I've had this recipe for years, so it's long been a family favorite. The jalapeno stuffing adds some spice to ordinary grilled chicken.

4 to 8 jalapeno peppers, seeded and chopped or 1 can (4 ounces) chopped green chilies
2/3 cup lemon juice, divided
1/4 cup minced fresh parsley or 1 tablespoon dried parsley flakes
6 to 10 garlic cloves, minced
2 teaspoons dried rosemary, crushed
2 teaspoons dried thyme
8 bone-in chicken breast halves (8 ounces each)
2/3 cup chicken broth
2 teaspoons pepper
1/2 teaspoon grated lemon zest

Steps:

  • In a small bowl, combine the peppers, 1/3 cup lemon juice, parsley, garlic, rosemary and thyme. With fingers, carefully loosen skin from the chicken breasts; gently stuff pepper mixture under the skin of each chicken breast. , Place in a greased 13x9-in. baking dish. Combine the broth, pepper, lemon zest and remaining lemon juice; pour over chicken. Cover and refrigerate for at least 6 hours. , Drain and discard marinade. Place chicken skin side up on grill. Place chicken skin side up on grill. Grill, covered, over medium heat for 12-14 minutes. Turn and grill 12-14 minutes longer until a thermometer reads 170°.

1/4 cup honey
2 tablespoons balsamic vinegar
2 tablespoons extra-virgin olive oil
6 jalapeño peppers, seeded and minced
4 garlic cloves, grated or minced
1 tablespoon dried cilantro
2 teaspoons kosher salt
1 teaspoon black pepper
3 pounds bone-in chicken pieces

Steps:

  • In a small bowl or measuring cup, whisk together honey, balsamic vinegar, olive oil, minced jalapeno, grated garlic, cilantro, salt and pepper.
  • Pour marinade into a large ziptop plastic bag or large baking dish; add chicken and toss to coat. Seal/cover and refrigerate for at least 20 minutes or up to overnight, turning chicken occasionally.
  • Heat grill* to medium. Oil grate. Place chicken on grill, close lid; turn chicken pieces occasionally and cook until golden brown and cooked through, about 30 minutes.

Vegetable oil, for the grill
1 jalapeno pepper
1 pound tomatillos, husked and rinsed
1 orange, halved
2 limes, halved
1 small bunch cilantro, chopped 1 tablespoon fresh oregano
1 teaspoon chili powder
2 cloves garlic
Kosher salt and freshly ground pepper
1 1/2 pounds skinless, boneless chicken thighs (about 6)
3 assorted bell peppers, halved and seeded
1 poblano chile pepper, halved and seeded
2 small red onions, cut into 1-inch-thick rings
1/2 pineapple, cored and sliced ½ inch thick
6 corn tortillas
6 heads Little Gem or other baby lettuce, quartered
1/2 cup crumbled Cotija cheese

Steps:

  • Preheat a grill to medium high and brush the grates with vegetable oil. Make the dressing: Grill the jalapeno and tomatillos, turning, until well charred and softened, about 5 minutes for the jalapeno and 20 minutes for the tomatillos. Transfer to a platter. Grill the orange and 1 lime cut-side down until well marked, about 2 minutes. Remove to the platter. Turn off the grill.
  • Stem the jalapeno (remove the seeds for less heat); transfer to a blender. Add the tomatillos, the juice from the grilled orange and lime, the cilantro, oregano, chili powder and garlic. Season with salt and pepper; puree until smooth. Transfer half of the dressing to a large bowl; add the chicken and toss. Cover and refrigerate 4 to 6 hours. Refrigerate the remaining dressing until ready to serve.
  • Reheat the grill to medium high; brush the grates with more vegetable oil. Brush the bell peppers, poblano and red onions with vegetable oil. Grill, turning, until charred and softened, about 15 minutes; transfer to a cutting board. Meanwhile, remove the chicken from the marinade and grill, turning once, until cooked through, 10 to 12 minutes; transfer to the board. Brush the pineapple and the remaining halved lime with vegetable oil. Grill until marked, about 3 minutes; transfer to the board. Warm the tortillas on the grill.
  • Arrange the lettuce on a platter. Slice the bell pepper, poblano, chicken and pineapple. Arrange on top of the lettuce along with the red onions. Sprinkle with the cheese and season with salt and pepper. Serve with the grilled lime, tortillas and reserved dressing.

1/2 lb Jalapeño Peppers
2/3 cup Cider Vinegar
2 cups Sugar
Juice from 2 Limes
1 TBSP of Minced Garlic
1 tsp Chili Powder
1 tsp Cayenne Pepper
1 tsp Turmeric
1 tsp Celery Seed
5 large Boneless Chicken Breasts
1/3 cup Sour Cream
3 TBSP Lime Juice
1/2 TBSP Chipotle Oil
1/2 TBSP Tony Chachere's Seasoning
1/4 tsp Cumin
Salt to taste

Steps:

  • ● Slice the Jalapeños into ¼-inch thick rounds. ● Add the vinegar, sugar, and lime juice, turmeric, celery seed, cayenne pepper, chili powder and garlic in a saucepan, on medium heat. ● Bring the mixture to a boil; reduce the heat and simmer for 5 minutes. ● Add the sliced Jalapeños to the saucepan and bring the mixture back to a boil for another 5 minutes. ● Remove from heat. Let the sauce stand for 20 minutes to thicken. ● Marinate the boneless skinless chicken in the Jalapeño marinade in the refrigerator for up to 4 hours. ● To make the Chipotle Lime Creama: ● In a small bowl whisk together the sour cream, lime juice and chipotle oil. Add Tony Chachere's seasoning and cumin. ● Season to taste with salt; whisk. ● Refrigerate until ready to use. ● When marinating time is done, turn on your BBQ on to medium, lay the chicken on the grill, but not directly on the flame. ¼ cup reduced-sodium soy sauce
¼ cup olive oil
1 ½ teaspoons dried parsley flakes
½ teaspoon dried basil

5 skinless, boneless chicken breasts, thinly sliced

Steps:

6 boneless, unskinned chicken breasts with the main wing bone attached, about 2 1/2 pounds
4 oranges
2 limes
1 lemon
2 cups finely chopped onions
2 tablespoons finely minced garlic
3 1/2 tablespoons finely diced, seeded jalapeno peppers
1 tablespoon finely chopped fresh sage or half the amount dried
3/4 cup finely chopped parsley, loosely packed
1 cup loosely packed, coarsely chopped fresh coriander leaves
1 cup olive oil
Peanut, corn or vegetable oil for greasing the grill

Steps:

  • Place the chicken breasts in a flat rimmed dish.
  • Using a swivel-bladed paring knife, pare away the zest or thin outer layer of two of the oranges and one of the limes and the lemon. Set the zest aside. Squeeze the four oranges, the two limes and the lemon. You will need one and one-half cups of orange juice, one-fourth cup lime juice and two tablespoons of lemon juice. Set aside.
  • Put the onions, garlic and jalapeno pepper into the container of a food processor. Blend briefly (about 20 pulses off and on). Do not overblend or make a puree.
  • Add the zest of the oranges, the lime and the lemon. Pulse (that is to say, turn the machine on and off at quick intervals) in order to blend, about 10 times.
  • Add the orange, lime and lemon juices, sage, parsley, coriander and the olive oil. Blend thoroughly, about one minute.
  • Pour half the marinade in the bottom of a dish large enough to hold the breast halves in one layer. Place the breast halves skin-side up in the dish. Spoon the remaining marinade over. Let stand at least 30 minutes at room temperature.
  • As the breasts marinate, preheat a charcoal, gas or electric grill to medium heat. The grill should be scrubbed and scraped as clean as possible.
  • When ready to cook, brush the grill evenly with oil. Remove the breast pieces and place them skin-side down on the grill. Brush the top of each half with a little of the marinade. Let cook 10 minutes. Remove the pieces from the grill and dip them once more in the marinade. Return the pieces skin-side down onto the grill but give them a quarter lateral turn to form a pattern. Grill five minutes longer.
  • Dip the pieces once more in the marinade and arrange the pieces skin-side up on the grill. Continue cooking five to 10 minutes longer, depending on the thickness of the pieces.

This is another great Jalapeno Chicken recipe by Weight Watchers. It's out of the 2000 "Day by Day" cookbook. It has 3 points per serving. I have done both blender and fine chopping and they are both great. I find the extra bits and pieces by chopping instead of blending adds a great crunch to the dish and makes it look outstanding. I came up with this cilantro-lime marinated grilled chicken when I was craving Mexican food one night. Try using the marinade on pork tenderloin or beef flank steak. Amazing! Use one recipe of marinade per pound of meat.

1 (4 ounce) can diced green chiles
½ cup canola oil
¼ cup chopped fresh cilantro
2 limes, zested and juiced
2 cloves garlic, finely chopped
½ jalapeno pepper, ribs and seeds removed, finely minced
1 tablespoon honey
1 teaspoon kosher salt
½ teaspoon ground black pepper
1 pound skinless, boneless chicken breasts

Steps:

  • Combine chiles, canola oil, cilantro, lime zest and juice, garlic, jalapeno, honey, salt, and pepper in a 1-gallon freezer bag and seal completely. Gently massage the bag to combine ingredients well. Add chicken and turn to completely coat with marinade.   • Preheat an outdoor grill for medium heat and lightly oil the grate.

I found this recipe on another web site and decided to make it for dinner last evening. Everyone loved it. Chicken breasts are wrapped around a cheese stuffed jalapeno, then sealed with bacon and grilled. Yummy!

6 boneless skinless chicken breasts, pounded to 1/4 inch thickness
1 (16 ounce) bottle Italian dressing
3 fresh jalapeno peppers, halved lengthwise and seeded
2 cups water
1 (3 ounce) package cream cheese, softened
6 slices bacon

Steps:

  • In a sealable bag, pour Italian dressing over chicken and refrigerate 2 to 4 hours.
  • Bring a small saucepan water to a boil and add jalapenos.
  • Return to a boil and shut off heat allowing jalapeno to seep for 5-10 minutes.
  • Pour off water and drain jalapenos on a paper towel.
  • Once cool to handle, stuff each jalapeno with cream cheese.
  • Remove chicken from marinade; discard marinade.
  • Roll chicken breast around jalapeno peppers.
  • Wrap each chicken breast with a slice of bacon.
  • Secure with toothpicks.
  • Prepare the grill, by lightly oiling the grill grate and heating the grill to medium high heat.
  • Arrange wrapped chicken breasts on the prepared grill.
  • Grill for 20 minutes turning frequently, or until bacon is browned and the chicken juices run clear.
  • UPDATE: I tried baking the chicken at 375 degrees for 30 to 40 minutes and it came out very good as well.
