1 red bell pepper, seeded, chopped
¼ cup sweet chili garlic sauce*
1 cup fresh pineapple, cut into 1/2-inch pieces
3 cups cooked rice

Steps:

  • Cook and stir sausage and bell peppers over medium-high heat for 5 minutes or until sausage is lightly browned and peppers are tender.
  • Add chili garlic sauce and pineapple; cook and stir for 5 minutes.
  • Serve over cooked rice.

1 can (20 ounces) unsweetened pineapple chunks, undrained
1/2 cup packed brown sugar
1/4 cup cornstarch
1/2 cup cider vinegar
1 package (32 ounces) frozen fully cooked homestyle meatballs
2 medium green peppers, cut into 1-inch pieces
1 jar (10 ounces) maraschino cherries, drained
Salt and pepper to taste
Hot cooked rice, optional

Steps:

  • Drain pineapple, reserving juice in a 2-cup measuring cup; add enough water to measure 2 cups. In a small saucepan, mix brown sugar, cornstarch, vinegar and juice mixture until blended. Bring to a boil; cook and stir until thickened., In a 3-qt. slow cooker, combine meatballs, peppers, drained pineapple and sauce. Cook, covered, on low 6-8 hours or until meatballs are heated through and peppers are tender., Stir in cherries; cook, covered, on low 15-30 minutes longer or until heated through. Season with salt and pepper to taste. If desired, serve with rice.

I made this up one day when I couldn't find a recipe anywhere with these ingredients. So I kind of threw it together on a whim. Sugar can be adjusted for sweetness, and if the sauce gets a bit thicker than desired I suggest adding a little chicken broth as it's thickening. Serve immediately over rice.

1 tablespoon vegetable oil, or more to taste
1 (16 ounce) package Polish sausage, or to taste, cut into 1-inch squares
1 large onion, thinly sliced
1 large green bell pepper, cut into 1-inch squares
¾ fresh pineapple - peeled, cored, and cut into chunks
2 tablespoons cornstarch
½ cup pineapple juice, or more to taste
⅓ cup packed brown sugar, or to taste
2 tablespoons cider vinegar
2 tablespoons soy sauce
2 teaspoons minced garlic

Steps:

  • Heat oil in a large skillet over medium heat. Cook and stir sausage, onion, and green bell pepper until vegetables start to become tender, about 8 minutes; add pineapple and cook, stirring occasionally, until the pineapple is hot, about 5 minutes more.

2 lbs sage sausage
1/2 teaspoon dried sage
1/4 cup milk or 1/4 cup water
1/3 cup breadcrumbs
1 egg
1 teaspoon salt
pineapple sauce
1 cup pineapple juice (from can)
1/2 cup brown sugar
1 1/2 tablespoons cornstarch
1 1/2 tablespoons vinegar
1 teaspoon chicken bouillon
2 cups chunk pineapple, drained

Steps:

  • Mix and Chill the Meatball mixture. Make Meatballs and fry in pan until brown. Place in a casserole dish.
  • Stir Sauce mixture together and pour over meatballs. Cook 30-40 min @ 350 degrees until sauce is thick and heated through.

2 tablespoons brown sugar
2 tablespoons yellow mustard
1 tablespoon cider vinegar
3/4 cup lemon-lime soda
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Place sausage in a 3- or 4-qt. slow cooker. Drain pineapple, reserving 3/4 cup juice; set pineapple aside. In a small bowl, whisk the ketchup, brown sugar, mustard and vinegar. Stir in soda and reserved pineapple juice. Pour mixture over sausage; stir to coat. Cover and cook on low until heated through, 2-3 hours. , Stir in pineapple. In a small bowl, combine cornstarch and water until smooth. Stir into slow cooker. Cover and cook until sauce is thickened, 30 minutes longer. Serve with toothpicks.
