HAWAIIAN BURGER

Every bite of these burgers is an explosion of sweet and savory, thanks to the juicy pineapple topping and umami-packed mayo spread (plus bacon!).

1/2 cup mayonnaise
1/2 cup teriyaki cooking sauce or marinade
1 small pineapple, peeled and cored
24 ounces lean ground beef
Kosher salt and freshly ground black pepper
8 slices bacon
4 onion rolls, split
4 slices mozzarella

Steps:

  • Preheat the oven to 200 degrees F.
  • Mix the mayonnaise and 1/4 cup of the teriyaki cooking sauce in a small bowl until combined. Slice four 1/4-inch-thick rounds from the pineapple (reserve the remaining pineapple for another use). Form the beef into 4 patties and sprinkle with salt and pepper.
  • Heat a grill pan over medium-high heat, alternatively prepare an outdoor grill for medium-high direct and indirect heat. Add the bacon and pineapple in a single layer in a grill pan; if using an outdoor grill place the pineapple over direct heat and the bacon over indirect heat and cover. Cook until golden on one side, about 5 minutes for the pineapple and 7 minutes for the bacon. Flip both with tongs and continue cooking until the bacon is crisp and the pineapple is golden and soft, about 6 minutes more for each. Transfer to a baking sheet along with the rolls and keep warm in the oven.
  • Add the burgers to the grill pan or outdoor grill over direct heat and cook until well browned on one side, about 4 minutes. Flip the burgers and cook for 2 minutes. Brush the burgers with half the remaining teriyaki cooking sauce, top with the mozzarella and brush with more sauce. Cover the burgers with a heatproof metal bowl or grill lid and cook until the cheese is melted and the burger is cooked to desired doneness, 1 to 2 minutes for medium.
  • Put a burger on the bottom half of each roll and top with 2 slices bacon and 1 pineapple round. Divide the teriyaki mayonnaise among the burgers, spooning it into the hole of each pineapple round. Top with the roll tops.

1 1/3 cups diced pickled jalapenos
1 1/3 cups diced pineapple
1 cup barbecue sauce
22 ounces sliced bacon
4 1/3 pounds ground beef (80 percent lean, 20 percent fat)
Seasoned salt
4 buns
4 tomato slices
4 cups shredded lettuce, split into 4 portions
8 slices provolone

Steps:

  • Make the angry Hawaiian sauce: Combine pickled jalapenos, pineapple and barbecue sauce in a bowl.
  • Place bacon in large pot and cover with water. Boil until most of the fat is rendered, about 45 minutes. Drain bacon. Preheat a grill or pan, then form bacon into 4 patties and sear until crispy.
  • Divide beef into 4 patties. Sprinkle beef patties with seasoned salt and cook over medium-high heat until desired doneness.
  • Meanwhile, toast buns to desired doneness.
  • Place one tomato slice on each bun bottom, then top with one portion shredded lettuce. Top beef patties and bacon patties with slices of provolone, then top each cheesed beef patty with a cheesed bacon patty.
  • Top patties with angry Hawaiian sauce and bun tops, then finish by closing with bun bottoms.

TERIYAKI GLAZED HAWAIIAN BURGER

3 lb ground beef
2 tsp ground ginger
2 tsp garlic salt
1 Tbsp soy sauce
6 slice honey ham
6 slice pineapple
6 slice swiss cheese
6 slice red onion
6 hamburger buns
TERIYAKI GLAZE
1/2 c teriyaki sauce
1/2 c pineapple juice

Steps:

  • 1. Mix first four ingredients in a bowl and press out 6 1/2 lb patties. Cook on grill until done basting with the teriyaki glaze as you cook them. Reserve unused sauce. Grill pineapple both sides to get nice grill marks same with buns.
  • 2. Serve on buns with Swiss cheese, red onion, honey ham, lettuce and drizzle with remaining sauce.

1/4 c soy sauce or tamari sauce

BURGER PATTIES
1 egg
1 bunch fresh chives
1/4 c italian parsley
1 clove garlic, minced
1 tsp steak seasoning
big pinch oregano
big pinch hot chile flakes
big pinch sea salt
pinch ground pepper
1 lb fresh ground chuck
2-3 Tbsp canola oil
TOPPINGS
8 slice hickory smoked bacon
4 pineapple slices
1/4 c unsalted butter, melted
1/4 c brown sugar
4 slice mozzarella cheese
4 hamburger buns
lettuce
sliced tomatoes
8 slice sandwich pickles
CHIPOTLE SAUCE
1/3 c mayonnaise
2 chipotle peppers in adobo sauce
pinch sea salt
pinch black pepper

Steps:

  • 1. To make the burger patty: In a bowl, place the ground chuck, mix in the egg, chives, parsley, garlic, steak seasoning, oregano, chile flakes, sea salt and pepper. Mix together 30 seconds, don't over mix, cover and refrigerate while preparing the toppings.
  • 2. To prepare toppings: cook bacon until golden and crispy (softer if preferred)drain. Heat the broiler: line a baking sheet with parchment paper. Brush both sides of the pineapple with butter and lightly sprinkle with brown sugar. Place in oven, broil until caramelized, about 5-7 minutes.
  • 3. Next shape the beef mixture into 4 patties. Heat canola oil in a pan on medium high. Sear patties for 2 minutes each side until they develop a nice crust. Reduce heat to medium-low and cook for an additional 3 minutes per side. Top each patty with a slice of mozzarella cheese and melt.
  • 4. To make the chipotle sauce, blend the mayonnaise, chipotle peppers, salt and pepper. Slather the sauce on a bun, top with burger patty, bacon, pineapple, lettuce, tomato, pickles..ENJOY!!

1 King's Hawaiian Sandwich Bun
1 (8 oz.) Angus hamburger
Shichimi aioli (recipe below)
Teriyaki sauce to baste
1 slice American cheese
2 oz. thinly sliced Vidalia onion
2 slices tomato
1 slice pineapple
1 leaf lettuce
pickles and olives to garnish

Steps:

  • Place hamburger patty on grill to desired doneness. Toast King's Hawaiian Sandwich Bun on grill. Toast cored pineapple slice on grill. To assemble burger, spread shichimi aioli on each slice of roll; between buns, place hamburger, which has been brushed with teriyaki sauce, then add cheese, tomato slices, lettuce pineapple, and onion. Serve with pickles and olives. Shichimi Aioli 2 tbsp. mayonnaise 1/4 tsp. shichimi togarashi (Japanese red pepper condiment, available in Asian grocery stores)

1/2 lb ground chuck
1 lb ground turkey
1/2 c teriyaki sauce
1 small can(s) pineapple slice or I use fresh pineapple
1 small bags of onion rings cooked
spinach, fresh for topping the bun
4 slice swiss cheese
8 slice cooked applewood bacon
FOR THE MAYO SAUCE
1 c mayonnaise
1 tsp celery seeds
2 Tbsp pineapple juice
1 Tbsp ketchup
1/2 tsp jalapeƱo peppers
MIX THOSE 5 INGREDIENTS TOGETHER AND PLACE IN REFRIGERATOR

Steps:

  • 1. For grilled pineapple drain pineapple juice in a bowl, add teriyaki sauce and mix, place pineapple slices and 3 tablespoons of pineapple teriyaki mixture in a resealable bag. Coat and set aside.
  • 2. Shape burger patties into 4 patties and spoon remaining pineapple teriyaki sauce over top. Preheat grill. Butter buns.
  • 3. Place burger on hot grill and grill until done. Then place pineapples on hot grill and grill on both side are slightly brown, and warm through. Assemble burger and enjoy.

1 clove garlic, minced
1 teaspoon steak spice
Big pinch Greek oregano
Big pinch hot chile flakes
Big pinch sea salt
Freshly ground black pepper
1 pound fresh ground organic chuck
2 to 3 tablespoons canola oil
8 slices Applewood smoked bacon
4 fresh pineapple slices, 1/2-inch thick
1/4 cup unsalted butter, melted
1/4 cup brown sugar
4 slices mozzarella cheese
4 brioche buns or challah bread, toasted and cut in half
Boston lettuce
2 ripe tomatoes, sliced into rounds
8 pickle slices
1/3 cup prepared mayonnaise
2 chipotle peppers in adobo sauce
Pinch sea salt
Freshly ground black pepper

Steps:

  • To make the burger patty: In a bowl, mix the egg, chives, parsley, garlic, steak spice, Greek oregano, chile flakes, sea salt, and pepper. Add the beef and squish together for 30 seconds to season the beef, don't over mix, cover and refrigerate.
  • To prepare the toppings: Heat a big pan over medium heat and line up the bacon slices. Cook until golden and crispy. Drain.
  • Heat the broiler. Line a baking sheet with parchment paper. Brush both sides of the pineapple with butter and lightly sprinkle with brown sugar. Place on baking sheet and broil until caramelized, about 5 minutes.
  • Shape beef into 4 wide 1-inch thick patties. Heat the canola oil in a pan on medium-high. Sear patties for 2 minutes on each side, until they develop a nice crust. Reduce the heat to medium-low and cook for an additional 3 minutes per side. Top each patty with a slice of mozzarella cheese and melt.
  • To make the mayonnaise: In a food processor, blend together the mayonnaise, chipotle peppers, salt, and pepper.
  • Slather the chipotle-mayo on toasted brioche buns. Top with lettuce, tomato, pickles, burger patty with melted cheese, bacon, and a slice of caramelized pineapple.

2 teaspoons canola oil
2 slices bacon, applewood smoked, cut in half crosswise (optional)
1 medium onion, sliced into 3/8-inch rings
4 ounces mushrooms, sliced white button or crimini
1 (8 ounce) can pineapple slices in juice (reserve juice)
1 (9 ounce) package veggie burgers, such as Morningstar brand
4 (2 ounce) whole wheat hamburger buns, toasted
4 slices reduced-fat swiss cheese
4 tablespoons barbecue sauce (Sweet Baby Ray's Original)
1 medium tomatoes, sliced
4 leaves lettuce

Steps:

  • Heat a cast iron skillet. When hot, add oil, swirl to coat bottom.
  • Add bacon, cook over medium heat until almost crisp. Remove to a paper towel lined plate; keep warm.
  • Pour off all but 2 teaspoons oil.
  • Add onion rings to the skillet, toss to coat with oil. Reduce heat and cook until limp. Add, in its own little pile, to plate with bacon.
  • Add mushrooms to skillet, toss to coat with oil. Cook until well browned, then salt to taste. When tender, add to bacon and onions, in its own little pile on the plate and keep warm.
  • Increase heat, add pineapple slices to the skillet. Cook until slightly charred, turning to brown both sides. Add to the plate and keep warm.
  • Add veggie burgers to the skillet. Cook until browned, basting occasionally with reserved pineapple juice. Turn and brown other side, basting with pineapple juice. Make sure they are cooked through (see package for temperature, most will say 160F).
  • Top burgers with cheese; cover pan briefly to melt cheese.
  • Serve burgers on buns with barbeque sauce, a bacon slice, a pineapple slice, tomato, lettuce, onions and mushrooms.
  • Open wide!

Last week I was brainstorming new ideas for chicken recipes and I had put together this fantastic idea for a Hawaiian inspired chicken. I have a friend Drex from Hawaii and I was really missing him. I start with a perfectly grilled beef burger with Asian / Hawaiian flavors. Glaze that with a pineapple teriyaki glaze. Then I top it with mild and creamy Swiss cheese, grilled pineapple, red onion slices and brown sugar ham. This is like Hawaii heaven on a plate. Yes, I admit it. I ate the whole thing. I couldn't help myself. Truth be told if I had a second stomach, I would have eaten 2.

2 teaspoon(s) garlic powder
4 teaspoon(s) low sodium soy sauce
2 teaspoon(s) salt

Steps:

  • Preheat grill to medium-high.
  • Mix pineapple juice and teriyaki sauce together. Set aside.
  • Mix beef, ginger, garlic, salt and soy sauce in a small bowl.
  • Divide into 8 patties and form into patties slightly larger than your bun.
  • Make a slight indentation in the center of the burger to prevent it from doming up in the center.
  • The indentation will rise as your burger cooks.
  • Grill until golden brown and slightly charred (about 3-5 minutes), turning once (cook for 3 minutes on the other side for medium).
  • Baste with pineapple teriyaki sauce as your burger cooks.
  • Try not to press down on your burger with a spatula. It will cause the juices to escape and will create a dry burger!
  • Grill pineapple slices until pineapple have golden brown grill marks on both sides.
  • Toast hamburger buns by placing on grill until grill marks form.
  • Do not walk away during this process. Toast can turn to ash in the blink of an eye.
  • Spread mayo on bottom bun.
  • Top with lettuce, burger, Swiss cheese, grilled pineapple, red onion and ham.

4 wedges laughing cow creamy swiss cheese
1/4 c crushed pineapple
3 Tbsp crumbled bacon
1 lb extra lean ground beef

Steps:

  • 1. mix everything together except the ground beef
  • 2. form beef into 4 patties
  • 3. place a heaping table spoonfull of cheese mix onto half of the patties and top with the remaing ones
  • 4. grill...i used my George Foreman grill. Delicious!! Enjoy :)
