Very satisfying on a cold winter night. This soup has all the essentials, and it's quite delicious.

1 pound ground beef
2 (14.5 ounce) cans diced tomatoes
2 cups cubed potatoes
2 carrots, chopped
1 onion, chopped
4 teaspoons salt
¼ cup uncooked white rice
⅛ teaspoon ground black pepper
6 cups water

Steps:

  • In a large saucepan over medium heat, saute the ground beef for 5 minutes, or until browned. Drain the excess fat and add the tomatoes with liquid, potatoes, carrots, onion, salt, rice, black pepper and water. Bring to a boil and reduce heat to low. Simmer for 1 hour and serve.

This soup is made with 4 cups of the leftover Hamburger Spanish Rice With Bacon, a recipe that I had posted on this site. - http://www.justapinch.com/recipes/main-course/main-course-beef/hamburger-spanish-rice-with-bacon.html - After hubby and I eat a serving of the hot dish, sometimes I'll make soup with the remaining dish.

4 cups leftover hamburger spanish rice with bacon
32 ounces chicken broth
8 ounces frozen mixed vegetables
1 can (14.5 oz.) diced tomatoes
1 can (8 oz.) tomato sauce
1/4 tsp. italian seasoning
1/4 tsp. seasoned salt
1/8 tsp. black pepper

Steps:

  • 1. First, you'll need to cook the frozen mixed vegetables according to package directions. (I cook mine in the microwave along with 2 tablespoons of water for 3-4 minutes on high, then stir the vegetables, place them back in the microwave to cook for 2 more minutes, and then let them set while preparing the soup.) Note: My vegetables were cooked in a 900 watt microwave oven.
  • 2. To prepare the soup: In a large pot, add the 4 cups of leftover Spanish Rice With Bacon, along with the broth, canned diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper.
  • 3. Drain the cooked vegetables, then add them to the pot.
  • 4. Cook the soup (uncovered) over medium low heat for about 20 minutes, or until the vegetables are tender, and the soup is heated through. Be sure to stir the soup occasionally.
  • 5. Ladle the soup into bowls and serve.

1 pound ground beef
1/2 cup chopped onion
14 cups water
1 can (28 ounces) diced tomatoes, undrained
1 envelope onion soup mix
3 tablespoons Worcestershire sauce
1 tablespoon salt
1 teaspoon brown sugar
1 teaspoon celery salt
1/8 teaspoon pepper
1/2 cup uncooked long grain rice

Steps:

  • In a soup kettle or Dutch oven, cook beef and onion over medium heat until meat is no longer pink; drain. Add the water, tomatoes, soup mix, Worcestershire sauce, salt, brown sugar, celery salt and pepper; bring to a boil. Add rice. Reduce heat; cover and simmer for 20-25 minutes or until rice is tender.

Hearty Hamburger/Rice/Vegetable Soup image

This is an excellent soup for a cold Winter's evening, or for that matter, just about any old day. It's simple to put together, and probably can be done with ingredients you already have on hand. And like many soups and stews; it tastes even better when reheated the next day.

1 1/2 lb ground sirloin
6 c beef broth
2 c carrots, sliced on the bias, 1/2 inch thick
1 c coarsely chopped, yellow onion
1/5 c celery, sliced on the bias, 1/2 inch thick
1/2 c green pepper, diced
1/2 c long-grain white rice
1 tsp table salt, or to taste
1 tsp freshly ground black pepper, or to taste.
2 medium bay leaves
1/4 c catsup
28 oz canned tomatoes with juice, i prefer hunts petite diced
8 oz tomato sauce
2 Tbsp tomato paste

Steps:

  • 1. Brown the ground sirloin over medium high heat, in a large pot that will hold all the other ingredients.
  • 2. Add the tomato paste, and stir until fragrant, about 3 to 4 minutes.
  • 3. Add the beef broth, catsup, canned tomatoes, and tomato sauce, and stir until the ingredients begin to simmer.
  • 4. Add the remaining ingredients and combine.
  • 5. Bring to a boil, and then reduce to a simmer.
  • 6. Continue to simmer, uncovered, for about one hour.
  • 7. Serve immeadiatly with such sides like crackers, crispy bread, some shredded cheese, and sliced hot peppers. And maybe a glass of white wine, in front of a nice fire.
  • 8. Keep the faith, and keep cooking.

1/2 cup celery, diced
1/4 cup rice
1 (28 ounce) can stewed tomatoes
1 small bay leaf
1/2 teaspoon thyme
1/4 teaspoon basil
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 1/2 quarts water

Steps:

  • Sauté ground beef and onion until brown; drain.
  • Add other ingredients.
  • Bring to a boil.
  • Reduce heat and simmer at least 1 hour.

1 lb ground beef
2 can(s) cream of mushroom soup
3 c brown or white rice
1/2 tsp pepper
1 tsp salt
1 c cheddar cheese, shredded
1/2 small onions, vidalia, peeled and chopped

Steps:

  • 1. In a skillet add hamburger,onion,add some of the salt & pepper to taste cook till there's no pink,then drain grease off set aside.
  • 2. While the meat is cooking, in a stir cook your 2 cups of brown or white rice. ( I buy the rice that's in a cooking bag comes 4bags to a box) I use 2 of the bags all you have to do is boil it for 10 min. drain the water then cut open the 2 rice bags and pour in the same stir. Add meat,cream of mushroom soup and remaining salt & pepper to the rice.
  • 3. once all is mixed add your shredded cheddar cheese cover and let the cheese melt while you fix some side vegetables. Enjoy !
