My mom got this from her dear friend who always made this dip at her Christmas parties. By far the best Rotel dip out there!

- Brown hamburger meat with chopped onion.
- Brown breakfast sausage.
- Place hamburger and sausage in crock pot.
- Place rest of ingredients in crock pot.
- Turn on high until cheese is melted.
- Turn back to low and serve.
- Be sure to stir occasionally.
- I estimated the cook time two hours.
HAMBURGER SAUSAGE
Here's a great recipe for crackers to use at Christmas. I've made this several ways, instead of just hamburger I've used a combination of ground deer and ground beef or ground moose and beef. You could probably use any combination of meat but I suggest adding a non-lean ground meat such as beef or pork because you don't want it to be too dry. I have cooked this on the second day and it's pretty much the same as the fourth day but you should let it sit for a minimum of 24 hours with at least one good mix during that time.

- 1. In a large skillet, brown hamburger, sausage, onion, and garlic over a medium heat.
- 2. Season to taste with oregano, salt, and pepper; drain excess fat.
- 3. Meanwhile, steam the broccoli until tender yet still a little crisp; season with salt and pepper.
- 4. Place cream cheese in a microwaveable bowl and microwave on HIGH for about 45 seconds, until soft. Whisk until creamy and smooth.
- 5. Gradually whisk in the cream until smooth; stir in the Parmesan cheese.
- 6. Combine hamburger, broccoli and cream sauce in a large greased casserole dish (2 ½ quart or larger). Taste test and add additional salt, and pepper if desired.
- 7. Top with shredded cheese.
- 8. Bake at 350º for about 35-45 minutes, until bubbly around edges.
SAUSAGE 'N HAMBURGER ROUNDS
These are delicious! I have served them several times at pot lucks and friends' get togethers. They are so easy to make and so convenient to constantly have on hand. Yummy.

- Line cookie sheets with wax paper or parchment paper.
- Spread party rye slices onto the lined cookie sheets (Makes approximately 60 pieces).
- Brown Ground Beef and Pork Sausage together.
- While browning meat, cut up velveeta into chunks.
- Drain grease thoroughly from meat mixture.
- Add all other ingredients to the meat mixture and cook until the cheese melts, stirring as it cooks.
- Remove from heat and drop mixture by spoonfuls onto the party rye slices.
- Place cookie sheets into freezer and freeze the party rye rounds.
- When frozen, remove from cookie sheets and slide into plastic bags returning to the freezer for later use.
- When ready to use, take desired amount from the bag and place on cookie sheet under the broiler until brown and bubbly.
- (Few minutes).
- Enjoy.

- Spray the inside of a stockpot, with a no-stick cooking spray.
- To the pot, add the sausage, and season it with a bit of black pepper, if desired. (Do not add salt to this recipe!).
- Brown the sausage over medium heat; stirring to break up the meat.
- While the sausage is browning, cook the frozen green beans in a microwave, till they are about three quarters of the way done; drain beans and set them aside. (I cooked the beans in an 850 watt microwave for 6 minutes, but stirring them after 3 minutes I also season the beans with a bit of black pepper).
- When sausage is done browning, then drain it in a colander.
- To the stockpot, lightly saute' the onions for a minute or two. (Add a bit of vegetable oil if need be).
- Add garlic to the pot, and saute' the garlic for about 1 minute.
- Place sausage back into the pot, then sprinkle the seasoning packet from the hamburger helper over all, and stir to coat the meat.
- To the pot add the following ingredients: the beef broth, one and a half soup cans of water, the stewed tomatoes, sliced baby carrots, zucchini, green beans, the Italian seasoning, and the rotini pasta that's included in the boxed hamburger helper.
- Bring soup to a boil, then lower the heat, and simmer the soup for about 14 minutes.
- Remove soup from heat, stir the soup, and serve.
- If desired, sprinkle each bowl of soup with a bit of the parmesan cheese.
- Note: I noticed after cooking the soup, the carrots seemed to be slightly crisp. For those who'd prefer them to be a bit more cooked, I would do the following after adding the cooked meat, the seasoning packet, onion, garlic, broth, water, and just the carrots to the stockpot. Bring those ingredients to a boil, then lower the heat, and simmer it for 5 minutes. Then add the remaining ingredients, (the stewed tomatoes, zucchini, green beans and Italian seasoning) and bring the soup to a boil, then reduce the heat, and simmer the soup for about 14 minutes.

This is a recipe that I have tweeked up a bit from my mom's. It makes for a flavorful explosion. This recipe is set for a large family , dinner party or just really good eaters, but you can always warm left overs or cut it down to your needs. This is a multi-task recipe but well worth the work. The prep and cook time does not include cooling time.

- Cook noodles until tender but not well done. Drain and rinse to help prevent from sticking together. Meanwhile, cook ground italian sausage in a large, deep skillet or pan until no longer pink. Rope or link style italian sausage is okay, just cut the casing off before cooking. Add the ground beef to the skillet. Cook untill all meat is starting to brown. Also meanwhile, combine the cheeses and parsley in a large bowl. Mix well.
- Use a large baking pan (I use a 13" wide x 18" long x 3" deep) Spread a layer of sauce across the bottom of the pan, slightly more than just enough to cover the entire surface. Place a layer of noodles on top of the sauce, overlapping the edges just a bit. Spoon some of the cheese mixture (about 1/4) on top of the noodles (in even globs). Sprinkle with 1/4 of the meat mixture. Spoon some sauce on top. Then another layer noodle -- cheese -- meat -- sauce -- noodle -- cheese -- meat -- sauce -- noodle -- cheese -- meat -- sauce. Then top with another layer of noodle and sauce spread evenly on top. Remember to slightly overlap the noodles in each layer. (You may have some left over noodles and sauce which is great to spread a little sauce on a noodle and roll up as a snack for an impatient child.)
- Cover tightly with foil. Cook in a preheated oven at 325 degrees on center rack for 1 hour. Let cool at least 20 minutes before cutting to help prevent the cheese from running. Serve with a side salad and garlic bread.
INSIDE SURPRISE HAMBURGER - SAUSAGE PATTIES
This recipe mixes hamburger and sausage together in one patty, and the combines the "fixings" along with the cheese on the inside to make 3 man-size patties.

- Prepare the seasoning mix by combining the brown sugar, paprika, kosher salt, black pepper, garlic powder, red pepper, basil, cinnamon, and thyme into a small jar. Shake well to mix.
- Finely dice the onion and jalapeno.
- In a large bowl, mix the hamburger, sausage, jalapeno, and onion until well incorporated. (Also, mix in bacon if using.).
- Separate the mixture into 3 equal size parts. Then divide each part into half. This will give you 6 parts of meat mixture.
- Shape each meat mixture portion into a hamburger patty.
- Season the top of three meat patties with the seasoning mixture. Use as much or as little as you like -- your taste determines the amount of seasoning.
- Tear your cheese into slices, and place in the middle of the three patties that you seasoned the tops of. (If using bleu cheese place in center of patty in the shape of a mound.).
- Place the remaining unseasoned patties on top of the cheese, making sure to seal the edges of the patties together so the melted cheese will not run out while grilling. It is IMPORTANT to get the patties sealed together so the cheese stays inside when melted.
- Season the top of the combined patty (remember that you already seasoned the inside patty)with the seasoning mixture.
- Allow patties to sit in the refrigerator for 30 minutes or so before grilling.
- Grill the patties until how you enjoy your hamburger cooked.

- 1. Brown your hamburger mixed in with your sausage..(I use mild sausage), until browned, drain and set aside. I then fry my bacon and drain and cool.
- 2. In a bowl mix your diced onion, can of pork and beans,(leave the juice from pork and beans) butter beans drained, kidney beans drained, brown sugar and barbeque sauce,chili powder, mustard and ketchup. Stir together. Drain a small can of stewed tomatoes and crush the tomatoes and add. (Do not leave the larger chunks). Add your hamburger, sausage and crumbled bacon and stir together. Make sure the consistency of the casserole is what you want. You don't want it to dry or too much liquid. If dry add more bbq sauce and ketchup.
- 3. Spray with oil a 9 x 13 baking dish. Bake 350 degrees for 55 minutes or until bubbly. Serves 8

- Divide the mixture into 10 equal parts.
- Mold each part around a sausage link, sealing the ends.
- Brown the meat rolls in a large skillet over medium heat.
- Remove the meat rolls.
- Pour all but 2 Tbls of the fat from the skillet.
- Stir the flour into the remaining fat.
- Cook over low heat, stirring constantly, until the mixture is thick and bubbly.
- Stir in the bouillon and water.
- Heat to boiling, stirring constantly and then reduce the heat.
- Return the meat rolls to the skillet; cover and simmer for about 15 minutes.

- Mix together and shape into 2 loaves (like meatloaf) Wrap in foil and refrigerate for 24 hours.
- Punch holes in bottom of foil with a fork.
- Put 1 cup water in bottom of broiler pan then place loaves on rack over broiler pan.
- Do not broil, just use the broiler pan because you need the sausage over the water.
- Bake 1 hour 15 minutes at 325 degrees.
