3 eggs
1 tablespoon water
1 tablespoon spicy chili crisp sauce
1 tablespoon butter
¼ cup diced ham
⅓ cup shredded Cheddar cheese

Steps:

  • Whisk eggs, water, and chili crisp together in a bowl.
  • Melt butter in a large skillet over medium heat. Add egg mixture and cook until egg is completely set, about 6 minutes.
  • Add ham and Cheddar cheese to one end of the cooked egg in the skillet. Flip the other side of the egg over the ham and cheese mixture. Cook until cheese is melted, about 4 minutes.

I found this recipe on one of those little leaflets that they pass out at the supermarket. It's a great way to use up leftover ham and a great family pleaser. Serve with lots of bread to soak up the sauce.

4 slices bacon, finely chopped
1 cup finely chopped onion
1 (28 ounce) can tomatoes
1 (14 ounce) can pork and beans in tomato sauce
1 (14 ounce) can red kidney beans
3/4 cup ketchup
1/4 cup brown sugar
2 tablespoons chili powder
1/2 teaspoon ground cumin
hot pepper flakes (optional)
4 cups chopped ham

Steps:

  • In a large sauce pan or dutch oven, over medium heat, cook bacon and onions until tender.
  • Add tomatoes, stirring to break up (or use diced tomatoes.) Stir in beans, ketchup, brown sugar, chili powder, cumin and hot pepper flakes.
  • Bring mixture to a boil, reduce heat and simmer 20 minutes.
  • Add ham, cook 10 minutes longer to warm through.

1 medium onion, chopped
1 medium green pepper, chopped
1 garlic clove, minced
1 tablespoon olive oil
1 can (28 ounces) diced tomatoes, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 jar (8 ounces) picante sauce
1 can (8 ounces) tomato sauce
1/2 cup water, optional
1 can (2-1/4 ounces) sliced ripe olives, drained
1 teaspoon beef bouillon granules
1 teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon pepper
Shredded cheddar cheese

Steps:

  • In a large saucepan, cook the ham, onion, green pepper and garlic in oil until tender. Stir in tomatoes, beans, picante sauce, tomato sauce and water if desired. Bring to a boil. Stir in the olives, bouillon, thyme, salt and pepper. Reduce heat, simmer, uncovered, for 15-20 minutes. Garnish with cheese.

1 red bell pepper (chopped)

1 clove garlic (crushed)
1 tablespoon olive oil

1 (15 ounce) can great northern beans (rinse & drain)
1 (28 ounce) can diced tomatoes (undrained)
1 (15 ounce) can tomato sauce
1 (8 ounce) jar mild picante sauce
1/2 cup water
1 (2 1/2 ounce) can black olives
1 teaspoon salt
1 teaspoon thyme
1 teaspoon beef bouillon granules (or one cube)
1/4 teaspoon black pepper

Steps:

  • In Dutch oven, heat oil and saute peppers, onion, and garlic until tender.
  • Add ham, beans, tomatoes, tomato& picante sauces, and water.
  • Bring to a boil.
  • Add remaining ingredients, lower heat, and simmer uncovered for 20 minutes.
  • Add cooked pasta, if desired, for"chili mac".

1/4 cup butter, softened
2-1/2 cups shredded cheddar cheese, divided

1 can (4 ounces) chopped green chilies
1/4 cup finely chopped onion
2 tablespoons minced fresh cilantro
5 large eggs
1-1/2 cups 2% milk
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon ground mustard

Steps:

  • Remove and discard crust from bread if desired. Butter bread; cube and place in a greased 13x9-in. baking dish. Sprinkle with 1-3/4 cups cheese, ham, chilies, onion and cilantro., Whisk the eggs, milk, salt, cumin and mustard in a large bowl. Pour over bread mixture; cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Bake, covered, at 350° for 30 minutes. Uncover; sprinkle with remaining cheese. Salsa and sour cream, optional

Steps:

  • In a small bowl, combine the cream cheese, ham, cheese, chilies and olives. Separate dough into 10 biscuits; press each biscuit onto the bottom and up the sides of a greased muffin cup. 3 eggs, beaten to blend
1 small onion, chopped
2 large garlic cloves, minced
1 carrot, chopped
1 green bell pepper, chopped
1 jalapeño chili, seeded, minced
3/4 teaspoon ground coriander
3/4 teaspoon caraway seeds
3 1/2 cups cold cooked rice
1 cup chopped ham

Steps:

  • Melt 1 tablespoon butter in heavy medium skillet over medium heat. Add eggs and cook until omelet is set and golden brown. Remove from heat and cool completely. Cut into small pieces.
  • Melt remaining 5 tablespoons butter in heavy large skillet over high heat. Add onion and garlic and cook until onion is golden brown, stirring constantly, about 3 minutes. Add carrot and next 4 ingredients. Reduce heat to medium and cook until carrot is tender, stirring occasionally, about 6 minutes. Add omelet, rice and ham. Stir until mixture is heated through, about 5 minutes. Season omelet to taste with salt and pepper and serve.
