1 cup butter, softened
1/2 cup packed brown sugar
2-1/4 cups all-purpose flour

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Gradually stir in flour and mix well. Turn onto a lightly floured surface and knead until smooth, about 3 minutes. Pat into a 1/3-in.-thick rectangle measuring 11 in. x 8 in. , Cut into 2-in. x 1-in. strips. Place 1 in. apart on ungreased baking sheets. Prick with a fork. , Bake at 300° for 25 minutes or until bottoms are lightly browned. Cool for 5 minutes before removing from pan to a wire rack.

I grew up eating these. This is a recipe originally from an old Nestle cookbook that my mom adapted to suit us.

Number Of Ingredients 9

1 cup butter, softened
1 cup brown sugar, firmly packed
2 teaspoons vanilla
2 eggs
1 cup flour, sifted
1 cup oatmeal
1 cup semi-sweet chocolate chips
1 teaspoon shortening
1/2 cup walnuts, finely chopped

Steps:

  • Combine butter, brown sugar, and vanilla and beat until creamy.
  • Beat in the eggs.
  • Add the flour and oatmeal.
  • Spread in a greased 9x13 pan.
  • Bake at 350F for 20 minutes.
  • Cool slightly.
  • Combine chocolate chips and shortening and melt in a double boiler or carefully in a saucepan.
  • Spread over baked mixture.
  • Sprinkle with chopped nuts.

5 1/2 ounces all-purpose flour (about 1 1/4 cups)
3 tablespoons cornstarch
1/4 teaspoon salt
1/2 cup packed light brown sugar
7 tablespoons butter, softened
1 1/2 teaspoons ice water
cooking spray

Steps:

  • 1. Weigh or lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, cornstarch, and salt in a small bowl; stir with a whisk.
  • 2. Place brown sugar and butter in a medium bowl; mix with hands until combined. Add flour mixture, and mix with hands until combined. Sprinkle dough with 1 1/2 teaspoons ice water; knead dough lightly 4 times or just until smooth. Wrap in plastic wrap; refrigerate 30 minutes.
  • 3. Preheat oven to 325°.
  • 4. Place dough on a baking sheet coated with cooking spray; press dough into an 8 x 5-inch rectangle about 3/8-inch thick. Pierce entire surface liberally with a fork. Bake at 325° for 25 minutes or just until set and edges are golden. Cut shortbread into 24 pieces. Cool completely.

1 cup packed brown sugar
1 egg, slightly beaten
2/3 cup flour
1 teaspoon baking powder
1/2 teaspoon salt

1/2 chopped pecans
powdered sugar

  • Preheat oven to 350 degrees.
  • Grease and flour an 8" baking pan.
  • Sir together butter and brown sugar.

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).

This is a great bar cookie. I have been making this since I was in high school (can you say that 70's show) and it always comes out great. I know my mom gave me the recipe but I have no idea where it came from. To be honest it probably came from the newspaper she was always clipping recipes. You are gonna love these & the nice thing is you can change the flavor by changing the jam, we also use apricot.

1 1/4 cups flour
1/2 cup butter (real butter no substitutes)
1/2 cup sugar
1/2 cup raspberry jam (your choice of seeds or not)
1/3 cup brown sugar, firmly packed
2 eggs
1 teaspoon vanilla
3 tablespoons flour
1/8 teaspoon salt
1 cup chopped walnuts

Steps:

  • 1.To make the crust: In a medium bowl, combine flour and sugar, cut in butter with a pastry blender until crumbly. Press mixture on bottom of a greased 9-inch-square baking pan.
  • Bake in a preheated 350 oven for 18-20 minutes or until edges are lightly golden brown, take out of the oven & cool slightly, while preparing the topping.
  • 2.In a small mixing bowl, combine brown sugar, eggs and vanilla. Beat at medium speed until well mixed-1 to 2 minutes. Stir in 3 tablespoons flour and salt until well mixed. Stir in walnuts.
  • 3. Next spread the jam over the bottom crust and sprinkle the topping over the jam trying to cover as much as possible, you may have to pat it down gently.
  • 4. Put pan back in the oven and continue baking 20-24 minutes or until golden brown and filling is set.
  • 5. Cool Completely and cut into bars.
  • The cooking time will vary as oven do so watch until the top turns golden brown.
