HEAVENLY HALIBUT
Fresh and delicious halibut is baked with a creamy, cheesy sauce for an easy weeknight dinner. Serves between 2-3 people.

- Preheat oven to 425 degrees F. Slice halibut filet into individual servings and sprinkle with kosher salt and pepper. Mix together the mayo, softened butter, green onions, garlic, mozzarella cheese, and vinegar or lemon juice. Spread on top of each halibut filet.
- Bake at 425 degrees for about 15 minutes, or until just cooked through. Remove the halibut and turn the broiler to high. Broil for 1 minute, until the cheese is lightly browned, being careful to not overcook. Serve warm.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
- In a small bowl, mix together mayonnaise, mustard, horseradish, and lemon juice. Stir in 1/4 cup bread crumbs and 1 tablespoon Parmesan cheese. Arrange fish fillets on the prepared baking sheet. Spread bread crumb mixture evenly over fish.
- In a small bowl, mix together melted margarine, 1/4 cup bread crumbs, and 1 tablespoon Parmesan cheese. Sprinkle over the coated halibut.
- Bake for 15 to 18 minutes, or until fish flakes easily with a fork.

- To prepare the topping: Combine mayonnaise, lemon juice, garlic, mustard, Parmesan, green onion and Tabasco.
- To prepare the halibut: Place fish on a broiling pan.
- Sprinkle with lemon juice, salt and pepper.
- Bake in a preheated 450-degree oven 12 minutes per inch of thickness, or until fish tests done.
- Remove fish from oven and place a rack close to the broiling element.
- Turn the oven to broil.
- Spread the top of the fish with garlic topping.
- Broil about 1 minute, or until golden.

EASY BAKED HALIBUT
Baked halibut topped with a creamy, herbed mayonnaise crust is a dinner sensation! This quick and easy recipe gives you moist and flakey filets with an utterly delicious topping.

- Preheat the oven to 400F. In a small bowl, mix together the mayonnaise, shallot, lemon juice, parsley, one tablespoon of chives (save the remaining for garnish), mustard, salt and pepper.
- Lightly coat the inside of the baking dish with oil or butter (to prevent the halibut from sticking). Place the halibut filets in the baking dish. Then evenly spoon your mayonnaise mixture onto the top of the halibut filets.
- Bake in the oven for 15-20 minutes minutes being careful not to overcook. Just before the fish is done, turn on the top broiler of your oven for 1-2 minutes to make the top golden. The fish is done when it becomes opaque and flakes easily.
- Remove the halibut from the oven and sprinkle the remaining chives on top before serving.

DIJON & PARMESAN CRUSTED HALIBUT
I cobbled this together from other recipes I liked and wanted to write it down so I had an option of making it again!

- Wash and pat dry the Halibut filets.
- Mix 1/4 C light Mayo, 1 Tbl Dijon, 1 Tbl lemon juice, 1/4 C breadcrumbs and 1.5 Tbl Parm.
- Spray olive oil in a 9X13 pan bottom.
- Place Halibut filet's into the pan. Spread mayo / dijon mixture on the top of the filet's.
- Melt the butter in a small bowl. (microwave) Mix in the balance of the bread crumbs and the parm, garlic and parsley into melted butter. Note - I used 4 Tbl of the butter, but upon double checking the recipe's I leveraged, they used substantially less. I bet you could easily get by on 2 tbl butter. Put the breadcrumb/herb/butter mixture on top of the fish - for an extra crispy topping.
- Bake the fish at 350 degrees for about 12 - 14 minutes. Then put oven on Broil (change the racks in the oven if needed) for a couple of minutes (4) until the top is nicely brown.
- (Note first time I made this - had about 1.25 lbs halibut and husband thought there was a smidge too much of the mayo / dijon mixture.).
BAKED HALIBUT WITH CRISPY PANKO
This fish will just melt in your mouth! I like to serve over a quinoa-kale salad. Also, please don't use regular bread crumbs as they are too dense.

- Preheat oven to 350 degrees F (175 degrees C).
- Stir panko bread crumbs and melted butter together in a bowl until evenly coated.
- Pour enough chicken stock into an oven-proof skillet to cover bottom; arrange halibut fillets in skillet. Drizzle lemon juice over fillets; season with salt and pepper. Spread a think layer of Dijon mustard over each fillet; press bread crumb mixture over mustard layer.
- Place skillet in the preheated oven and cook until fillets flake easily with a fork and topping is browned, about 20 minutes.

ROASTED GARLIC AND PARMESAN BAKED HALIBUT
Fish can be intimidating for those who didn't grow up cooking or eating it. One of the best ways to ease people into eating anything unfamiliar is by smothering it in roasted garlic and cheese. Forget the old Italian maxim of not mixing seafood and cheese: they pair magically and make first forays into cooking and eating halibut easy to execute and even easier to eat.

- Preheat the oven to 375˚F.
- Cut off the top of the head of garlic and brush off some of the outer paper skin, leaving just the individually wrapped cloves. On a piece of foil, pour the olive oil over the garlic, then wrap the foil around it and place it in the oven for 45 minutes, until it's completely soft. For the recipe, you'll only need six cloves from the head, but it's worth making a whole head to keep the rest for spreading on crusty bread or adding to salads.
- Raise the oven temperature to 425˚F.
- Heat the butter in an oven-proof pan over low heat. Sprinkle both sides of the fish with salt and pepper. When the butter is melted, add the halibut and put it into the oven for 10 minutes. The fish should be just cooked and opaque throughout.
- While the halibut cooks, blend or food process together six cloves of garlic, the mayonnaise, and parmesan. When the halibut is done, pull it out and generously smear the mayonnaise mixture on the top. Switch the oven to a high broil and return the pan to the still-hot oven for 4 minutes under the broiler, until the top is almost entirely golden brown.
- Remove and serve immediately.
