GREEN EGGS AND HAM PIZZA

1 22-ounce bag refrigerated pizza dough, at room temperature
1 8-ounce ball fresh mozzarella
1 7-ounce ham steak
5 tablespoons pesto
4 large eggs
Grated Parmesan cheese, for topping

Steps:

  • Preheat the oven to 450˚ F. Line 2 baking sheets with parchment paper. Divide the pizza dough into 4 pieces and roll each into a ball. Gently stretch each ball of dough into an 8-inch round, leaving a thicker crust around the edge; transfer to the prepared baking sheets. Prick the center of each dough round with a fork. Bake until lightly golden, about 10 minutes.
  • Meanwhile, thinly slice the mozzarella and dice the ham.
  • Brush the crusts with 2 tablespoons pesto, leaving a 1/2-inch border; top with the mozzarella and ham. Crack 1 egg on top of each pizza and return to the oven until the crust is browned and the egg whites are set but the yolks are still runny, 12 to 14 minutes. Top with the remaining 3 tablespoons pesto and sprinkle with Parmesan.

I like to fix this fun dish when we invite our children and grandchildren for brunch. There's never a slice left! The recipe is quick and easy to prepare, using refrigerated crescent rolls to form the crust. The ham makes it hearty.

1 (8 ounce) package refrigerated crescent rolls
3 large eggs eggs
2 tablespoons milk
⅛ teaspoon pepper
2 cups finely chopped fully cooked ham
1 cup frozen shredded hash brown potatoes
1 cup shredded Cheddar cheese
½ cup shredded Parmesan cheese

Steps:

  • Unroll crescent roll dough and place on an ungreased 12-in. pizza pan. Press onto the bottom and 1/4 in. up the sides, sealing seams and perforations. Bake at 375 degrees F for 5 minutes.
  • Meanwhile, in a bowl, beat eggs, milk and pepper. Sprinkle ham, hash browns and cheddar cheese over crust. Carefully pour egg mixture over cheese. Sprinkle with Parmesan. Bake for 25-30 minutes or until eggs are completely set.

This recipe will make two pizzas. I came up with it by accident by throwing a bunch of ingredients together. We make it on the weekends at the lake for breakfast/brunch. You can modify toppings. I usually make one sausage and one bacon. Each pizza will serve 3 to 4 people.

1 pound ground sausage
2 (12 inch) prepared pizza crusts
12 eggs
¾ cup milk
salt and pepper to taste
1 (10.75 ounce) can condensed cream of celery soup
1 (3 ounce) can bacon bits
1 small onion, minced
1 small green bell pepper, chopped
4 cups shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
  • Place pizza crusts upside down on cookie sheets and bake for 5 to 7 minutes. Do not allow to brown.
  • Beat eggs, milk, salt and pepper. Scramble eggs until firm.
  • Remove crusts from oven, turn right side up, spread 1/2 can of cream of celery soup on top of each crust. Spread 1/2 of egg mixture on each crust. Sprinkle bacon bits on one pizza and cooked sausage on the other. Cover each with onions and peppers. Top each pizza with 2 cups of cheese.
  • Bake in preheated oven, for 25 to 30 minutes, until cheese is golden brown.

This is from Rachael Ray's 30 minute meals for kids. My son and I made these this morning for breakfast with a few changed to make individual sized pizzas. They are fun to make together and make for a pretty good meal.

4 eggs
salt and pepper
1 tablespoon milk (optional) or 1 tablespoon water (optional)
10 ounces refrigerated pizza dough
2 cups shredded cheddar cheese
4 ounces ham, cut into strips
1 cup diced pineapple

Steps:

  • Preheat oven to 400 degrees.
  • Beat eggs with salt and pepper and milk or water if using. Heat a non-stick skillet over medium heat. Add eggs and cook stirring constantly until still just a bit wet. Remove from heat.
  • Divide pizza crust into 4 equal parts and place on a non-stick cookie sheet. Top each with equal parts egg, cheese, ham, and pineapple.
  • Bake for 10 to 12 minutes or until crust has browned and is crisp and cheese has melted.
