HAM AND SHRIMP JAMBALAYA

Ham and Shrimp Jambalaya image

This delightfully different jambalaya is lighter than many of the traditional sausage varieties. Plus, it's a great way to use up leftover ham. I appreciate how easy it is to prepare, and I love the aroma while it's cooking.

CHICKEN, SHRIMP, AND HAM JAMBALAYA

Chicken, Shrimp, and Ham Jambalaya image

Adapted from a recipe in a magazine. Add more chicken, shrimp, and ham to suit your personal taste. The Pico De Gallo is optional. However, I really like the addition of this ingredient. Instead of the diced tomatoes and hot sauce, substitute a 10 ounce can of Ro*Tel Diced Tomatoes and Green Chilies. The Ro*Tel really gives it a nice kick.

HAM AND SMOKED SAUSAGE JAMBALAYA

Ham and Smoked Sausage Jambalaya image

This is one of my all-time favorite recipes, and I get asked for it a lot. Invite some family over, because this makes a lot! Tip: You'll want to prep/chop all your ingredients before you start, otherwise you'll be running around like crazy.

Provided by KissKiss

Categories     One Dish Meal

Time 1h30m

Yield 10 serving(s)

Number Of Ingredients 13

1 lb ham, cubed (about 1/2-inch pieces)
2 lbs smoked sausage, sliced (about 1/4-inch coins)
1 large sweet onion, chopped
1/2 cup green pepper, chopped
1/2 cup fresh parsley, chopped
2 celery ribs, chopped
5 garlic cloves, chopped
3 tomatoes, chopped
1 teaspoon dried thyme
2 bay leaves
salt and pepper
2 cups long-grain rice, uncooked
4 1/2 cups water

Steps:

  • In a large dutch oven with a tight cover (to be used later), brown the ham and sausage, then pour off some of the fat. Be patient with the browning, it takes a while but it's worth it.
  • Add the onion and cook until it's soft (about 3 minutes).
  • Add the green pepper, parsley, celery, garlic, tomatoes, thyme, and bay leaves. Season with salt and pepper.
  • Bring to a boil and cook/stir for about 5 minutes.
  • Add the rice and the water. Cover and allow to simmer on low heat for 25 minutes.
  • Don't uncover the pot until the end of the cooking when you check for doneness. You'll know it's done when the rice is tender and the liquid is absorbed. Fluff and serve.

Number Of Ingredients 21

1 can(s) (28 oz.) whole tomatoes with herbs and spices (such as san marzano), juice reserved
2 tablespoon(s) olive oil, or more as needed
1 cup(s) red onions, diced
1 large celery rib, diced
1 large red pepper, diced
2 large cloves garlic, pressed
2 large boneless skinless chicken breast, cubed (about 1 1/2 cups)
1 cup(s) cooked ham, cubed
1 cup(s) sausage (such as andouille, chorizo or garlic), thinly sliced and quartered
1 1/4 cup(s) uncooked rice, such as basmati
2 1/2 cup(s) liquid (amount of reserved tomato juice + chicken broth)
1/2 teaspoon(s) hot paprika
1/2 tablespoon(s) chili powder
1/8 teaspoon(s) cayenne pepper, or more to taste if you want "hotter"
2 teaspoon(s) worcestershire sauce
1/2 teaspoon(s) ground thyme
1/2 teaspoon(s) dried basil
1/2 teaspoon(s) gumbo file
1 teaspoon(s) hot sauce, such as cholula®
1/2 teaspoon(s) raw sugar (substitute brown sugar)
10-15 large pickled jalapeño peppers, quartered

Steps:

  • In a medium bowl, add tomatoes without the juice (reserved) and crush with hands. Using a slotted spoon, scoop the tomatoes in another bowl and reserve this juice as well; set aside.
  • In a large saucepan over medium, heat oil. When shimmer, add onion and celery; sauté for 3 minutes. Add red pepper and cook for 3 minutes as well. Add garlic and sauté for only a minute. Add chicken and cook until no longer pink. At this stage, it might need more oil to prevent from burning.
  • Stir in ham and sausage before adding the rest of the ingredients; rice, reserved tomato juice, broth, crushed tomatoes, paprika, chili powder, cayenne pepper, Worcestershire sauce, thyme, basil, gumbo file, hot sauced, sugar and jalapeño peppers. Stir well and bring to boil. Cover, reduce heat to medium-low and simmer 15 to 18 minutes or until most of the liquid is absorbed and rice is tender. Remove from heat, stir it and let it rest for 5 minutes before serving.

2 tablespoons vegetable oil
1/2 pound cooked ham, cut into 1/2-inch cubes
2 cups chopped yellow onions
1 cup seeded and chopped green bell peppers
1 cup chopped celery
4 garlic cloves, peeled
3 cups chicken broth
1 (16-ounce) can whole tomatoes, chopped, liquid reserved
1/2 cup chopped green onions (green part only)
2 tablespoons chopped fresh parsley leaves
2 pounds medium-size shrimp, peeled and deveined
1 teaspoon TABASCO® brand Original Red Sauce
2 cups raw long-grain white rice, rinsed and drained

Steps:

  • Sprinkle the chicken with salt, black pepper, and cayenne. Heat oil in a large, heavy pot or Dutch oven over medium heat. Add the chicken and cook, stirring, until browned on all sides, 8 to 10 minutes. Transfer the chicken to a large mixing bowl.
  • Add ham to the pot and cook, stirring, until lightly browned, about 5 minutes. Add the ham to the chicken in the bowl.
  • Add onions, bell peppers, celery, and garlic to the pot and cook, scraping the bottom of the pot to loosen any browned bits. Return chicken and ham to the pot, reduce heat to low, cover, and cook for 25 minutes, stirring occasionally.
  • Add chicken broth and reserved tomato juice; cover and simmer for 45 minutes.
  • Mash the cooked garlic against the side of the pot and blend into the mixture. Add the tomatoes, green onions, parsley, shrimp, and TABASCO® Sauce and adjust the seasonings to taste. Add the rice, cover the pot, and bring to a boil. Reduce the heat to medium-low and simmer, covered, stirring occasionally, until the rice is tender and fluffy and the liquid is absorbed, about 25 minutes.
  • Serve warm.
