This is a family fave and so easy to do! I like to serve it with brown rice, but you can put it over anything.

2 lbs boneless chicken, but into bite-sized pieces
1 cup pineapple juice
1/2 cup brown sugar, packed
1/3 cup soy sauce

Steps:

  • Combine pineapple juice, brown sugar and soy sauce; mix well.
  • Stir in chicken pieces, coating well.
  • Pour into crock pot and cook on low for 6-8 hours.
  • Serve over rice.
  • If desired, you may also add chunks of pineapple, bell pepper, sliced carrots, onion -- .

2 -3 chicken breasts, cut in pieces
2 tablespoons vegetable oil
1 onion, chopped
2 celery ribs, chopped
1 cup ketchup
1/2 cup water
2 tablespoons lemon juice
2 tablespoons vinegar
2 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1 (8 ounce) pineapple tidbits (drained well)
1/2 teaspoon salt

Steps:

  • In a skillet lightly brown chicken pieces slowly in vegetable oil. Remove from skillet and place in bottom of crock pot.
  • In same skillet cook onion and celery just until tender, but not browned.
  • Add remaining ingredients and simmer about 1 minute. Pour sauce over chicken in crock pot.
  • Turn crock pot on high for 1st hour and then to low for 3-4 hours.
  • Note: If you want sauce thicker, add 1 tablespoon of cornstarch during last 30 minutes.
  • Wonderful served over buttered rice!
  • Enjoy!

1 small onion, chopped (i will use a vidalia) (optional)
green pepper, chunks (optional)

4 green onions
3 tablespoons butter
4 chicken breast halves
flour, seasoned with
salt and pepper
1 (14 ounce) can sliced pineapple
1 avocado
rice, hot, buttered

Steps:

  • Chop onions using only 1" of green tops.
  • Saute in 1 tablespoons.
  • of butter until glazed.
  • Transfer to crock pot.
  • Coat chicken breasts in seasoned flour.
  • Saute in butter until brown on both sides.
  • Transfer to crock pot.
  • Drain pineapple, pour juice over chicken.
  • Cover and cook on low 3 to 4 hours (high 1 1/2 to 2 hours) or until breasts are tender.
  • Saute pineapple slices in butter until golden.
  • Place on heated plate.
  • Top each with a chicken breast.
  • Slice avocado into 8 lengthwise strips.
  • Place 2 strips on each chicken breast.
  • Serve pan drippings over rice.

1 (20 ounce) can pineapple slices, drained, reserve juice
1 (8 ounce) bottle creamy French dressing
1 (1 1/4 ounce) envelope dry onion soup mix
1 tablespoon grated lemon rind
1 small green bell pepper, cut into thin strips

Steps:

  • Place the chicken in crock pot.
  • In a bowl, combine the pineapple juice, salad dressing, onion soup mix and lemon peel.
  • Pour over the chicken.
  • Cover and cook on low for 6-7 hours or on high for 3 to 4 hours.
  • Twenty minutes before serving, arrange pineapple slices and green pepper strips over chicken to heat through.

1 cup bbq sauce

Steps:

  • Cook 8 slices of bacon until cooked but not crisp. Drain well on paper towels.
  • Season each chicken breast with salt and pepper. Then wrap each chicken breast with 2 strips of bacon and place in crock pot. Top with onion, crushed pineapple, and bbq sauce.
  • Cover and cook on low for 4 to 5 hours or until chicken is tender. Cook remaining bacon until crisp. Drain and crumble the bacon and sprinkle over each serving.

1 (15 oz.) can pineapple tidbits with juice (don't drain it!)
1/2 cup chicken broth
1/2 cup brown sugar
1/4 cup soy sauce
2 Tblspn. Corn Starch
Optional: Diced peppers, onions, carrots

Steps:

  • Directions: Cut chicken into 1 inch cubes. Place chicken cubes in a one gallon sized freezer bag. add in any optional vegetables. Set aside. Open can of pineapple. Pour approx. a 1/4 cup of the juice into a small bowl. Add the corn starch and wisk till well blended. Set aside. In a large mixing bowl, dump the remaining entire can (both pineapple chunks and remaining juice). Add in the chicken broth, brown sugar and soy sauce. Stir to blend till sugar is dissolved. Add in the small bowl of corn starch/juice mixture and stir until till well blended. Pour pineapple mixture into freezer bag with the chicken cubes. Squeeze as much air as possible from the bag as you seal it. Label and freeze up to 6 months. To Cook: Dump frozen (but if you remember to pull it from the freezer to thaw in fridge the night before that's ok too.) into crockpot. Cook on low: 10 hours if frozen 8 hours if thawed.OR Cook on high 6 hours if frozen or 4 hours if thawed. Till chicken is cooked all the way through. Serve over rice.

2 1/2 pounds boneless, skinless chicken thighs
1/2 red bell pepper, (coarsely chopped)
1/2 medium yellow or sweet onion, (coarsely chopped)
1/2 cup packed dark or light brown sugar
1/3 cup ketchup
2 tablespoons soy sauce
1/2 teaspoon crushed red pepper flakes
2 garlic cloves, (minced)
1 teaspoon finely minced fresh ginger
2 (8-ounce) cans pineapple rings, (undrained)
1 tablespoon cornstarch
sliced green onion, (optional)

Steps:

  • Place the chicken thighs in a 6-quart slow cooker. Add the bell pepper and onion.
  • In a small bowl, stir together the brown sugar, ketchup, soy sauce, red pepper flakes, garlic, and ginger.Chop up the pineapple rings from 1 can and add to the ketchup mixture. Add the pineapple juice from the one can. Stir and pour over the chicken.
  • Lay the pineapple rings from the second can on top of the chicken. Cover and cook on LOW for 4 to 6 hours.
  • Remove the pineapple slices and set aside. Remove the chicken and shred it. Mix the cornstarch with 1 tablespoon of cold water. Add to the crock pot and mix it in. Cover and cook on HIGH for 15 minutes to thicken.Return the chicken to the crock pot and stir it into the sauce. Place pineapple slices back on top.Serve with green onions if desired.
