GINGER SOY FISH RECIPE

Ginger Soy Fish - crispy and perfectly cooked fish in a mouthwatering sauce. Topped with ginger and scallion, this recipe is so good with steamed rice!

12 oz. (340 g) halibut fish fillet or other white fish (please see recipe notes)
1 tablespoon corn starch
1 2-inch (2 cm-5 cm) piece ginger
2 tablespoons cooking oil
1 tablespoon chopped scallions
2 tablespoons soy sauce
2 tablespoons water
1 tablespoon sugar
1 teaspoon sesame oil
3 dashes ground white pepper

Steps:

  • Cut to the fish into thick, but bite size pieces. Add corn starch to the fish fillet.
  • Coat the fish with the corn starch. Set aside.
  • Peel the ginger, slice and cut into thin strips.
  • Mix all the ingredients for the Sauce in a small bowl. Stir to mix well and make sure that the sugar melts.
  • Heat up a non-stick skillet or well-seasoned wok with the cooking oil on medium to high heat. When the oil is fully heated, add the ginger and stir-fry until they turn light brown. Remove them from the oil and set aside in a bowl.
  • Using the ginger-infused oil, pan fry the fish until both surface turn light to golden brown. Make sure you turn the fish very gently with spatula or tong, or preferably with a pair of long cooking chopsticks. Fish fillets are very delicate; you don't want to break them up while pan-frying.
  • Add the Sauce to the fish. As soon as the sauce bubbles. Turn off the heat and dish out. Top the fish with the ginger strips and scallion. Serve immediately with steamed rice.

2 teaspoons minced fresh cilantro
1 teaspoon minced fresh ginger root
1 clove garlic, minced
1 tablespoon soy sauce
1 teaspoon sesame oil

4 (3 ounce) halibut cheeks

Steps:

  • Whisk the orange juice, cilantro, ginger, garlic, soy sauce, sesame oil, and red pepper flakes together in a small bowl; set aside.
  • Heat the olive oil in a skillet over medium-high heat. Cook the halibut cheeks until golden brown on each side, 2 to 3 minutes per side. Pour the orange juice mixture into the skillet and bring to a boil. Reduce heat to medium and simmer until the halibut flakes easily with a fork and the sauce has thickened slightly. Remove halibut cheeks to a plate and drizzle with orange sauce to serve.

4 teaspoons lemon juice
4 halibut fillets (4 to 6 ounces each)
1 teaspoon minced fresh gingerroot
1/4 to 3/4 teaspoon salt, divided
1/4 teaspoon pepper
1/2 cup water
10 ounces (about 2-1/2 cups) fresh Brussels sprouts, halved
Crushed red pepper flakes
1 tablespoon canola oil
5 garlic cloves, sliced lengthwise
2 tablespoons sesame oil
2 tablespoons soy sauce
Lemon slices, optional

Steps:

  • Brush lemon juice over halibut fillets. Sprinkle with minced ginger, 1/4 teaspoon salt and pepper., Place fish on an oiled grill rack, skin side down. Grill, covered, over medium heat (or broil 6 in. from heat) until fish just begins to flake easily with a fork, 6-8 minutes., In a large skillet, bring water to a boil over medium-high heat. Add Brussels sprouts, pepper flakes and, if desired, remaining salt. Cook, covered, until tender, 5-7 minutes. Meanwhile, in a small skillet, heat oil over medium heat. Add garlic; cook until golden brown. Drain on paper towels., Drizzle sesame oil and soy sauce over halibut. Serve with Brussels sprouts; sprinkle with fried garlic. If desired, serve with lemon slices.

1 1/4 lbs halibut fillets, four 1 inch thick fillets
1 small onion, minced
2 green onions, white part and 1 inch of the green
5 garlic cloves, minced
2 tablespoons fresh ginger, minced
1/4 teaspoon dried chili pepper flakes (or to taste more or less)
1/4 cup dry white wine
1/8 teaspoon sugar substitute or 1/8 teaspoon sugar
1/2 cup low-fat chicken broth or 1/2 cup vegetable broth

Steps:

  • Spray a non stick skilled with veggie oil and heat until very hot but not smoking.
  • Add the filets ond brown them skin side down for 2 minutes (if skinless only brown for a minute and you may want to turn the heat down) Add onion, green onions, garlic, ginger& pepper flakes, cook 1 minute.
  • Reduce heat and flip the fish add wine sugar& broth.
  • Cover pan and simmer for apprx 8 minutes or until the fish is done, it will flake if checked with a fork.
  • Serve with some of the onions.

Coriander-Crusted Halibut with Rice Noodles and Ginger Broth image

1/4 cup freshly ground coriander
Fleur de sel, to season
4 (6-ounce) pieces halibut fillet
Canola oil, to cook
1 1/2 tablespoons minced ginger
2 leeks, white part julienned
1 tablespoon fish sauce
6 cups chicken stock
2 limes, juiced
1 tablespoon minced cilantro leaves, save 4 whole sprigs for garnish
1 package (8-ounce) thin rice noodles, soaked in warm water for 20 minutes until soft

Steps:

  • For the Coriander Crusted Halibut With Rice Noodles And Ginger Broth: Preheat an oven to 450 degrees. Place the coriander on a small plate. Season the halibut on both sides with salt and dredge the top only with the coriander. In a hot saute pan coated with oil, sear the top first until brown and fragrant. Flip and place pan in oven for 8 to10 minutes or until the fish in flaky and hot in the middle. Concurrently, in a hot saucepan, coat lightly with oil and saute the ginger and leeks until soft, about 4 minutes. Deglaze with fish sauce and add stock. Bring to a simmer and reduce by 20 percent. Check for seasoning then add lime juice and cilantro. Right before serving, add the soft rice noodles. Bring to temperature then serve.
  • PLATING In large, warm pasta bowls, ladle the broth, leeks and noodles. Make a small pile in the middle with the mixture and top with halibut. Garnish with cilantro sprigs.

1 cup thinly shaved cauliflower
1/2 cup juice from a jar pickled ginger
2 tablespoons unsalted butter
2 tablespoons canola oil
2 lbs green cabbage, shredded
2 large leeks, white parts only, cut into 2-by-1/2-inch matchsticks
4 inches piece peeled fresh ginger, cut into fine matchsticks
salt
fresh ground white pepper
1 pinch crushed red pepper flakes
1 cup sake
8 skinless halibut fillets (4 pounds)
2 scallions, white parts only, thinly sliced and separated into rings

Steps:

  • Soak the cauliflower in the ginger juice at room temperature for 1 hour.
  • Drain.
  • Meanwhile, in each of 2 medium skillets, melt 1 tablespoon of the butter in 1 tablespoon of the oil.
  • Divide the cabbage, leeks and fresh ginger between the skillets and season with salt, pepper, & crushed red pepper flakes.
  • Cover and cook over low heat, stirring frequently, until softened but not browned, about 8 minutes.
  • Divide the sake between the skillets and bring to a boil.
  • Add 4 halibut fillets to each skillet and season with salt, pepper & crushed red pepper flakes (if using).
  • Cover and cook over high heat until the fish is firm, about 10 minutes.

1 clove garlic, peeled
1/2 small jalapeno pepper
1 piece fresh ginger (1/2 inch), peeled and roughly chopped
3 tablespoons freshly squeezed lime juice (2 limes)
1 cup loosely packed cilantro leaves
1/4 cup plus 2 tablespoons olive oil
Salt and freshly ground black pepper
1 halibut fillet (1 1/2 pounds), skin removed and cut into 4 equal pieces

Steps:

  • Combine garlic, jalapeno pepper, ginger, lime juice, and cilantro in the jar of a blender. Cover blender, and remove the stopper. Turn on blender, and slowly drizzle in the olive oil. Process until mixture is bright green and smooth. Season cilantro sauce to taste with salt and black pepper.
  • Season both sides of fillets with salt and black pepper. Brush the top of each fillet with 1 tablespoon cilantro sauce.
  • Fill a large high-sided skillet with 1 inch water. Set over high heat, and bring to a boil. Set a steamer basket in the skillet, and arrange fillets in basket. Cover, and steam until fish has just cooked through but is still moist, 5 to 6 minutes. Remove fish from steamer, drizzle with additional cilantro sauce, and serve.

HALIBUT WITH SWISS CHARD AND GINGER CREAM SAUCE

6 7-ounce halibut fillets, each about 1 1/2 inches thick by 2 inches wide
Olive oil
3 1/2 tablespoons minced fresh ginger
2 shallots, minced
1 tablespoon minced garlic
1 cup bottled clam juice
2/3 cup dry white wine
12 large green or red Swiss chard leaves, thick stems removed
1 cup whipping cream

Steps:

  • Brush fish with oil. Mix ginger, shallots and garlic in heavy small saucepan. Rub 1 teaspoon ginger mixture over each fish fillet. Add clam juice and wine to remaining ginger mixture in saucepan. Boil mixture until liquid is reduced to 1/4 cup, about 15 minutes.
  • Steam Swiss chard until just tender, about 30 seconds. Transfer chard to strainer and rinse with cold water. Drain.
  • Pat chard dry. Place 1 chard leaf on work surface. Place another leaf next to first, overlapping long sides. Place 1 fish fillet crosswise near 1 end of chard, leaving 2-inch border on short sides of fish. Season fish with salt and pepper. Fold 2 long sides of chard over fish, then roll up fish in chard, enclosing completely. Repeat with remaining chard and fish. (Can be made 8 hours ahead. Cover ginger mixture and fish separately and chill.)
  • Place steaming rack over boiling water in large Dutch oven. Place fish on rack. Cover; steam until cooked through, about 8 minutes. Transfer to plates.
  • Meanwhile, add cream to ginger mixture in saucepan. Boil until mixture thickens to sauce consistency, about 5 minutes. Spoon sauce around fish.
