GRILLED HALLOUMI
Grilled halloumi is a simple and delicious Mediterranean appetizer that's ready in minutes. Cook on an indoor or outdoor grill and serve with a fresh salad.

Steps:
- Drain the halloumi and slice in wide thin pieces, about 8 slices. Pat the slices very dry with paper towels.
- Heat the olive oil in a grill pan or heavy skillet over medium heat. Add the sliced halloumi and cook undisturbed until the bottoms are well-browned, about 3-4 minutes.
- Use a spatula or tongs to flip the halloumi slices and cook on the other side until browned, about 2-3 more minutes.
- Plate the grilled halloumi with sliced tomatoes, sliced cucumbers, fresh mint, zaatar and a drizzle of olive oil, if desired

GRILLED HALLOUMI SALAD
Salty, sweet and perfect for the grill, halloumi cheese pairs with crisp red onions, tender zucchini, tart lime juice and fruity olive oil in this delicious salad. Halloumi, a goat and sheep milk cheese with a distinctive "squeaky" texture, doesn't melt so you can throw it right on the grill. Delicious as an appetizer, add some olives and pita bread for a light summer entrée.

Steps:
- Prepare a grill for medium-high heat cooking.
- In a large bowl, combine cheese, zucchini and onions with 2 tablespoons of the oil.
- Toss together to coat.
- Arrange cheese, zucchini and onions on the grill, and cook, turning occassionally, until just golden brown and cooked through, 2 to 4 minutes per side.
- Transfer cheese to a cutting board and quarter each piece.
- Arrange cheese, onions and zucchini on a large platter.
- Drizzle with remaining 1 tablespoon oil, then squeeze limes over the top. Serve warm.

- Brush olive oil over both sides of each cheese slice.

- Place blueberries and red currants into a mixing bowl. Add 2 tablespoons mint, 2 tablespoons cilantro, marjoram, habanero, olive oil, agave syrup, and juice of 1 lime. Mix and set aside.
- Heat a nonstick griddle over medium-high heat. Cook cashews until browned, stirring often to keep from burning, 8 to 10 minutes. Transfer cashews to a plate and set aside. Reduce heat to medium and brown halloumi cheese slices, 2 to 3 minutes per side.
- Place halloumi cheese onto a plate, top with berry salsa mixture and remaining 1 tablespoon mint and cilantro. Chop cashews and spread on top of halloumi. Garnish with lime wedges from remaining lime. Serve immediately.

Steps:
- Preheat grill.
- Slice Halloumi in half lengthwise.
- Rub Halloumi halves with 1 tablespoon of the olive oil.
- Drizzle one tablespoon of the olive oil on the red onion slices and one tablespoon on the zucchini slices.
- Grill Halloumi, red onions and zucchini, until beginning to blacken, turning frequently, about 2-4 minutes per side.
- Transfer Halloumi to a cutting board and slice each piece in half to make four pieces.
- Transfer Halloumi and vegetables to large platter.
- Drizzle with olive oil and lime juice to taste, and sprinkle with freshly ground pepper.
- Serve warm.

GRILLED HALLOUMI CHEESE
Steps:
- Brush the cheese with olive oil and place onto a medium hot grill for 2 minutes on each side, or until marked. Remove and slice into 1/2-inch pieces. Sprinkle with oregano. Drizzle the olive oil on top and squeeze the lemon juice over the cheese. Serve with grilled pita bread.
