1/4 cup mayonnaise
1 tablespoon milk
3/4 teaspoon sugar
1/4 teaspoon prepared mustard
1/8 teaspoon celery seed
Dash salt
2 flour tortillas (10 inches), room temperature
1/4 pound thinly sliced deli ham
1/3 cup shredded Swiss cheese
2/3 cup shredded lettuce
1 medium tomato, seeded and chopped
1 green onion, chopped

Steps:

  • In a small bowl, whisk the first six ingredients; spread evenly over each tortilla. Layer with ham and cheese. Top with lettuce, tomato and onion. Roll up tightly; secure with toothpicks if desired.

1 teaspoon kosher salt
1 teaspoon paprika
1 teaspoon cracked black pepper
3 mangoes, small to medium size peeled and cut into wedges
6 -10 very thin slices serrano ham
1/2 lb piece manchego cheese, curled with a vegetable peeler

Steps:

  • Combine salt, paprika and pepper, mix well and sprinkle lightly on mango wedges.
  • Wrap a slice of the Serrano Ham (can use Prosciutto) around each wedge.
  • Arrange wedges on a platter or on individual plates and garnish with shavings of Manchego cheese.
  • Number of serving dependent on how large your mangoes are and how many wedges you choose to make.

10 lbs fresh ham, skin intact (shank or butt, bone in or boneless)
salt & freshly ground black pepper
2 tablespoons vegetable oil
1 cup mango chutney
2 cups chicken broth
1 -2 tablespoon hot sauce
1 head garlic, skinned
1 large yellow onion, quartered
2 lbs new potatoes, halved

Steps:

  • Remove ham from refrigerator and allot to come to room temperature (30 minutes or so). Preheat oven to 450°F Score ham cutting through the skin only, leaving fat intact. Season ham with salt and pepper. Place ham, cut side down, in roasting pan. Roast 20 minutes.
  • Meanwhile, puree mango chutney, broth and hot sauce in a blender or food processor to make glaze.
  • Reduce temperature on oven to 325°F Remove ham from oven and scatter garlic and onions into the pan. Baste ham with some of the glaze. Cover ham with parchment paper and then foil. Bake 3 1/2 hours to 4 1/2 hours, basting occasionally with glaze and pan juices.
  • Place potatoes around ham in pan about 45 minutes before it is done; toss to coat. Ham is done when it reaches an internal temperature of 160°F Let rest 20 to 30 minutes before carving. Strain juices and pass with ham.

These bite-sized appetizers bring together classic Italian ingredients with a taste of the tropics. Mango and mozzarella may seem like an unusual combination, but they pair together beautifully in a sweet-and-savoury way.

1 ripe mango, peeled
1 (6 ounce) package saputo mozzarellissima cheese
2 teaspoons fresh tarragon, chopped
4 slices serrano ham, cut in half lengthwise
1 tablespoon olive oil
2 teaspoons honey

Steps:

  • Preheat oven to 400°F (200°C).
  • Using a vegetable peeler, shave 8 thin slices of mango. Wrap one slice of mango around each cube of Mozzarellissima. Sprinkle with chopped tarragon and wrap each with a piece of Serrano ham. Brush with olive oil and place on a parchment-lined baking sheet.
  • Bake for 5 minutes, or until cheese starts to melt. Remove bites from the oven and drizzle with honey. Serve with cocktail toothpicks.
