1 cup fancy shredded mozzarella cheese (4 oz)
1 (6 ounce) can tuna, well drained & flaked
4 plum tomatoes, seeded & chopped
2 tablespoons minced onions
2 teaspoons fresh parsley, minced
1/2 teaspoon dried oregano leaves, crushed
4 slices Italian bread (each 6 X 1/2)
2 tablespoons olive oil
2 cloves garlic, peeled & halved

Steps:

  • In medium bowl combine cheese, tuna, tomatoes, onion, parsley and oregano; set aside Brush both sides of bread slices with olive oil and rub surfaces with cut sides of garlic.
  • In dry preheated skillet, grill bread until light golden brown; turn& top each toasted surface with 1/4 of tuna mixture; continue to grill until cheese melts and bread is golden brown on bottom.

My daughter made this last night and had a taste and was pleasantly surprised! This is a great example of how bold Asian and Latin flavors can work well together. The orange and lime juice are in place of the rice vinegar = the acidic ingredient used in a Japanese ponzu dipping sauce. The hot, smoky chipotle chiles give it that extra kick! 1/2 cup orange juice
1/2 cup lime juice
1/4 cup grated onion
1/4 cup low sodium soy sauce
1 tablespoon chopped peeled fresh ginger
1 1/2 chipotle chiles (in adobo sauce)
3/4 cup diced English cucumber
1/2 cup diced plum tomato
1/2 cup diced peeled avocado
1/4 cup chopped fresh cilantro
4 (6 ounce) tuna steaks

cooking spray
2 cups hot cooked medium-grain rice

Steps:

  • PREPARE PONZU:.
  • Place all the ingredients (through 1 1/2 chipotle chiles) in a blender, and process until smooth.
  • PREPARE SALSA:.
  • Gently combine diced cucumber, tomato, avocado, and cilantro in a small bowl.
  • PREPARE FISH:.
  • Sprinkle fish with salt.
  • Heat a large nonstick grill pan over medium-high heat.
  • Coat pan with cooking spray.
  • Add fish; cook 3 minutes on each side or until desired degree of doneness.
  • Cut each tuna steak diagonally across the grain into thin slices.
  • Arrange sliced tuna over rice; top with salsa, and drizzle with ponzu.

1/2 cup balsamic vinegar
1-1/2 cups chopped and seeded plum tomatoes
2 tablespoons finely chopped shallot
1 tablespoon minced fresh basil
2 teaspoons plus 3 tablespoons olive oil, divided
1 garlic clove, minced
16 slices French bread baguette (1/2 inch thick)
Sea salt and grated Parmesan cheese

Steps:

  • In a small saucepan, bring vinegar to a boil; cook until liquid is reduced to 3 tablespoons, 8-10 minutes. Remove from heat. Grilled Fish Tacos with Chipotle Crema image

1/4 cup (60 milliliters) mayonnaise
1/2 cup (120 milliliters) sour cream
2 limes, 1 halved and 1 cut into wedges
Kosher salt and freshly ground black pepper
1 tablespoon canned chipotle chile, finely chopped (optional)
Vegetable oil, such as grapeseed or canola
Eight 6 inch corn tortillas
1 pound (450 grams) skinless flounder (or other firm, white fish) fillets
2 cups (480 milliliters) shredded green cabbage, rinsed in ice water and dried thoroughly
Pico de gallo or Mexican hot sauce (such as Tapatio, Cholula or Valentina), for serving

Steps:

  • Make the chipotle crema: In a small bowl, whisk the mayonnaise and sour cream until combined. Squeeze in lime juice, to taste, and whisk. Add salt, pepper and chipotle, to taste.
  • Make the tacos: Heat a large skillet over medium heat for 3 minutes. Meanwhile, pour a few tablespoons of oil in a small bowl. Separate the corn tortillas from each other but keep them in a stack then run the outer edges through the oil. Add a few tortillas at a time to the dry skillet and heat until soft and hot, about 30 seconds per side. Wrap the tortillas in a clean, dry kitchen towel or place in a tortilla warmer, to keep warm.
  • Heat a grill pan or grill over high heat for at least 5 minutes.
  • Meanwhile, slice the fish fillets into 1-by-2-inch strips. Pat dry with a paper towel. Season generously with salt and a pinch of pepper.
  • Wipe the grill pan or grill grates with a lightly oiled towel right before cooking to remove any char and debris. (This will give you great grill marks and help the fish from sticking.) Working in batches, cook the fish strips in a single layer just until they are opaque and flake in the middle (making sure not to overcook them), about 2 minutes per side.
  • Top each tortilla with 3 fish strips, a pinch of the cabbage and a drizzle of the crema. Serve right away with lime wedges and pico de gallo or hot sauce on the side.

1/3 cup minced red onion
3 tablespoons chopped fresh Italian parsley

Steps:

  • Flake the tuna with a fork into a bowl, and stir in the onion, parsley, lemon juice, olive oil, thyme and pepper.
  • In a separate bowl mix the hummus and sun-dried tomatoes together. Heat the broiler.
  • Arrange the bread slices in a single layer on a cookie sheets. Broil 1 to 3 minutes on each side, or until lightly toasted.
  • Top each toast with a layer of the hummus mixture and a small mound of the tuna mixture.
