2 bunches spinach, washed well and spun dry
4 tablespoons olive oil
2 shallots, chopped fine
2 garlic cloves, minced fine

Steps:

  • Cook spinach in water until limp [or better, steam in Oster Digital Food Steamer, cost $40 on amazon.com so you can "set it and forget it".
  • Blend/puree cooked spinach.
  • Gently fry shallots and garlic in olive oil and mix well with pureed spinach.
  • Note, a slight touch of freshly grated nutmeg, a pinch of good quality curry or any favorite spice adds a lot to this dish -

HEALTHY "CREAMED" SPINACH

This spinach dish, spiced with cloves, bay leaves, nutmeg, and peppercorns, is deceptively rich -- its sauce is made creamy by skim milk and just a bit of half-and-half.

2 ten-ounce bunches spinach, well washed, tough stems removed
1 cup skim milk
1 teaspoon whole black peppercorns
2 dried bay leaves
4 cloves
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1/2 teaspoon coarse salt
1/4 teaspoon white pepper
1/4 teaspoon nutmeg
2 tablespoons half-and-half
1 medium onion, chopped into 1/4-inch pieces

Steps:

  • Roughly chop spinach leaves; set aside. Combine milk, peppercorns, bay leaves, and cloves in a small saucepan. Warm over medium heat until hot but not boiling. Remove from heat, cover, and let steep for 30 minutes. Strain into a bowl or measuring cup, discarding solids; set aside.
  • Melt 1 tablespoon butter in a saucepan over medium heat. Whisk in flour; cook, whisking constantly for 1 minute. Gradually whisk in milk mixture; cook, whisking constantly until mixture thickens, about 3 minutes. Stir in salt, white pepper, nutmeg, and half-and-half. Set aside, covered; keep warm over low heat.
  • Heat remaining butter in a large, nonstick skillet over medium-low heat. Add onion; cook until tender, about 5 minutes. Add spinach a little at a time; turn with tongs until all spinach is added and just wilted. Pour sauce over spinach, and stir to combine. Serve immediately.

Number Of Ingredients 12

1 head garlic, top end cut off
1 spray olive oil cooking spray
1 teaspoon olive oil
1 large sweet onion, sliced (recommended: Vidalia)
1 (10-ounce) box frozen spinach, defrosted and drained
1/4 teaspoon ground nutmeg
1 (14-ounce) can chicken broth
3 tablespoons light cream cheese
1 teaspoon butter
1/2 lemon, juiced
1 1/2 teaspoons salt
1/2 teaspoon black pepper

Steps:

  • Place garlic on a piece of aluminum foil and lightly spray the garlic with olive oil cooking spray once. Wrap aluminum foil around the garlic to form a tight package. Roast for 45 minutes. Once garlic is cool enough to handle, remove from aluminum foil and set aside. In a nonstick 10-inch saucepan, heat 1 teaspoon olive oil over medium-high heat. Add onions and saute until translucent, about 1 1/2 minutes. Add spinach and nutmeg and saute for 1 minute. Add chicken broth and bring to simmer; simmer for 1 minute. Pour mixture into a food processor, and then squeeze the garlic cloves from the head of roasted garlic, discarding the skin. Add all remaining ingredients. Pulse until creamy. Serve warm.
