cream or buttermilk into the remaining potatoes and return to low heat, stirring until warm.

This perennially popular side dish is often so laden with butter and hot cream that the flavor of the potato gets lost in the mashing. Our rendition derives its velvety texture from butter and skim milk, plus one secret ingredient.

16 ounces small-curd low-fat cottage cheese
2 pounds small red potatoes, halved if large
Coarse salt
1/4 teaspoon freshly ground white pepper
2 tablespoons finely chopped fresh chives, plus stems for garnish
2 tablespoons unsalted butter, softened
2 tablespoon skim milk

Steps:

  • Puree half of the cottage cheese in a blender; set aside. Cover potatoes with water by 1 inch in a medium saucepan. Add a large pinch of salt. Bring to a boil. Reduce to a simmer, and cook until tender, about 15 minutes. Drain.
  • Transfer potatoes to a large bowl. Add both pureed and whole-curd cottage cheese, pepper, chives, butter, and milk. Season with salt. Mash to desired consistency. Serve garnished with chives.

2 lbs red potatoes, wash and cut into 1/2-inch chunks
1 cup low sodium chicken broth
1/2 cup light cream cheese spread
1/2 cup nonfat sour cream
3 tablespoons reduced-fat parmesan cheese, grated

Steps:

  • Place potatoes in a large saucepan. Add broth; cover. Bring to a boil on high heat; simmer on medium heat 15 minutes, stirring after 8 minutes. Uncover; stir potatoes. Simmer, uncovered for 5 to 6 minutes or until potatoes are tender and most of broth is absorbed.
  • Add cream cheese spread. Reduce heat to low. Mash potatoes slightly until cream cheese is melted. Add sour cream and Parmesan; mash until potatoes are smooth and heated through.

These taste just like mashed potatoes but are made with cauliflower! The first time I had these, nobody could guess the main ingredient. Even my toddler son will eat these and he rarely eats vegetables. I mash the cauliflower until it is almost creamy, with some small pieces left. This could also be dressed up with some cheese, green onions, crumbled bacon or whatever else one desired. This recipe is based on the one found in the South Beach Diet.

This is a diet version of my recipe #201988, but you won't notice any flavor missing. Hubby, who has always insisted on adding butter to his mashed potatoes, doesn't feel the need to do so with these :)

water, to cover potatoes
2 teaspoons kosher salt, for boiling
2 lbs red potatoes
4 ounces fat free cream cheese
1/2 cup low-fat milk
1 egg (optional)
fresh ground pepper
3 ounces low-fat cheddar cheese, shredded

Steps:

  • Wash potatoes and cut off any eyes. Do not peel them. Cut them in quarters and place in good sized pot. Fill with enough water to cover potatoes and add salt.
  • Bring to a boil, then simmer for 20 - 25 minutes or until tender.
  • Drain water and smash the potatoes in the pot with a potato masher.
  • Add cream cheese and half the milk and continue to smash with masher. Add egg too if desired (it adds to both the fluffy texture and a nice color).
  • Add remaining milk as needed and most of the cheddar cheese. (You might need more milk, depending on your potatoes).
  • Add pepper to taste and garnish with remaining cheddar cheese.

1 pound red potatoes, peeled and cut into eighths
1 pound russet potatoes, peeled and cut into 1 1/2-inch pieces
5 garlic cloves
3/4 cup nonfat milk
2 tablespoons unsalted butter
3/4 teaspoon coarse salt
Freshly ground pepper

Steps:

  • In a medium saucepan, combine the potatoes and whole garlic; add enough cold water to cover by about 2 inches. Bring to a boil over high heat. Reduce heat to a simmer, and cook until the potatoes are easily pierced with a fork, about 15 minutes. Drain the potatoes, and set aside in a warm place.
  • Meanwhile, in the same saucepan, combine milk, butter, and salt; season with pepper. Place over low heat until butter has melted and milk is warm to the touch. Pass potatoes and garlic through a ricer or food mill into saucepan, and stir gently to combine with milk mixture. Serve immediately.
