- Pulse ham in food processor until finely ground. Combine with pork, eggs, cracker crumbs, brown sugar, pineapple and juice, mustard and cloves. Mix lightly but thoroughly. Shape into eight patties. Using fingertips, make a shallow indentation in center of each patty so it remains flat while grilling. Refrigerate 1 hour., Grill burgers, covered, on a greased rack over medium-high direct heat for 5-6 minutes; turn and grill another 3-4 minutes. Add a slice of cheese to each burger; grill, covered, until cheese melts, 1-2 minutes more. Remove from heat when a thermometer reads 160°., Place a burger on bottom half of each roll; add two tomato slices. Drizzle with 1 tablespoon honey mustard dressing. Divide arugula evenly among rolls; top each burger with a few sprigs. Replace top half of roll. If desired, serve with additional dressing.

- Snip enough basil to equal 1/3 cup. In large bowl combine half the snipped basil and ground ham. Shape in four 3/4-inch-thick patties.
- Grill patties on rack of charcoal or gas grill, covered, directly over medium heat for 14 to 18 minutes, turning once, until patties register 160 degrees F with instant-read thermometer. Add pineapple to grill during last 6 minutes of grilling time for patties, turning once.
- Meanwhile, in bowl combine mayonnaise, mustard, honey, and remaining snipped basil. Spread on cut side of roll bottoms. Layer patties, remaining basil leaves, pineapple, and roll tops.

HAWAIIAN HAMBURGERS WITH GRILLED PINEAPPLE
Plan ahead the shaped uncooked burger patties need to marinate for a minimum of 6 hours to blend the flavors before grilling. If possible use fresh pineapple rings for this about 1/2-inch thick or a little larger. If you prefer a little kick then add in a small amount of cayenne pepper --- You can also use half ground pork and beef --- you will LOVE these burgers!

- In a large bowl whisk/mix the first six ingredients together until well blended.
- Add in the ground beef with garlic, green onions, black pepper and salt; mix to combine.
- Shape the ground beef into 7-8 patties (about 1-inch thick).
- Place the shaped patties on a baking sheet; cover with plastic wrap and refrigerate for about 6 hours.
- Grill the burgers over medium-high heat, brushing with soy sauce while grilling.
- Grill for about 6 minutes per side.
- The last 4 minutes or grilling place the pineapple slices on the grill; lightly brown on both sides (about 2 minutes per side).
- Place a lettuce leaf on each crusty bun.
- Top with a grilled burger and then a slice of grilled pineapple.
