When my brother and I would go to visit my dad he would often make us these sandwiches for dinner. They are so simple, but the taste just brings me back to the days with daddy! You can really mix and match any meats and cheeses, but to me, there is no comparison to good ol' salami and american cheese!!

2 slices bread
butter
1 slice American cheese
5 slices salami
mayonnaise
lettuce
tomatoes

Steps:

  • Butter one side of each slice of bread and place (Buttered side down) in a skillet over medium heat.
  • Place the slice of cheese on one of the pieces of bread, and allow to the cheese to melt, and the bread to turn golden.
  • Remove from pan and top cheese with salami, making sure to spread out the layer of salami to cover everything.
  • Add the tomatoes and lettuce.
  • Spread Mayo on the unbuttered side of the other slice of bread and top off the sandwich!
  • YUM!

This sandwich can be lunch, a snack, or a late-night thing. Eat it with potato chips and lemonade; it's also great with a simple green salad for dinner.

12 ounces Gruyère, Swiss cheese, or sharp cheddar, sliced, divided
8 slices sourdough bread
6 dill pickles, sliced crosswise 1/4-inch thick
6 ounces thinly sliced salami, such as Genoa
6 tablespoons unsalted butter, room temperature

Steps:

  • Divide half of cheese among 4 slices of bread. Top with pickles, salami, and remaining cheese. Close sandwiches and spread half of butter evenly over top of bread slices.
  • Heat a large skillet, preferably cast iron, over medium-low heat. Place sandwiches, buttered side down, in skillet. Spread remaining butter over top of bread. Cook, pressing down with a spatula to encourage melting and turning once, until cheese is melted and bread is golden brown and crisp, 5-7 minutes.

2 slices bread, not more than 1/2 inch thick
1 -2 slice American cheese
4 -8 slices beef salami, thin
1 1/2 tablespoons butter, softened
cooking oil

Steps:

  • Thinly spread one side of each bread slice with butter.
  • Prepare the salami by taking 2-3 slices and rolling them up like a cigar, slice as you would cut bread and you get salami strings, use your fingers to break apart as you put on the sandwich (this will help you avoid the molten hot lave slice that will burn your chin on the first bite and put you in recovery for a week) or just chop it up ;-)
  • Top with American cheese and place the top piece of bread.
  • Using a pan over medium heat, squirt a little cooking oil and place sandwich in pan giving it a little circular motion to evenly spread the oil and butter.
  • Cook until golden brown checking the underside with a spatula from time to time.
  • Flip the sandwich and push down gently on the bread with spatula, cover and cook an addition minute or so.
  • Slide it out, slice it up, enjoy.

2 slices rye bread
4 -6 slices kosher salami, thinly sliced
2 slices American cheese (cheddar may also be used)
1 teaspoon butter

Steps:

  • Fry salami until fat has rendered (I like mine a little burnt around the edges). Note: it's a good idea to make a cut in the salami slices so that they'll lay flatter after they're cooked.
  • Drain salami on paper towels.
  • Spread butter on one side of each slice of bread.
  • Place one slice of cheese on unbuttered side of bread.
  • Top with fried salami slices.
  • Top salami with remaining slice of cheese.
  • Place unbutter side of remaining slice of bread on top of the cheese.
  • Heat frying pan to low/medium heat.
  • Place sandwich in pan and cook until golden brown.
  • Flip sandwich and repeat with the other side.

1/2 cup olive oil
3 tablespoons white wine vinegar
1 large shallot, minced
4 teaspoons minced fresh oregano
1 rectangular 10x7x1 1/2-inch bread loaf (such as ciabatta)
3 ounces sliced provolone cheese
4 ounces sliced Italian Genoa salami
4 ounces sliced Black Forest ham
3 tablespoons finely chopped pitted brine-cured green olives
3 tablespoons capers, chopped
3 tablespoons minced peperoncini
3 tablespoons butter, room temperature
3 ounces Teleme or Fontina cheese, grated (about 1 cup)
1 cup thinly sliced iceberg lettuce

Steps:

  • Whisk first 4 ingredients in small bowl; season dressing with salt and pepper.
  • Cut top crust (about 1/3 inch) off bread and discard. Cut bread horizontally in half. Arrange provolone cheese on cut side of bottom half, covering completely. Top with layer of salami, then ham. Mix olives, capers, and peperoncini in small bowl; spread relish over ham. Press top half of bread, cut side down, atop relish; spread with 1 1/2 tablespoons butter.
  • Heat heavy large skillet over medium heat 3 minutes. Place sandwich, buttered side down, in skillet. Using another skillet, press sandwich to compact slightly. Cook until golden, about 5 minutes. Spread top of sandwich with remaining 1 1/2 tablespoons butter. Using large spatula, turn sandwich over. Press again with second skillet. Cook until bottom is golden and cheese melts, about 5 minutes.
  • Transfer sandwich to work surface. Lift off bread top; sprinkle with Teleme cheese, lettuce, and dressing. Press bread top onto sandwich and cut into quarters.

The combo of sweet and hot is something that makes my taste buds bounce! These soppressata packets stuffed with creamy robiola cheese are so simple, yet the most satisfying combination of sweet, spicy, fatty and salty - the perfect bite.

1 pound soppressata salami (at least 3 inches in diameter), thinly sliced (see Cook's Note)
Two 100-gram packets robiola cheese, such as Nonno Nanni
1/4 cup honey
1 teaspoon crushed red pepper flakes
Kosher salt

Steps:

  • Preheat a grill pan over high heat.
  • Lay out slices of soppressata on a work surface. Top each slice with 1 teaspoon of robiola cheese. Fold the bottom of each slice over the cheese, then fold the sides over and fold again to cover the cheese completely. Continue until all the slices are filled.
  • Place half of the soppressata pockets seam-side down on the hot grill pan until charred and you can hear and maybe see some cheese sizzling out, about 1 minute. Flip and cook until charred and you can see the packets deflating as the cheese melts, about 30 seconds. Transfer to a serving dish. Repeat with the remaining soppressata pockets.
  • Meanwhile, cook the honey in a small skillet over medium heat until bubbling, 2 to 3 minutes. Add the pepper flakes and cook for 30 seconds. Season with salt to taste and remove from the heat.
  • Drizzle the soppressata pockets with the spicy honey and serve.

On the Grill or on the Griddle.... this sandwich is out of this world good! My daughter Noel created this sandwich for her children, and it has become a very popular alternative to a plain grilled cheese sandwich! This is easy to make, and takes an old standby to a whole new level....

MEAT
2 slice salami, cotto salami, or garlic salami
CHEESE
1 Tbsp cheese whiz
2 slice american cheese or swiss cheese
BREAD
2 slice bread (italian, wheat, white or rye)
BUTTER
1 Tbsp butter or margarine on outside of bread slices for grilling
SPICE
garlic powder to sprinkle on buttered side of bread

Steps:

  • 1. Place two slices of salami of choice on outdoor grill or in skillet in kitchen. Fry about 1-2 minutes on each side on Medium heat... until meat is cooked and darkened to desired doneness. Set aside until needed for assembling sandwich.
  • 2. Spread Cheese Whiz on inside of a slice of bread. Add a slice of fried salomi, then a slice of cheese, then a slice of salami, another slice of cheese. Top with another slice of bread.
  • 3. Butter both sides of sandwich, sprinkle with garlic powder (do not use garlic salt).
  • 4. Place on medium heat on outdoor grill.. or medium heat on stove top griddle. Cook until cheese melts and bread toasts light brown. Remove from heat.
  • 5. Cut sandwich on an angle, serve with soup and a salad.
