SPIRITED PEARS image

Yield 7 250 ml.

Number Of Ingredients 7

1 cup sugar
2 cups water
8 1/2 cups quartered, peeled, cored pears, treated to prevent browning.
Per jar:
1 tbsp brandy, rum or red wine
or,
1 1/2 tsp Kahlua, cognac or creme de menthe

Steps:

  • Over medium-high heat, combine sugar and water. Bring to a boik, stirring to dissolve sugar. Add pears, stirring constantly, and return to a boil. Reduce heat and boil gently for 5 minutes. Pack pears into hot jars and add rum or spirit. Ladle hot syrup into jar to cover pears. Remove air bubbles and adjust headspace by adding hot syrup if needed. Process for 20 minutes.
