TURKEY QUESADILLAS WITH CRANBERRY SALSA

- For salsa, in a small saucepan, combine cranberries, sugar and water; bring to a boil. Reduce heat to medium; cook, uncovered, until berries pop, about 10 minutes, stirring occasionally. Remove from heat; cool slightly. Stir in pear, onion, jalapeno, celery, lemon zest and juice, and cumin., Preheat griddle over medium heat. Top one half of each tortilla with 1/2 cup turkey; sprinkle with 1/4 cup cheese. Fold tortilla to close. Cook on griddle until golden brown and cheese is melted, 1-2 minutes per side. Serve with salsa.

Steps:
- to make the salsa, mix cranberry sauce, apple, pecans, horseradish and orange zest. Set aside.
- Sprinkle diced Brie, about 1/3 cup, on one half of each tortilla. top with a ham slice. Fold tortilla in half, forming a half moon shape.
- Melt 1 Tbsp. butter in large skillet over medium heat. Put 2 filled tortillas in skillet and cook for about 1 minute on each side or til browned and crisp. Repeat with remaining butter and filled tortillas.
- Cut each quesadilla into 4 wedges. Serve topped with cranberry salsa. Makes 24 appetizer servings.
