SPICED FRENCH TOAST



Spiced French Toast image

Apple pie spice adds an autumnal note to this otherwise classic French Toast.

Number Of Ingredients 7

1/4 cup sugar
2 teaspoons apple pie spice
1 cup milk
3 large eggs
4 tablespoons unsalted butter, plus more for serving
8 thick slices white bread, such as Texas toast
[For Serving:] Warm maple syrup

Steps:

  • Put a wire rack over a rimmed baking sheet and put in the oven. Preheat the oven to 200 degrees F.
  • Mix the sugar and apple pie spice in a small bowl and set aside. Whisk the milk and eggs together in a large shallow dish.
  • Heat 1 tablespoon butter a large skillet over medium heat. Briefly dip 2 slices of bread into the egg mixture and place in the skillet. Sprinkle some of the spiced sugar on top and cook, flipping once, until browned on both sides and cooked through, 3 to 4 minutes per side. Transfer to the warm baking sheet in the oven and continue to make French toast with the remaining butter, bread, egg mixture and spiced sugar. Serve with butter and warm maple syrup.

Steps:

  • Dissolve sugar and arrowroot in water. Add coconut milk and cook on low heat, stirring constantly until thick and shiny, about 20-25 minutes. Pour into a greased 8-inch square pan and let cool at room temperature until firm. When cool, serve right away or chill in fridge. Before serving, slice into squares.

16 ounces cornstarch
2 (16-ounce) cans coconut milk
1 cup sugar

Steps:

  • Mix 2 cups the water with the cornstarch in a medium bowl and set aside. In a medium saucepan add the coconut milk, sugar and remaining water. Bring to a rolling boil over high heat. Pour the cornstarch mixture into the boiling coconut milk and cook until the mixture thickens, blending with a whip. When the mixture is smooth and thick, pour it into a clean baking tray. Cool to room temperature, and then refrigerate until cold. Cut into 1-inch squares and serve on ti leaf lined trays.

1 cup cake flour
1 teaspoon baking powder
2 eggs plus 2 yolks
1 cup sugar
1/2 cup water
2 tablespoon unsalted butter
4 cups unsweetened coconut milk
2 cups water
1 cup sugar
1/2 cup cornstarch
1 tablespoon shredded coconut, for garnish

Steps:

  • Preheat oven to 350 degrees and grease a 9-inch round cake pan. To prepare the sponge cake, sift the flour and baking powder into a small mixing bowl. Using an electric mixer, beat the eggs and yolks at high speed for about 4 minutes, or until thick. Gradually add the sugar to the eggs and beat at medium speed for 4 to 5 minutes, until light and fluffy. Add the flour mixture to the eggs and beat at medium-low speed until just combined. Put the water and butter in a saucepan and stir over medium heat until the butter melts. Add to the batter and beat until combined.
  • Pour the batter into the prepared baking pan. Bake in the oven for 20 to 25 minutes, or until an inserted toothpick comes out clean. Let the cake cool in the pan briefly, then remove and cool on a wire rack. Cover with plastic wrap or foil and place in the freezer, preferably overnight.
  • To prepare the haupia, place the coconut milk, 1 cup of the water, and the sugar in a saucepan and bring to a boil. Mix the cornstarch and the remaining 1 cup of water together in a bowl, add to the pan, and stir until the mixture return to a boil and thickens. Remove from the heat and keep warm in a double boiler.
  • Remove the sponge cake from the freezer and cut a thin slice off the top to level off the cake. Slice the cake in half horizontally to make 2 even layers. Pour some of the haupia over the bottom layer, to a thickness of about 1/2-inch. Place the top layer of cake over the haupia, gently pressing down. Pour more of the haupia over the top of the cake using a spatula to spread it around evenly. Any remaining haupia can be spread over the sides with a spatula (or chill it in a small shallow pan, cut it into squares, and serve with the cake -- or eat it before your company arrives!). Refrigerate the cake for 3 to 4 hours. When ready to serve, garnish with the shredded coconut.

1 1/4 cups cornstarch
1 cup water

Steps:

  • In a large pot bring the coconut milk, water, sugar and butter to a boil. In a bowl whisk together cornstarch and water. When the coconut milk mixture comes to a boil, whisk in the starch mixture. Whisk until smooth; cook on low heat until it boils. Pour immediately into a 2-inch hotel pan. Chill overnight. Cut into squares before serving.

1 vanilla bean, preferably Tahitian, cut in half lengthwise
1 cup Cointreau or Curacao
1 teaspoon ground mace
1 teaspoon ground cinnamon
Zest of 1 orange
12 ounces fresh foie gras, cleaned and cut in half
5 eggs, beaten
2 cups half and half
12 slices slightly sliced stale broiche, cut into triangles 1/3 inch thick
1/4 cup clarified butter
1 recipe Citrus-Savory Caramel Sauce (recipe follows)

Steps:

  • Scrape the seeds from the vanilla bean. Add half of the scrapped beans to a mixing bowl with the liquor. Add 1/2 teaspoon ground mace, 1/2 teaspoon ground cinnamon, and orange zest, and whisk together. Put the foie gras into the marinade and cover with plastic wrap. Slosh the marinade around a little and keep refrigerated. Add the remaining vanilla bean seeds in a mixing bowl, and add the eggs and half and half. Add the remaining mace and cinnamon and beat the mixture together. Soak the brioche slices in the egg mixture and allow them to absorb the flavor. Soaking time will depend on the freshness of the brioche; the softer it is, the shorter the soaking (sometimes 1 minute is sufficient). Keep covered in the refrigerator until ready to complete the dish. Preheat the oven to 300 degrees. Remove the foie gras from the marinade and cut the slices about 1/4-inch to 1/3-inch thick. Reserve on a chilled plate and discard almost all of the marinade. Remove the brioche from the egg wash and lay the slices on a plate. Heat the clarified butter in a nonstick skillet, add the bread, and cook over medium heat until golden on both sides. Transfer to a plate and keep warm in the oven. Reheat the caramel sauce and place 2 tablespoons on each of 4 warm serving plates. Heat a nonstick skillet or pan and when hot, sear the foie gras slices over high heat for 15 seconds on each side until seared and very dark. Place the foie gras on the brioche in layers: a slice of brioche on the bottom, a slice of foie gras, then brioche, another layer of foie gras, and topped with brioche. Serve with mixed tropical fruits and orange segments, if desired.
