One of my favorite ways to cook halibut when it's in season! This is simple and tasty--I someimes slice a lemon and roast the slices along with the fish, but it's not really necessary. As with all fish dishes, the fresher the fish, the better.

2 lbs halibut fillets
1 1/2 lbs fingerling potatoes, sliced
5 garlic cloves, chopped
1 tablespoon fresh rosemary, minced
1 tablespoon fresh Italian parsley, chopped
2 tablespoons olive oil
1 lemon, juice and zest of

Steps:

  • Preheat oven to 450 degrees. Put sliced potatoes, olive oil, rosemary, and garlic in a large (12" or so) cast iron pan and mix well. Roast for 15-20 minutes, until potatoes are almost tender.
  • Lay halibut fillet on top of potatoes, sprinkle with chopped rosemary, chopped parsley, lemon juice and zest. Bake 8-10 minutes per inch of halibut thickness, or until just cooked through.

1 tablespoon extra-virgin olive oil
2 (5- to 6-ounce) whole Mexican-style chorizo sausages
1 pound fingerling potatoes
Tomato Broth
2 tablespoons extra-virgin olive oil
1/2 large red bell pepper, cut into 1/4-inch dice
1/2 large yellow bell pepper, cut into 1/4-inch dice
3 large cloves garlic, minced
1/4 teaspoon red chile flakes
2 cups peeled, seeded, and diced fresh tomatoes, or 2 cups canned whole peeled tomatoes in puree, broken up by hand
1/2 teaspoon dried Mexican oregano
2 cups chicken stock (page 190) or vegetable stock (page 191)
1/2 cup Cakebread Cellars Sauvignon Blanc
Kosher salt
4 (4- to 5-ounce) skinless halibut or cod fillets
Freshly ground black pepper
1 to 2 tablespoons chopped cilantro for garnish

Steps:

  • Preheat the oven to 400°F. Heat the olive oil in a small ovenproof skillet over moderate heat. Add the chorizo and brown on all sides, about 3 minutes. Transfer the skillet to the oven and roast until the sausages feel firm, about 5 minutes. Set aside to cool slightly, then cut into 1-inch-thick slices.
  • Put the potatoes in a saucepan with salted water to cover by 1 inch. Bring to a boil, adjust the heat to maintain a simmer, and cook until the potatoes are tender when pierced, about 15 minutes. Drain and let cool. Peel, then cut into 1-inch chunks.
  • For the tomato broth: Heat the olive oil in a large pot over high heat. Add the bell peppers and sauté, stirring, for about 3 minutes to soften them, then add the garlic and chile flakes. Lower the heat and cook for about 1 minute to release the garlic fragrance, then add the tomatoes and the oregano, rubbing the herb between your fingers. Simmer briskly until the tomatoes soften, about 2 minutes, then add the stock and wine. Simmer for about 5 minutes to thicken the liquid slightly, then add the chorizo and potatoes. Simmer for 5 minutes to develop the flavor. Taste and adjust the seasoning.
  • Season the fish on both sides with salt and pepper. Arrange the fillets on top of the stew, then cover and simmer gently until the fish is fully cooked, about 10 minutes. Divide the chorizo, potatoes, and broth among 4 soup bowls, then top each portion with a fish fillet. Garnish with chopped cilantro. Serve immediately.
  • Enjoy with Cakebread Cellars Carneros Pinot Noir or another medium-bodied red wine with zesty fruit.

Steamed in foil with lime zest and juice and a touch of Tequila liqueur (Licor De Cafe) Wonderful flavour. (Rest time not included in timing)

3 lbs roast halibut, approximate
2 fresh limes, juice of, zest of and cut in wedges
1 teaspoon sea salt
1 teaspoon fresh ground pepper
1 ounce tequila liqueur (or regular Tequila if liqueur not available)
lime wedge (to garnish)

Steps:

  • Preheat oven to 400f degrees.
  • Place the halibut roast on a sheet of foil, large enough to wrap it and place it in a shallow oven proof dish or tray. Cut three slits into white skin side of halibut roast, deep enough to hold wedges of lime. Sprinkle sea salt and fresh ground pepper over the roast and into the slits. Place a lime wedge into each slit. Squeeze juice of one lime over all. Pour the Tequila liqueur over the roast and sprinkle the lime zest over all. Wrap the foil tightly around the roast and let rest in fridge for 15 to 30 minutes.
  • Roast in 400f degree oven for approximately 30 to 40 minutes depending on the size of the roast, or until the fish flakes easily.
  • Unwrap and place on a platter to remove skin and bones, place halibut pieces on another platter and pour liquid that accumulated in foil over, garnish with lime wedges.

2 halibut steaks (or any other white fish)
olive oil
2 tablespoons capers packed in salt
flat leaf parsley
1 large lemon, juiced
steamed spinach
salt and pepper

Steps:

  • Preheat the oven to 230 degrees C.
  • Grease a baking dish with some olive oil.
  • Rub the fish generously with salt and pepper, then lay in the dish and bake for 7-8 minutes or until the flesh flakes easily away from the bone.
  • Chop the parsley and rinse the capers.
  • Lift the fish out onto warm plates and place the baking dish over a moderate flame.
  • Scatter in the capers and parsley, squeeze in the lemon juice and grind in a little salt and pepper.
  • Drizzle in a little more oil, then bring to a fierce bubble.
  • Tip that over the fish and serve with the steamed spinach.

1/2 cup water
4 medium ripe red tomatoes, quartered and seeded
1 large tarragon sprig, stemmed
2 shallots, peeled and sliced in rings
1/2 cup olive oil
Pinch kosher salt
Freshly ground black pepper
2 (4-ounce) halibut fillets
Coarse salt
Freshly ground black pepper
1 tablespoon canola oil, plus more as needed
Handful baby greens, for garnish, optional
Arugula leaves, for garnish, optional
1 shallot, finely julienned, for garnish, optional

Steps:

  • To make the vinaigrette: Prepare a wok smoker by laying 2 layers of foil in the bottom of a wok. Add in 2 handfuls of the hickory wood chips, and set the smoker over high heat. Pour in the water. Wash, quarter, and seed the tomatoes. Pop them into a bamboo steamer.
  • Arrange the tarragon and shallots around the tomatoes. Place the steamer onto your smoking wok and cover with lid or foil, and let the ingredients smoke for 20 minutes.
  • Transfer the tomato-shallot mixture to a big pitcher, and blend with an immersion blender or use a regular blender. Gradually, add the olive oil in a thin stream, as you are blending to achieve a nice consistency. Season with a pinch of salt and some freshly cracked black pepper.
  • To make the halibut: Preheat an oven to 375 degrees F. Liberally sprinkle your halibut fillets with coarse salt and fresh cracked black pepper.
  • Add just enough oil to coat the bottom of a pan, and set it over fairly high heat.
  • Add the halibut fillets to the hot pan, skin side down. Once the first sides has browned nicely, about 3 to 4 minutes, flip them over and continue cooking for another 3 minutes. Then, slide the pan into the oven for about 5 minutes to finish cooking. The finished halibut should to be firm to the touch and snowy white in color, but since it is a lean fish, it will dry out if overcooked.
  • Ladle a pool of the vinaigrette into the bottom of a deep plate, top with a piece of halibut and a few baby greens, if using. Alternatively, you could use arugula tossed with sliced shallots, as a garnish.
