GROUND BEEF GOULASH
My son loves this recipe and even ask for it for his birthday supper. My own recipe and I call it goulash. Very tasty and rich.

Steps:
- Brown beef and drain the fat.
- Add bell pepper, onion and garlic, salt (go lightly) the soya sauce is very salty and pepper to taste.
- Add tomato soup and water, soya sauce.
- Put lid on and simmer for 20 minutes.
- Then add a little more water and rice OR elbow macaroni.
- Simmer with lid on for 15 minutes,stir.
- Add parmesan cheese, Velveeta cheese to the top (don't stir).
- Take off stove and keep lid on until cheese melts.
- Serve with garlic bread and tossed salad.

- Cook the macaroni according to the package directions for al dente. Reserve two cups of the pasta water; drain macaroni and set aside. Meanwhile, using a lidded skillet, sauté the ground beef uncovered until done; drain off any excess fat. Add the onion and garlic and continue sautéing about 5 minutes. Add the Italian seasoning, seasoned salt, pepper, Cajun seasoning, and bay leaves; stir. Add the tomato sauce, undrained diced tomatoes and sugar, scraping up any browned bits in the bottom of the skillet. Bring to a boil, reduce heat to simmer, cover and cook for 15 minutes, stirring occasionally. Add the cooked, drained macaroni and stir in enough of the reserved pasta water as needed to loosen; continue to simmer until pasta is warmed through, adding additional pasta water as needed. Sprinkle with red pepper flakes if desired, stir, remove from heat, discard bay leaves and serve immediately. Cook's Notes: For a cheesy variation, cube 1/2 cup of Velveeta and stir in just before serving, until melted and creamy.

- Heat a large skillet over medium heat. Cook and stir beef, onion, and red bell pepper in the hot skillet until browned and crumbly, 7 to 10 minutes; drain and discard grease.
- Transfer beef mixture to a slow cooker; add beef broth, potatoes, carrots, ketchup, Worcestershire sauce, garlic, paprika, hot sauce, and salt. Stir the mixture, making sure the potatoes remain submerged in liquid.
- Cook on Low for 4 hours.

DUTCH OVEN GROUND BEEF GOULASH
This is a smoky, rich, Dutch oven goulash. The cavatappi pasta captures large amounts of this great paprika sauce. While the red pepper and lemon, added towards the end of cooking, add a little freshness which helps balance the sauce. Serve with a dollop of sour cream and some chives.

- Heat oil in a Dutch oven over medium heat. Cook and stir onion in the hot oil until translucent, about 5 minutes. Increase heat to medium-high. Add ground beef, black pepper, and salt; cook and stir until browned and crumbly, about 10 minutes.
- Pour in tomatoes, beef broth, wine, paprika, garlic, Worcestershire, thyme, caraway seeds, rosemary, and bay leaves. Reduce heat to medium and simmer until reduced to a thick, stew-like consistency, about 45 minutes.
- Meanwhile, bring a large pot of lightly salted water to a boil. Cook cavatappi in the boiling water, stirring occasionally, until tender yet firm to the bite, 9 to 10 minutes.
- Stir bell pepper and lemon juice into the beef mixture and cook for 10 minutes more. Stir in cooked pasta to coat.

Steps:
- in a large skillet or 2-3 quart pan, brown ground beef and drain grease; return to pan.
- add water, onion, garlic, salt and pepper to taste and cook until onion is soft.
- add rotel and corn, reduce heat, cover and simmer 15 minutes stirring often.
- remove stems from cherry peppers and tear into small pieces, remove seeds if you want, add to meat mixture- you may also add 1-2 tablespoons of juice from the peppers.
- continue to simmer covered while you prepare the noodles to slightly more firm than al dente.
- add noodles to meat making sure there is just enough liquid in the pan to cover the noodles.
- continue to simmer covered until liquid is absorbed.
- serve over crushed corn chips and with a fresh salad.

- In a large pot, heat water to a boil.
- While waiting for the water to boil, in a medium to large sized skillet, heat olive oil on medium high heat; add onion, green pepper, minced garlic, and crushed red pepper and cook until onion is transparent.

- Melt butter in large heavy kettle. Add onion and cook, stirring often, 10 minutes. Add meat, paprika, and 1 teaspoons salt and cook, stirring, until meat loses its red color.
