2 quarts apple cider (8 cups)
4 strips lemon zest
2 cinnamon sticks
2 whole star anise (optional)
1 teaspoon whole allspice berries
1 teaspoon whole cloves

Steps:

  • In a large saucepan, bring cider, lemon zest, and spices to a boil; cover, and remove from heat. Let steep at least 20 minutes (or up to 4 hours). Ladle carefully into mugs, leaving most of the solids behind.

This is a classic warmer-upper that you can serve on chilly winter days. Pass the brandy separately for those who want it.

3 cinnamon sticks (3 inches)
3 whole cloves
2 whole allspice
1 bay leaf
3 quarts apple cider or apple juice
1/4 cup orange juice
1/4 cup lemon juice
1 tablespoon grated orange zest
2 tablespoons brown sugar
Dash salt
1 to 1-1/2 cups brandy, optional

Steps:

  • Place the cinnamon stick, cloves, allspice and bay leaf on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. , In a large saucepan, combine the apple cider, juices, orange zest, brown sugar, salt and spice bag. Bring to a boil. Reduce heat to medium-low and simmer mixture for 30 minutes to blend flavors. Discard spice bag. Strain cider mixture and stir in brandy if desired. Serve immediately.

1 orange

Steps:

  • Put the cider in a large saucepan. Strip the peel from the orange in long strips with a vegetable peeler, taking care not to take off the bitter white pith. Add to the pan. Then squeeze the orange juice into the cider (straining out the seeds). Add cinnamon sticks, cloves, and star anise.
  • Heat cider over medium heat, then simmer very gently until fragrant, about 15 minutes. Serve.

One 750-milliliter bottle full-bodied red wine
1 cup honey
1/2 cup brandy
1/4 cup fresh lemon juice
1 teaspoon whole cloves
1 teaspoon whole allspice berries
3 cinnamon sticks
Peel from 1 orange
One 3-inch piece ginger, peeled and sliced
Whole star anise, for garnish

Steps:

  • Put the wine, honey, brandy, lemon juice, cloves, allspice, cinnamon sticks, orange peel and ginger in a saucepan and bring to a low simmer. Strain through a fine-mesh strainer and transfer to a thermal container or large teapot.
  • Pour into glasses, garnish with star anise and serve.
