It's so fun to play with ingredients to make one-of-a-kind bread pudding. At it again, I created a bread pudding with a creamy bit of a tart twist. Incorporating buttermilk and cream cheese is surprisingly delicious! King's® Hawaiian rolls makes it especially yummy!

1 ½ cups whole milk
1 cup white sugar
½ cup buttermilk
¼ cup melted unsalted butter
4 large eggs
1 teaspoon vanilla extract
¼ teaspoon salt
½ teaspoon ground cinnamon
1 (12 count) package Hawaiian bread rolls (such as King's®)
¼ cup raisins
½ (8 ounce) package cream cheese

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Butter a 9x13-inch baking dish.
  • Mix milk, sugar, buttermilk, melted butter, eggs, vanilla, salt, and cinnamon together in a large mixing bowl until well combined.
  • Tear each roll into 6 pieces. Add bread to the mixing bowl with raisins; mix gently until just moistened. Pinch bits of cream cheese over the bread mixture and fold in. Pour into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 45 minutes. Cool for at least 30 minutes before serving.

Aloha ! Bread pudding started as a way to use leftover bread and became a comfort food desert. This is Chef Sam Choy's Island version.

3 eggs
3/4 cup granulated sugar
4 cups milk
6 tablespoons coconut milk
8 cups diced day old bread, about 1/2 inch cubes
1/2 cup toasted macadamia nuts, chopped
1/2 cup toasted coconut flakes
1/2 cup diced pineapple
1/4 cup toasted macadamia nuts, chopped
1/4 cup toasted coconut flakes
1 1/2 cups whipped cream

Steps:

  • Preheat oven to 325°F.
  • Whisk eggs and sugar together, add milk and coconut milk and mix thoroughly.
  • Layer bread, nuts and coconut in a greased 13x9 inch baking pan.
  • Pour the egg mixture evenly over the top and let sit until the egg mixture soaks into the bread.
  • Bake for 45-60 minutes, until a toothpick inserted in the center comes out clean.
  • To serve: Combine pineapple, nuts and coconut and sprinkle over the pudding.
  • Top each serving with a dollop of whipped cream.

1/2 loaf Hawaiian bread
2 (16 ounce) cans Carnation Evaporated Milk
3/4 cup butter
6 egg yolks
8 ounces coconut (frozen)
3 teaspoons vanilla extract
1/3 teaspoon nutmeg
1/3 teaspoon cinnamon
2 cups sugar

Steps:

  • Mix egg yolks, sugar and butter together.
  • Add milk slowly. Add bread, coconut, vanilla, nutmeg and cinnamon.
  • Use baking pan (greased) and bake at 350 degrees for 45 minutes.
  • Serves 8.
