- Whisk eggs, water, and chili crisp together in a bowl.
- Melt butter in a large skillet over medium heat. Add egg mixture and cook until egg is completely set, about 6 minutes.
- Add ham and Cheddar cheese to one end of the cooked egg in the skillet. Flip the other side of the egg over the ham and cheese mixture. Cook until cheese is melted, about 4 minutes.

I found this recipe on one of those little leaflets that they pass out at the supermarket. It's a great way to use up leftover ham and a great family pleaser. Serve with lots of bread to soak up the sauce.

- In a large sauce pan or dutch oven, over medium heat, cook bacon and onions until tender.
- Add tomatoes, stirring to break up (or use diced tomatoes.) Stir in beans, ketchup, brown sugar, chili powder, cumin and hot pepper flakes.
- Bring mixture to a boil, reduce heat and simmer 20 minutes.
- Add ham, cook 10 minutes longer to warm through.

- Melt 1 tablespoon butter in heavy medium skillet over medium heat. Add eggs and cook until omelet is set and golden brown. Remove from heat and cool completely. Cut into small pieces.
- Melt remaining 5 tablespoons butter in heavy large skillet over high heat. Add onion and garlic and cook until onion is golden brown, stirring constantly, about 3 minutes.
