3 tablespoons butter
3 tablespoons all-purpose flour
1-1/2 teaspoons salt
1/8 teaspoon pepper
2 cups 2% milk
1 cup shredded cheddar cheese
5 cups thinly sliced peeled potatoes (about 6 medium)
1/2 cup chopped onion
Additional pepper, optional

Steps:

  • Preheat oven to 350°. In a large saucepan, melt butter over low heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat; stir in cheese until melted. Add potatoes and onion., Transfer to a greased 2-qt. baking dish. Cover and bake 1 hour. Uncover; bake 30-40 minutes or until the potatoes are tender. If desired, top with additional pepper.

A natural with baked ham or smoked sausages, this comfort food is made with the same basic sauce I use for Macaroni and Cheese. As a variation, 1 cup of thinly sliced onions added to the potatoes is tasty.

4 tablespoons butter
3 tablespoons flour
1/2 teaspoon dry mustard
1/4 teaspoon turmeric
1/2 teaspoon pepper
1 teaspoon salt
2 cups 2% low-fat milk
2 cups medium cheddar, shredded
1 tablespoon onion, finely grated
6 cups red potatoes or 6 cups gold potatoes, sliced

Steps:

  • Melt butter in a 2-quart saucepan.
  • Add flour and seasonings, stir or whisk until smooth. Whisk in milk and continue to cook on medium-low heat, stirring constantly for 5 minutes.
  • Turn off heat under saucepan. Add cheese and grated onion and stir until melted.
  • Wash and slice potatoes approximately 1/8 inch thick. Do not peel.
  • Place potato slices (and 1 cup sliced onion, if you choose) in a large 3-quart casserole. Note: if you use a smaller casserole, place it on a pizza pan or cookie sheet to catch any sauce that bubbles over.
  • Pour cheese sauce on top and fold into potato slices.
  • Bake at 375F for 45 minutes, stir gently, and return to oven. Bake for an additional 30-45 minutes, until potatoes are tender.

1 (8 ounce) can chopped tomatoes
1/2 cup water
1 tablespoon oil
1 habanero pepper, diced
1 small onion, diced
2 garlic cloves, crushed
4 large potatoes, peeled and thinly sliced
1 chicken bouillon cube
1/2 cup of grated mozzarella cheese
1/3 cup cream

Steps:

  • In a skillet, heat oil and cook onions, garlic and habanero chile until tender.
  • Add can of tomatoes, chicken bullion and water and simmer for 3 minutes.
  • In a lightly greased oven proof crystal baking dish, layer potatoes.
  • Pour tomato mixture over potatoes.
  • Pour cream over potatoes and sprinkle cheese.
  • Bake in a pre-heated oven at 175C until potatoes are tender and cheese is golden brown.

This is one of the first dishes I made in Home Economics class, but it wasn't until after I graduated that I learned about adding Parmesan and Gruyere for a more sophisticated version.

1/3 cup unsalted butter, softened
1 1/2 pounds Idaho potatoes, peeled and cut into 1/4-inch-thick slices
1/2 cup grated Gruyere
1/2 cup freshly grated Parmesan
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon ground black pepper
1/8 teaspoon paprika

Steps:

  • Preheat the oven to 350 degrees F.
  • Butter a 1 1/2 quart baking dish with about 1 tablespoon of the softened butter.
  • Arrange a layer of potatoes in the baking dish, and sprinkle some of the cheeses over them. Continue layering potatoes and cheeses until you've used them all, ending with a layer of potatoes.
  • In a small bowl, whisk the cream with the salt and pepper; pour this over the potatoes. Dot the remaining butter over the top and sprinkle with the paprika. Bake for 1 to 1 1/4 hours, or until the potatoes are tender and golden brown on top. Let stand for 5 minutes before serving.

3/4 cup half-and-half cream
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon garlic powder
3 medium potatoes, peeled and thinly sliced
1 cup seasoned salad croutons, divided
1/8 teaspoon pepper
1/2 cup shredded cheddar cheese

Steps:

  • In a large saucepan, bring cream, milk, salt and garlic powder to a boil. Add potatoes; reduce heat. Cover and simmer for 10-15 minutes or until the potatoes are tender. Coarsely crush 1/4 cup of croutons. Remove potatoes from the heat. Gently stir in the crushed croutons and pepper. , Pour into a greased 1-1/2-qt. baking dish. Sprinkle with cheese and remaining croutons. Bake, uncovered, at 400° for 5-6 minutes or until the cheese is melted.
