2 cups buttermilk
1/4 cup mustard (use your favorite, I use Dijon)
3 -4 garlic cloves, smashed
2 tablespoons low sodium soy sauce
2 tablespoons extra virgin olive oil
2 teaspoons paprika
cayenne pepper (a few grains)
1/2 teaspoon dried marjoram
2 (1 1/2 lb) lean flank steak, trimmed
vegetable oil cooking spray
1 1/4 cups plain low-fat yogurt
1/4 cup red wine vinegar
2 tablespoons Dijon mustard
1 tablespoon grated parmesan cheese
1 tablespoon extra virgin olive oil
2 garlic cloves, smashed
1/4 teaspoon dried marjoram
1/8 teaspoon salt
1/8 teaspoon cayenne pepper
minced fresh parsley (optional)

Steps:

  • Combine first 8 ingredients, for marinade, in a large, shallow non-mental dish; stir well.
  • Add steaks, turning to coat.
  • Cover and marinate in refrigerator at least 2 hours or overnight, turning steaks occasionally.
  • Steaks can be marinated in a zip lock bag, remove air and seal tightly, turn bag now and then.
  • Remove steaks from marinade and discard marinade.
  • Place steaks on a rack coated with vegetable spray and place rack in a roasting pan.
  • Broil 5 inches from heat- 4 minutes on each side or to desired degree on doneness.
  • OR barbecue to your liking.
  • To serve, cut steak diagonally across grain into thin slices. Serve chilled or at room temperature with mustard sauce.
  • Mustard Sauce: Combine first 9 ingredients in a small bowl; stir well. Cover and chill thoroughly.
  • Garnish with fresh parsley if desired.

1 flank steak (2 to 2 1/2 pounds)
1/3 cup dry white wine
1/3 cup good olive oil
1/3 cup Dijon mustard
Kosher salt and freshly ground black pepper
1/3 cup chopped shallots (2 shallots)
1 tablespoon minced garlic (3 cloves)
2 tablespoons coarsely chopped fresh tarragon leaves

Steps:

  • Place the steak flat in a large nonreactive dish such as glass or porcelain. Using the tip of a sharp knife, lightly score the top of the steak diagonally in a large crisscross pattern to make what looks like 1-inch diamonds across the steak. This allows the marinade to penetrate into the meat.
  • In a 2-cup measuring cup, whisk together the wine, olive oil, mustard, 1 teaspoon salt, and 1/2 teaspoon pepper. Stir in the shallots and garlic. Pour the marinade over and under the steak until it's completely coated. Scatter the tarragon on top. Cover the dish with plastic wrap and allow it to marinate in the refrigerator for at least 2 hours but preferably overnight.
  • Half an hour before serving, remove the steak from the refrigerator and heat a charcoal grill with a layer of hot coals. (You can also set a gas grill on medium-high heat.) Sprinkle the steak with 1 teaspoon salt and 1 teaspoon pepper. Discard the remaining marinade.
  • Grill the steak for about 5 minutes per side for medium-rare. Place the steak on a clean plate, cover tightly with aluminum foil, and allow to rest for 10 minutes. Slice the steak thin, cutting diagonally across the grain. Sprinkle with salt and serve hot.

1-1/2 cups fresh cilantro leaves
1/2 medium red onion, coarsely chopped
1 to 2 chipotle peppers in adobo sauce
5 garlic cloves, sliced

1 teaspoon grated lime zest
1/4 cup lime juice
3 teaspoons dried oregano

Steps:

  • For chimichurri, place the first 5 ingredients in a food processor; pulse until finely chopped. Add oil, vinegar, lime zest, lime juice, oregano, 1/2 teaspoon salt and 1/4 teaspoon pepper; process until blended. Transfer to a bowl; refrigerate, covered, until serving., Sprinkle steaks with the remaining salt and pepper. Grill, covered, over medium heat 5-8 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). 2 tablespoons soy sauce
1/4 cup sherry vinegar
3 garlic cloves, lightly crushed with the side of a knife blade and quartered
1/4 teaspoon ground cloves
2 tablespoons fresh thyme leaves, stripped from 3 or 4 sprigs
1/2 teaspoon black pepper
1 teaspoon Dijon mustard
1/2 cup blackstrap molasses
2 pounds flank steak
1 head garlic
2 tablespoons grapeseed oil
2 shallot cloves, minced
1 cup Madeira wine
1 cup water
1 teaspoon beef base
Salt and freshly ground black pepper
2 pounds sweet yuca/cassava root, about 4 to 8 roots, rind and woody cordon removed, peeled, and light fleshy part cut into 1-inch segments (do not consume until thoroughly cooked)
2 tablespoons sherry vinegar
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/2 cup extra-virgin olive oil
2 tablespoons minced fresh flat-leaf parsley leaves

Steps:

  • To make the marinade, add soy sauce and vinegar to blender, replace lid and turn on blender. Through the feed opening add, 1 at a time, the garlic, ground cloves, thyme, black pepper, mustard and molasses. Place flank steak in a nonreactive container, add marinade and coat steak. Cover and refrigerate for at least 2 hours.
  • While the steak is marinating, roast the garlic for the demi-glace. Pre-heat oven to 350 degrees F. Cut root end from end of head of garlic and use a piece of heavy duty aluminum foil to mold an enclosure around the garlic to include a base to keep it from tipping over. Pour 1 tablespoon of the grapeseed oil over the garlic from the root end so the oil flows between the papery skins and the cloves, reserving the rest of the oil for sauteing the shallots. Roast for 40 minutes to 1 hour, being sure to monitor so the garlic doesn't burn. Remove from oven and let cool to room temperature.
  • To make yuca, boil until tender in enough water to cover. Drain well, rinse and set aside briefly. Make a dressing by adding vinegar, salt and thyme to a blender and adding the olive oil in a slow thin stream through the feed opening with the blender running. Mix yuca with enough dressing to coat and refrigerate.
  • Heat grill (or use grill pan). Remove steak from marinade, discard marinade, and sear each side of steak. Cook to your desired level of doneness and transfer to a cutting board to let rest for 5 minutes.
  • To complete the demi-glace, heat the remaining tablespoon of grapeseed oil in a skillet over medium-high heat. Add shallots and saute until translucent. Deglaze pan with wine and allow most of it to evaporate. In a small bowl, whisk together water and beef base and add to pan. Squeeze the roasted garlic cloves directly from their skins into a small bowl and mash them. Add the roasted garlic to the pan and stir until it is integrated with the rest of the contents of the pan. Allow to reduce by half. Season with salt and pepper, to taste, remove from heat and keep warm.
  • Slice steak on the bias into 1/4-inch thick strips and arrange on plate alongside yuca. Spoon sauce over steak. Garnish with minced parsley.

1 1/2 lb flank steak
1/3 c dry sherry (not cooking sherry)
1/3 c soy sauce
2 Tbsp green onions, chopped
1 Tbsp cracked black pepper
2 tsp coarse grained Dijon mustard
1 tsp fresh ginger; peeled and chopped
SHERRY-MUSTARD SAUCE
8 oz plain yogurt (low-fat is fine)
2 Tbsp green onion, chopped
2 Tbsp dry sherry (not cooking sherry)
2 tsp coarse grained Dijon mustard
1 pinch salt

Steps:

  • 1. Score the steak 1/4 inch deep on both sides; place in a large shallow dish.
  • 2. Combine 1/3 cup sherry and next five ingredients in a small bowl; stir well.
  • 3. Pour the marinade mixture over steak; cover and marinate in the refrigerator for 8 hours.
  • 4. For the sauce: Combine all sauce ingredients in a small bowl; stir well. Cover and chill 1 hour.
  • 5. Remove the steak from the marinade; discard marinade. Grill steak over medium coals or broil for 6 inches from heat for 6 to 8 minutes on each side or until your desired degree of doneness.
  • 6. To serve, slice diagonally across the grain into thin slices. Serve with Sherry-Mustard Sauce.
