HAM AND NOODLE CASSEROLE
Need a simple casserole sure to please the kids? I served this to friends who later left for Kenya...their girls were pining for it overseas, and you can bet I served it to them again when they returned to the States for a visit! (Talk about easy to please!) Nothing gourmet here, just yummy and great with salad and crispy garlic bread. (Recipe via my sister, who says she got it from Southern Living way back when...)

Steps:
- Cook noodles according to package directions. Drain.
- Place half of noodles in buttered 2 quart casserole dish.
- Combine ham and cheese; sprinkle half of ham mixture over noodles.
- In small bowl, combine soup and milk.
- Spoon half of soup mixture over ham layer.
- Then again: noodles, ham/cheese, soup.
- Dot with butter.
- Cover loosely with foil.
- Bake at 375 for 30 minutes.

RICH AND CHEESY HAM AND ASPARAGUS NOODLE CASSEROLE
Whipped this up yesterday and it turned out so good I thought I'd share! A great way to use up that leftover Christmas or Easter ham lurking in the freezer! Easy to make, and sinfully delicious if I do say so myself! Enjoy! :)

Steps:
- In large bowl, mix together well the first 4 ingredients.
- Gently fold in rest of ingredients except noodles and potato chips.
- Cook noodles 1 minute less than shortest time on directions. *I cooked mine for 6 minutes.
- Fold in noodles.
- Pour/spoon into lightly greased 13x9 baking dish.
- Top with crushed potato chips.
- Bake in 350 oven for 35 minutes til bubbly!
- *Do not precook asparagus.
- **Can sub a 10 oz. box frozen chopped broccoli, thawed and drained, for the asparagus if preferred.
CREAMY & CRUNCHY HAM AND NOODLE CASSEROLE
Someone once defined eternity as two people and a Christmas ham. When my husband and I received not one, not two, but three Christmas hams in one week, I came up with this recipe, which has since become one of our post-holiday favorites.

Steps:
- Preheat oven to 350°F.
- Cook noodles according to package directions.
- Drain and pour into large mixing bowl.
- Saute celery and onions in skillet with oil over low heat until vegetables are translucent, not browned, about 5 minutes.
- Remove from heat and stir into cooked noodles.
- Stir in ham, soup, mushrooms, bouillon or broth, cheese, Worcestershire sauce, thyme, marjoram and Tabasco, if using.
- Pour mixture into an ovenproof casserole dish.
- In a small dish, stir together melted butter or margarine and bread crumbs until well blended.
- Sprinkle between your fingers over the surface of the casserole.
- Bake casserole in oven preheated to 350°F for 40 minutes.
HAM, NOODLE AND SWISS CHEESE CASSEROLE
Trying to use up Easter Ham I threw this together using what I had in the pantry and fridge! Amounts are approximate, feel free to add more or less of any ingredient! Edited to change the size bag of noodles. I think it was an 8 ounce bag not 16 ounce!

Steps:
- Preheat oven to 325 degrees.
- Prepare egg noodles in a large Dutch oven, boiling as described on package. Drain and return to the Dutch oven.
- While the noodles are boiling, melt butter in skillet over medium to medium high heat. Stir in flour until thickened a bit. Slowly add half and half and chicken broth, stirring to prevent lumps. Cut heat up a bit if needed. Slowly add Swiss cheese, dry mustard and salt and pepper, stirring constantly.
- When the sauce is medium thickness, cut heat down to low.
- In the large Dutch oven containing the drained noodles, add the frozen peas, ham and the sauce. Mix well and pour into rectangular baking dish approximately 9 by 13.
- Cover with French Fried onions.
- Bake for 20 minutes.

SCHINKENFLECKERL (HAM AND NOODLE CASSEROLE)
Steps:
- 1. Preheat oven to 350F. Grease a 9x13 baking dish.
- 2. In a large saucepan, melt butter and whisk in flour until smooth. Take off heat and cool slightly.
- 3. In a medium bowl, beat egg whites until stiff peaks form.
- 4. Add the egg yolks to the cooled butter and flour mixture. Stir in sour cream, salt, pepper and nutmeg. Combine the cooked and drained noodles and sour cream mixture. Stir in ham. Gently fold in the beaten egg whites.
- 5. Put into prepared baking dish and cover with foil. Bake, covered, for 20 minutes. Remove foil, sprinkle cheese over top and cook an additional 25 minutes or until cheese starts to brown.

- Preheat an oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole.
- Bring water to a full rolling boil in a pot.. Cook the egg noodles in the boiling water, stirring occasionally, for 3 minutes; remove from heat, cover, and let stand until the noodles are tender, about 10 minutes. Drain.
- Stir the noodles, onion, sour cream, chicken soup, ham, and Swiss cheese together in a large bowl. Season with salt and pepper. Spoon into the prepared casserole. Sprinkle the top with bread crumbs.
- Bake in the preheated oven until the casserole is bubbling and the bread crumbs have browned, about 40 minutes.

- Cut up asparagus in bite size pieces, removing top and breaking off bottom parts...make a few ribbons too.
- Place onions and asparagus in microwave for 2 minutes. Melt butter in hot skillet add oil then the microwaved veggies, sprinkle with the sugar. cook to glaze slightly.
- Add cooked noodles, and ham, stir to blend. Transfer mixture to a large bowl and pour the Hollandaise sauce over all . Sprinkle with Parmesan cheese. Stir well.
- Pour into large greased casserole and sprinkle the eggs over top then sprinkle with the paprika and basil.
- Heat briefly in microwave , if necessary. Enjoy. Note: More sauce may be needed as you know the pasta soaks it up quite a bit,if left overnight or out of the freezer....

- 1. Preheat oven to 350 degrees. Heat oil or butter in an 8" oven-proof skillet.
- 2. Sauté diced onion and carrot in oven-proof skillet for about 5 minutes.
- 3. Add diced ham and cooked pasta/noodles to the skillet. (I used leftover macaroni and cheese for this.)
- 4. In a small bowl, beat eggs and milk. Add salt, pepper, and Italian spices to the beaten eggs.
- 5. Pour the egg mixture over the ingredients in the skillet. Bake about 15 minutes.
- 6. Add pieces of cheese over the top of the hot mixture. Let bake a few more minutes until the cheese is bubbly and the eggs are set. (I used pepper jack cheese.)
- 7. Remove skillet from the oven and let set for 3-5 minutes so the casserole can be easily cut.
- 8. Cut into 2-4 portions. Serve with a fresh salad, if desired.
- 9. Note: Next time I will add diced peppers to the vegetables to be sautéd, or I will add some diced roasted peppers. You can be creative by adding vegetables of choice. (I have seen only onions in traditional Czech recipes.)

- Heat oven to 350. Spray 8 inch square glass baking dish with cooking spray. Cook egg noodles according to package directions; drain. Rinse under cook water. Drain well.
