1 tablespoon vegetable oil
4 pounds stew beef, cut into 1-inch cubes
5 cloves garlic, minced
½ cup red wine
5 stalks celery, cut into 1/2-inch pieces
1 onion, cut into chunks
10 cups water
1 (6 ounce) can tomato paste
2 tablespoons salt, or to taste
2 tablespoons white sugar
3 bay leaves
1 teaspoon ground black pepper
4 carrots, cut into 1-inch pieces
3 potatoes, cut into 1-inch pieces, or to taste
¼ cup cornstarch
¼ cup water

Steps:

  • Heat oil in a pot over medium-high heat. Add beef; cook and stir until browned, about 10 minutes. Add garlic; cook until aromatic, 2 to 3 minutes. Add wine; cook until alcohol has cooked off, about 5 minutes. Add celery and onions; cook until tender, about 5 minutes.
  • Pour 10 cups water into the pot. Add tomato paste, salt, sugar, bay leaves, and pepper. Bring to a boil. Lower heat to medium-low. Cover and cook stew until beef is tender, about 1 hour.
  • Place carrots into the stew; cook until slightly tender, about 10 minutes. Add potatoes; cook until tender, 10 to 15 minutes.
  • Mix cornstarch and 1/4 cup water together in a bowl; add to the stew. Let simmer until thickened, about 3 minutes.

This low-and-slow beef stew is very easy to prepare. It's just perfect for a lazy weekend supper. Once everything is in the pot, let the oven finish up for you, and add the peas at the very end. Of course, you can brown the beef beforehand, if you wish, but there is plenty of flavor and great color without browning. Enjoy with rice, noodles, or mashed potatoes, or keep it simple with a hot, crusty bread on the side.

1 cup dry red wine
1 teaspoon dried basil
1 teaspoon garlic powder
1 teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
3 tablespoons all-purpose flour
1 (28 ounce) can fire-roasted crushed tomatoes
2 ½ pounds beef stew meat, cubed
1 pound halved white mushrooms
2 cups diced carrots
2 medium yellow onions, chopped
1 cup diced celery
2 cups frozen petite peas, thawed

Steps:

  • Stir red wine, basil, garlic powder, salt, and pepper together in a small bowl until combined. Add flour, 1 tablespoon at a time, stirring briskly after each addition to avoid lumps.
  • Pour crushed tomatoes and juice into a Dutch oven. Pour in red wine mixture. Add stew meat, mushrooms, carrots, onions, and celery; stir to combine. Cover the pot and place in a cold oven.
  • Set the oven to 300 degrees F (150 degrees C). Cook the stew until beef is tender, about 3 hours.
  • Remove from the oven and stir in thawed peas. Cover and allow to sit off the heat for 20 minutes before serving. Peas will steam and keep their bright color. Serve warm.

2 to 2 1/2 pounds beef stew meat
2 cubes beef bouillon
4 tablespoons curry powder
2 potatoes, cubed
1 onion, quartered
2 carrots, sliced
3 stalks celery, chopped
4 cups water
2 to 3 teaspoons salt
1/4 cup of flour
1/4 cup very cold water
1 teaspoon sesame or peanut oil

Steps:

  • In a pot over high heat, brown meat on all sides. Cover with water and add bouillon cubes. Cook curry powder in 1 teaspoons sesame or peanut oil to get rid of the raw taste and add it to the meat. Cook covered for 1 1/2 hours. Add vegetables and cook until potatoes and carrots are tender. After stew is cooked, mix flour, and cold water well, using wire whisk to remove all lumps, and stir it into stew. Cook, stirring constantly, until stew thickens. Serve over steamed rice. IN A SLOW-COOKER: Mix all ingredients together except flour in large crockpot. Cook on high 4 to 6 hours or on low for 8 to 10 hours. After stew is cooked, mix together flour and water as directed above, stir into stew, and cook on high heat, stirring constantly, for 5 or 10 minutes, or until thickened.

2 pounds ground beef
2 pounds fresh green beans, cut into 1 inch pieces
2 large Spanish onions, sliced
2 green bell peppers, chopped
2 large tomatoes, sliced
2 medium heads cabbage, quartered
soy sauce
1 cup white rice

Steps:

  • In a large stock pot, layer ground beef, green beans, onions, bell peppers, and tomatoes. Finish with a layer of cabbage, then evenly drizzle soy sauce over top. Cover and cook over medium for 1 hour, or until cabbage is tender and meat is well done. Reduce heat as needed to prevent burning.
  • Meanwhile, rinse rice in a fine mesh strainer under cold running water until no longer cloudy. Transfer to a medium saucepan and cover with 2 cups water. Bring to a boil, cover, and reduce heat to low. Simmer for 15 minutes, remove from heat and let stand for 10 minutes, or until all liquid has evaporated. Serve over rice.

2 teaspoons sesame oil
½ pound boneless, skinless chicken breasts, cut into 1-inch pieces
2 cloves garlic, minced
1 (1 inch) piece fresh ginger, minced
¼ cup dry sherry
1 cup low-sodium chicken broth
¾ cup water
1 tablespoon reduced-sodium soy sauce
½ teaspoon Asian red chile sauce, or more to taste
3 ½ cups stemmed and chopped mustard greens

Steps:

  • Heat oil in a large saucepan over medium-high heat. Add chicken; cook and stir until juices run clear, about 6 minutes. Transfer to a bowl using tongs.
  • Add garlic and ginger to the pan and cook until fragrant, 10 to 20 seconds. Add sherry; cook, scraping up any browned bits, until mostly evaporated, 1 1/2 to 3 minutes. Add broth and water, increase heat to high, and boil for 5 minutes. Mix in soy sauce and chile sauce. Add mustard greens, reduce heat, and cook until tender, about 3 minutes. This is a great twist on beef stew. This has a unique flavor and is a great way to use some left over sirloin if you chunk it up into pieces. I got this recipe from my sister-in-law and it has become a family favorite.

1 lb stew meat, can pineapples (chunked into small bite size pieces 1 cup chopped onion, 1 cup chopped green pepper, 1 cup chopped c)
2 diced tomatoes (can substitute 1 can tomatoes)
1/4 cup soy sauce (I prefer light for less sodium)
1 teaspoon sugar
1/2 teaspoon garlic salt
1 tablespoon flour

Steps:

  • Brown meat in large family size skillet. While meat is cooking mix soy sauce, sugar, garlic salt and flour together in small bowl.
  • Once meat is browned, add soy sauce mixture to meat then chopped vegetables and simmer about 4 minutes. Add tomato and pineapple and simmer about 20 minutes or longer depending on the tenderness of the meat.
  • To freeze: I make a triple batch and I use a ziploc freezer bag, label and store in freezer up to 2 months.
  • To thaw: thaw and microwave on high for 7 minutes or heat in the oven at 350 for 25 minutes/ or you can re-heat in the crockpot.

3 pounds mixed Hawaiian fish, eviscerated, scaled and hacked into 2-inch pieces, keep heads whole
Pink Hawaiian salt
Black pepper
Canola oil, to cook
2 habaneros, de-stemmed, finely sliced
2 onions sliced
5 cloves garlic, sliced
5 slices ginger, peeled, sliced 1/8-inch thick
2 cups, peeled whole tomatoes (canned tomatoes are ok)
6 sprigs thyme
2 bay leaves
6 kaffir lime leaves
Water, to cover
3 limes, juiced
1/2 pound Gai Choy, cut into 20-inch pieces
2 cups heavy cream
1 tablespoon minced garlic
1 tablespoon minced ginger
2 cups steamed soft and peeled poi, cut into 2-inch pieces
1/2 cup sliced green scallions

Steps:

  • Season the fish with salt and pepper. In a stockpot coated with oil, sear the fish. Add the habaneros, onions, garlic, ginger, tomatoes, thyme, bay leaves, and kaffir leaves. Cover with water, check for seasoning and bring to a simmer. Simmer for 1 hour.
  • Squeeze in lime juice and gai choy right before serving. Check for seasoning. To make the poi, heat the cream with the garlic and ginger and reduce by 20 percent. Add the hot taro and mash together smooth. Season and check for flavor.
  • Place a mound of poi in the middle of a large pasta bowl. Top off with lots of the fish stew. Garnish with scallions.
  • Beverage: Lillikoi Hawaiian Beer.

1 medium onion, chopped
2 tablespoons tomato paste
3 tablespoons flour
1 bay leaf
3 medium sized carrots, peeled and chopped
2 medium sized potatoes, peeled and chopped
4 stalks celery, chopped
1 (15-ounce) can stewed tomatoes
1 (15-ounce) can tomato sauce
2 tablespoons vegetable oil
salt and pepper to taste

Steps:

  • Heat 2 tablespoons vegetable oil in a large stock pot. Working in small batches in a single layer, brown the beef, making sure each piece is thoroughly caramelized. When all the meat is browned, set aside in a bowl. In the hot pan, add the chopped onion and brown, about 3 minutes. Add tomato paste and cook for 1 minute. Add in the flour and continue to cook 1 minute. Add the 2 pounds of browned beef back into the pot. Season to taste with salt and coarse ground black pepper. Add in the bay leaf. Add water so that the browned beef is just covered. Bring to a boil, then turn heat down to medium-low. Simmer covered for 2 hours. Add the carrots, potatoes, celery, diced tomato and tomato sauce and simmer until the vegetables are tender. Finish it with some fresh cracked black pepper, serve with hot rice and/or poi and enjoy!

One large sweet onion, sliced
One red pepper, sliced
One yellow pepper, sliced
Two small habaneros, finely diced
olive oil, salt and pepper
2 cups chicken broth
2 cans coconut milk (not lite)
6 mahi mahi fillets
5 or 6 medium potatoes
2/3 cup chopped cilantro
juice of one lime, maybe more

Steps:

  • Saute peppers and onion in olive oil, season with salt and pepper. When nearly tender add broth and coconut milk. Simmer for 10 minutes. Add mahi mahi and potatoes, simmer until tender. Add cilantro and lime juice to finish. Adjust seasoning with salt and pepper. Serve with grilled naan.

1 Tablespoon Worcestershire sauce

6-8 red potatoes, diced
1 tsp. minced garlic

Steps:

  • Brown roast or cubes in saucepan using a little olive oil. Add onion and garlic. Stir and continue to brown until the onions are transparent. Add to your crock pot and the rest of the ingredients except the salt and pepper. Cook on low for 4 to 6 hours. Taste it, and season with salt and pepper if needed. Serve. Note: If using the 4qt. Gourmet Cooker, on stove put pan on medium heat.Follow above and cook on 2 (low) for 4 to 6 hours or 3 (medium) for 2 to 3 hours.
