Grilled cheese that will melt in your mouth! For a delicious appetizer, quarter the sandwiches and serve on a platter with sliced, tart green apples! Adapted from Delicious Living magazine and changed. Feel free to try fig, peach, or pineapple preserves instead of the apricot! Yum!

Number Of Ingredients 6

2 teaspoons salted butter, softened
8 slices whole wheat french bread, 1/4-inch thick
4 tablespoons cream cheese, softened (or mayonnaise)
2 -4 tablespoons apricot fruit spread, to taste (or preserves)
4 ounces havarti cheese, sliced
1 large avocado, sliced

Steps:

  • Heat a large nonstick skillet over medium high heat. Butter 4 bread slices on one side. Place slices, butter-side down, on a clean work surface. Spread 1 tbls. cream cheese(or mayonnaise) on each slice. Now spread 1/2 to 1 tbls. fruit spread in a thin layer on top of cream cheese. Top with Havarti cheese and layer with avocado slices. Cover with remaining bread; butter tops.
  • Place 2 sandwiches in the pan and cook for 2 to 3 minutes, until bread is golden brown and cheese has begun to melt. Flip sandwiches over, pressing down slightly with a spatula. Continue cooking until golden brown. Serve immediately. Enjoy!

1 tablespoon(s) butter, softened
8 slice(s) french bread, 1/4" thick slices
2-4 tablespoon(s) fruit spread or preserves (apricot, strawberry, raspberry, fig, peach, etc. your choice)
4 ounce(s) havarti cheese, sliced (can substitute gruyere, muenster or gouda)
1 large avocado, sliced

Steps:

  • Heat a large nonstick skillet over medium heat. Butter four bread slices on one side only. Place slices, butter-side down, on a clean surface. Spread 1/2-1 tablespoon fruit spread or preserves of choice in a thin layer on each slice. Top with cheese and layer with avocado slices. Cover with remaining bread; butter tops.
  • Place two sandwiches in the pan and cook for 2-3 minutes, until bread is golden brown and cheese has begun to melt. Flip sandwiches over, pressing down slightly with a spatula. Continue cooking until golden brown. Serve immediately.

2 teaspoons unsalted butter, softened
8 slices French bread, cut into 1/4-inch slices (I used whole wheat French)
4 tablespoons fig fruit spread or 4 tablespoons preserves
4 ounces havarti cheese, sliced
1 large avocado, sliced
fresh mint leaves, chopped (my addition)
lemon juice
cracked black pepper

Steps:

  • Heat a large non-stick skillet over medium-high heat. Butter 4 bread slices on one side only.
  • Put the slices, buttered side down on a clean plate. Spread the fig preserves in a thin layer on EACH side of the bread slices.
  • Top with the Havarti chesse. Immediately after slicing up the avocado, drizzle with lemon juice to stop browning. Place a layer of avocado slices on the bread. Garnish with a few mint leaves and black pepper. Put the other slice of bread on top. Butter the tops.
  • Place 2 sandwiches in the pan and cook until golden brown and the Havarti cheese has started to melt, about 2-3 minutes.
  • Flip the sandwiches over and lightly press down with a spatula. Cook the other side until brown. Transfer to warming plate and cook the other two sandwiches.
  • Serve hot. Really delicious served with slices of tart green apples!
