Sweet Potato Pie for a Crowd image

This recipe is great for a large family dinner or a potluck because it makes 5 pies at once. And even better, it tastes fantastic! This recipe comes from Tom Visser, a very good cook and an even better friend.

Number Of Ingredients 9

7-8 lb sweet potatoes, about 9-10 potatoes
2 1/4 c butter, melted
1/2 tsp nutmeg
1 1/2 tsp lemon extract
1 1/2 tsp vanilla extract
1/4 tsp baking powder
8 large eggs, beaten
3 1/2-4 c sugar
5 unbaked pastry pie shells

Steps:

  • 1. Scrub sweet potatoes; leave skins on. Place in a large pot; cover with water. Boil until tender, about 1 hour. Drain and cool until potatoes can be handled easily. Remove skins. Place cooked potatoes in large pot, mash well. Add melted butter, continue to stir and mash until mixture is smooth.
  • 2. Stir in nutmeg, lemon extract, vanilla extract and baking powder. Add beaten eggs and sugar. Beat with an electric mixer until smooth.
  • 3. Pour filling into prepared pastry pie shells. Bake at 350* for 45 minutes to an hour, or until filling is set and crust is lightly browned. Remove from oven and cool.
  • 4. Makes 5 pies, 8 slices each. Nutrition info per slice: 361 calories, 4 grams protein, 20 grams fat, 43 grams carbohydrate, 2 grams of fiber, 72 milligrams of cholesterol, and 257 milligrams of sodium.
