3 cups rolled oats or old fashioned oats
2 tablespoons light brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon baking soda
2 large eggs
1/4 cup honey
1 cup bananas (mashed)
2 teaspoons vanilla extract
1 cup milk
1/4 cup coconut oil, melted
1 cup semi sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees. Grease a muffin pan with non stick cooking spray. In a large bowl combine the oats, sugar, cinnamon, salt and baking soda.
  • In a medium bowl combine eggs, honey, mashed bananas, vanilla, milk and coconut oil.
  • Add the wet ingredients into the dry ingredients. Stir until combined, do not overmix.
  • Fold in the chocolate chips.
  • Scoop batter evenly into prepared muffin tin. Bake for 30 minutes or until set and the tops are slightly brown.
  • Allow the muffins to cool in the pan for 10 minutes then remove to cool completely.

Number Of Ingredients 13

1 cup quick-cooking oats
3/4 cup all-purpose flour
3/4 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
2 tablespoons butter, softened
1/2 cup packed brown sugar
3 medium ripe bananas, mashed
1 egg
2 tablespoons unsweetened applesauce
1 teaspoon vanilla extract
3/4 cup miniature semisweet chocolate chips

Steps:

  • In a large bowl, combine the dry ingredients. In another large bowl, beat butter and brown sugar until crumbly. Beat in the bananas, egg, applesauce and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips., Coat muffin cups with cooking spray or line with paper liners; fill three-fourths full. Bake at 350° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

1 1/2 teaspoons baking powder

1/4 cup canola oil
1/4 cup milk
3 bananas, mashed
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F. Line a muffin tin with paper or silicone liners, or lightly spray with cooking spray.
  • In a large bowl, combine the flour, oats, brown sugar, baking powder, baking soda, and salt.
  • In another bowl whisk together the eggs, oil, milk, and mashed bananas.

I am now actually "watching" my diet, and in the process am trying to make my favorites in a "low fat" manner. I took my favorite muffin recipes and combined them, made some adjustments and came up with this great recipe. Hope you enjoy them!

Number Of Ingredients 10

3 large bananas, mashed
1/2 cup white sugar
1 egg, beaten
1 teaspoon baking soda
1 teaspoon baking powder
1 cup flour (you can use whole wheat for a change if you like)
1/2 cup rolled oats (instant is fine)
1/3 cup applesauce
1/2 teaspoon salt
1/2 cup chocolate chips

Steps:

  • Add sugar to mashed bananas and mix.
  • Add beaten egg and mix.
  • In a separate bowl mix all dry ingredients.
  • Add dry ingredients to the banana mixture and mix well.
  • Mix in applesauce.
  • Add chocolate chips and Stir.
  • Spoon into medium size muffin tin (I use paper muffin cups so they won't stick) and fill 3/4's full.
  • Bake for 20-25 minutes at 350.
  • Enjoy!

2 1/4 cups Original Bisquick™ mix
1 cup mashed ripe bananas (about 2 medium)
1/2 cup miniature semisweet chocolate chips
1/4 cup granulated sugar
1/3 cup milk
2 tablespoons butter or margarine, softened
1/2 teaspoon ground cinnamon
1 egg
1 cup powdered sugar
1 tablespoon milk
1/2 teaspoon vanilla

Steps:

  • Heat oven to 375°F. Spray 8-inch square pan with cooking spray. In medium bowl, stir all coffee cake ingredients with wire whisk or fork until blended. Spread in pan
  • Bake 26 to 30 minutes or until golden brown and toothpick inserted in center comes out clean. Cool 30 minutes.
  • In small bowl, mix all glaze ingredients until smooth. If necessary, add additional milk, 1 teaspoon at a time, until thin enough to drizzle. Drizzle glaze over warm coffee cake. Serve warm.
