This was just served at our church's "Mother's Day Luncheon to rave reviews. Can be prepared ahead, then baked just before serving.

- Arrange chicken in greased casserole dish. Top each chicken breast with cheese slice.

- Lightly spray crock-pot with cooking spray.
- Place chicken breasts in bottom of crock-pot.
- Top with cheese.
- Combine soup and milk, stirring well.
- Spoon soup mixture over cheese; sprinkle with stuffing mix.
- Drizzle melted butter over stuffing mix.
- Cook on high 4 to 6 hours.

Steps:
- Lightly butter a baking dish, set aside.
- Melt 2 tbls. butter with oil in a 12" heavy skillet. Add the chicken; cook until the juices run clear when pricked with a fork, about 3-5 minutes on each side(don't overcook!). Remove chicken, set aside.
- Melt 2 tbls. butter in the same skillet. Add mushrooms and cook over medium high heat until tender, about 5-8 minutes. Set asie.
- Arrange the cooked broccoli in a single layer in the bottom of the buttered baking dish.
- Season the chicken with some lemon pepper seasoning(to taste), and arrange in single layer over broccoli.
- Preheat broiler.
- Melt remaining 2 tbls. butter in a 1 quart saucepan. Whisk in flour; cook over low heat, stirring constantly, about 3 minutes. Pour in chicken stock and wine, whisking until completely blended. Continue cooking and stirring until the sauce thickens enough to coat a spoon. Add 1 1/2 cups Swiss cheese, stirring until melted. Taste and season with salt and pepper.
- Pour sauce over chicken; arrange mushrooms on top. Sprinkle additional cheese over dish to garnish.
- Broil about 6" from heat source until the top is bubbly and golden.
- Serve immediately. Enjoy!

- Flatten chicken to 1/4-in. thickness. In a shallow bowl, lightly beat the egg. Combine cracker crumbs and salt and pepper in another shallow bowl. Dip chicken in egg, then roll in crumbs; set aside.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Arrange chicken breasts in the baking dish. Place one slice of Swiss cheese on top of each chicken breast. Combine cream of chicken soup and milk in a medium bowl, and pour over chicken breasts. Sprinkle with stuffing mix. Pour melted butter over top, and cover with foil.

ROMERTOPF SWISS CHICKEN WITH MUSHROOMS
This recipe comes from my original Romertopf cookbook and goes wonderful with rice and a green salad. A hearty meal that's ready in less than an hour.

- Pre-soak claypot, top and bottom, in water for 15 minutes.
- In a large plastic bag place flour, paprika, oregano, basil, garlic powder, and onion powder. Seal and shake to combine. Add chicken to the bag and shake to coat the pieces.
- In a large skillet over medium-high heat add the olive oil and quickly brown the chicken (reserve the excess flour coating mixture), turning only once.
- Arrange the browned chicken in the claypot, top with salt, pepper, green onions, and mushrooms.
- Add the wine to the frying pan drippings and simmer for 1 minute. Add to the skillet 1 cup of the sour cream and gently heat until thickened, stirring constantly. Pour sauce evenly over the chicken in the claypot. Sprinkle with Swiss cheese and cover with the lid.
- Place claypot in a cold oven and turn heat to 475°F Bake for 45 minutes, depending on chicken, checking for doneness after 30 minutes.
- Remove chicken and vegetables to a platter and tent with foil. Pour juices from the claypot into a saucepan over medium heat. Whisk 1 tablespoon of the flour mixture into the remaining 1 cup of sour cream and stir into the pan juices, heating until thickened.
- Can be served over mash potatoes, rice or noodles.

I combined various recipes for this dish I have found over the years. This is has been the "crowd-pleaser". It's a simple and absolutely delicious baked dish! Everyone will love it!

Steps:
- Lightly grease a 13x9 baking dish and place chicken breasts in dish.
- Season chicken with garlic powder, salt and pepper and italian seasoning (optional).
- Top each chicken breast with 1 or 2 slices of cheese (however you'd like it).
- In a seperate bowl, combine mushroom soup and milk, stir until lumps are gone. Pour over chicken.
- Top with stuffing mix and drizzle melted butter all over.
- Cover. Bake for 45-50 mins @ 350.
- Remove cover, continue to bake for 5-10 minutes to crisp the stuffing.
AUSSIE SWISS CHICKEN
This is from the Australian Women's Weekely New Cookbook (which is now VERY old). September 09. I had this at a friend's place last week and she used prosciutto instead of regular ham-a really good substitution I'll be trying soon myself.

Steps:
- Dust chicken breasts with the seasoned flour.
- Heat the butter in frying pan; add crushed garlic and chicken; saute gently until chicken is lightly golden brown.
- Add wine; bring to the boil.
- Reduce heat; simmer covered 20 minutes or until chicken is tender; remove chicken from the pan.
- Trim ham and cheese to approximately same size as chicken.
- Put a slice of ham on each chicken fillet, then top with cheese.
- Put on a heatproof serving dish.
- Cook in a moderate oven, uncovered, for 10 minutes or until the cheese has melted.
- While chicken is in oven, bring liquid to the boil; boil uncovered until approximately a half a cup of liquid remains in pan.
- Reduce heat, add cream, chopped shallots and mustard; stir until combined.
- Season with salt and pepper.
- Pour sauce over chicken.
