- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan. In a medium bowl, mix flour, soda, salt, 3/4 teaspoon nutmeg, ginger and cloves. Set aside.

This is a cake that my mother-in-law makes. It is a really nice fall cake that is similar to spice cake or carrot cake but this cake has pumpkin and apples. It is really good topped with cream cheese icing.

- 1. Preheat oven to 350 degrees. Use flour and oil spray to coat the inside of a 9" round baking pan with 2" sides. FOR THE BATTER: 2. Sift the flour, baking powder, salt, cinnamon and nutmeg on a sheet of wax paper. 3. Place the butter in a bowl of a stand mixer or hand-held electric mixer. Beat on medium speed until smooth, about 2 minutes. Add the cream cheese and beat for 1 to 2 minutes; scrape down the sides of the bowl. On moderately high speed, blend in the sugar in 3 additions, beating for 45 seconds after each addition, stopping to scrape down the sides of the bowl as needed. 4. Add the eggs one at a time, beating after each addition for 30 seconds or until just incorporated. Add the egg yolk and vanilla extract, beating. This is an almost healthy cake that has loads of veggies (carrots, parsnip, zucchini), some whole wheat flour, no oil, and is still deliciously moist and sweet. Kids will eat this without complaint! Divide batter evenly among muffin cups. Bake as directed on box for cupcakes. Cool 10 minutes in pans; remove from pans to cooling rack. Cool completely, about 30 minutes.
- Stir 1/4 teaspoon nutmeg into each container of frosting. Fill and frost cake layers with frosting, placing 9-inch layer on bottom. Remove paper baking cups from 9 cupcakes. HARVEST CAKE

- Arrange oven racks to divide oven into thirds. Preheat oven to 400° F Grease two 9in x 2in cake pans, dust with a spoonful of flour and tap out. Line each with a round of parchment paper. Sift together flour, baking powder, baking soda, cinnamon and salt into a bowl. In another bowl, stir together carrots, zucchini, beets, nuts, and raisins. In a large mixing bowl, beat maple syrup and oil together until emulsified. Add eggs one at a time, beating until batter is smooth. Add flour mixture in three or four batches, mixing gently until mixture is even. Gently mix in the vegetable mixture. Divide between baking pans. Place one baking pan in center of each of the racks. Bake 25-35 minutes, until a skewer or paring knife inserted into centers comes out clear and cakes are pulling away from the sides of pans. Cool on a rack about 5 minutes, then gently remove from pans. Cool to room temperature before frosting. To make frosting: Using an electric mixer or a wooden spoon and a strong arm, beat goat cheese and cream cheese together until light and fluffy. Add powdered sugar and beat at low speed until well blended. Beat in maple syrup. Chill about 30 minutes, until firm. To assemble: Following our instructions on how to frost a layer cake, cut four strips of parchment or wax paper to line cake plate under the cake's edges. Place first cake layer on plate. If it has a peaked top, carefully shave it off using a bread knife or sharp slicing knife. Using an off-set spatula or table knife, spread with frosting, pushing it to edges. Place second layer, top down, squarely on first layer. Spread a thin layer of frosting over entire cake to eliminate crumbs. Frost with remaining frosting. - Preheat oven to 325̊ F. Lightly coat a 12-inch Bundt Pan with nonstick cooking spray. In a large bowl combine the flour, the ginger, 2 teaspoons cinnamon, the cloves, 1/4 teaspoon nutmeg, the baking powder and the salt. Whisk to blend. Set aside. Cream the butter and the granulated sugar, at a medium speed, until light and fluffy, about 3 - 4 minutes. Add the eggs, one-at-a-time, beating well after each addition. At a low speed, beat in the pumpkin and 1 teaspoon vanilla until well blended. Gradually add the flour mixture, beating until just incorporated. Spoon batter into prepared pan. Bake until top of cake is light brown and a tester inserted into the center of the cake comes out clean, about 80 - 90 minutes. Remove from oven and set pan on a rack for 20 minutes. Invert cake on a wire rack and cool completely. For the glaze. In a medium bowl combine 2 Tablespoons butter, the cream cheese, 1 teaspoon vanilla, 1/2 teaspoon cinnamon and 1/ 4 teaspoon nutmeg. Beat at a low speed until well blended, about 1 - 2 minutes. Gradually add powdered sugar, beating until smooth. Beat in eggnog until desired consistency. Pour or spoon glaze over top of cooled cake. Sprinkle with cranberries. Let set until glaze is set, about 15 - 20 minutes. Slice and serve.

- Combine and whisk all cake ingredients BUT flour and cocoa powder.
- Add flour and cocoa powder and whisk until even.
- Spread evenly into the two pans.
- Bake for 30-35 minutes until top springs back or toothpick comes out clean.
- Let cool.
- In a medium bowl, whisk together Pumpkin Cream Filling ingredients. (Make sure cream cheese is soft enough so you don't end up with cream cheese chunks!).
- Spread Pumpkin Filling on top of one cake and top it with the other.
- Boil whipping cream over medium-high heat.
- Remove from heat and add chocolate, DO NOT stir.
- Wait 5 minutes until chocolate is melty, then stir until smooth and chocolate is liquid.
- Wait until glaze has thickened (10 minutes) and then pour over top of cake.
- Refrigerate cake or let set until glaze is fairly solid (15-30 min).
- OPTIONAL: top with seasonal berries or nuts.
