Steps:
- Preheat grill on high with griddle or grill safe pan in place. Oil well.
- Pat dry fillets.
- In a small bowl, put 2 teaspoons butter, 2 teaspoons lemon juice, and 1/2 teaspoon garlic powder. Microwave for 10 seconds and mix well.
- Brush both sides of the fillets with the butter mixture. Do this quickly before the solution firms up.
- Lightly salt and pepper to taste.
- Grill for about 4 minutes per side with an open lid.
- Serve hot off grill.

- Tear the foil into 6 equal pieces for each tilapia filet. Place a tilapia filet on each piece of foil.
- Preheat the grill over medium high heat (approximately 400 degrees F).
- Drizzle the olive oil over each filet and sprinkle each one with approximately 1/2 tsp Lemon Pepper Seasoning.
- Place directly on the grill for 8-10 minutes until the tilapia reaches an internal temperature for 145 degrees F.
- Be careful when unwrapping the foil packets and then the tilapia is ready to enjoy!

- Preheat the oven to 450 degrees F. Place a heavy-duty baking pan sprayed with nonstick spray in the oven to heat.
- Mix together the melted butter, Dijon and dill in a pie plate. In another pie plate, combine the panko, cayenne and some salt and pepper. Dredge the fish through the melted butter mixture and then through the panko. Place on the hot sheet trays in the oven and bake until cooked through and lightly golden, 12 to 15 minutes.
- Assemble the sandwich by slathering the toasted split roll with Tartar Sauce, topping with the breaded fish fillet and adding the tomato slices and shredded lettuce.
- Mix the mayonnaise, relish, dill, mustard and hot sauce together in a small bowl. Cover with plastic wrap and refrigerate 1 hour before serving.
LEMON GARLIC TILAPIA
Steps:
- Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.
- Rinse tilapia fillets under cool water, and pat dry with paper towels.
- Place fillets in baking dish. Pour lemon juice over fillets, then drizzle butter on top. Sprinkle with garlic, parsley, and pepper.
- Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes.

- Preheat grill to high (450-500°F). (Alternatively, preheat a grill pan over high heat.) Zest lemon to yield 1 teaspoon. Cut the lemon in half crosswise.
- Combine butter, garlic and lemon zest in a small microwave-safe bowl. Microwave on Medium until the butter is melted, about 90 seconds, stirring halfway through. Sprinkle tilapia with salt and pepper; brush 1 side of each fillet with about 1 teaspoon of the butter mixture.
- Oil the grill rack by soaking a paper towel in oil and holding it with tongs to rub over the rack. Place the tilapia, buttered-sides down, on the oiled rack. Brush the exposed sides of the fish evenly with the remaining butter mixture. Cook until charred on the bottom, 3 to 4 minutes. Flip gently and continue grilling until the fish is opaque, 2 to 3 minutes. Transfer to a plate and let rest for 5 minutes.
- Place the lemon halves, cut-side down, on the grill rack; cook until charred, about 2 minutes. Squeeze the charred lemons over the fish, and sprinkle with parsley.
