Grilled Pork Tenderloin with Guava Glaze and Orange-Habanero Mojo image

2 pork tenderloins, about 1 1/2 pounds each
Canola oil
Salt and freshly ground pepper
Ground cumin
Guava Glaze, recipe follows
Orange-Habanero Mojo, recipe follows
Mint sprigs, for garnish
1 cup guava marmalade
2 tablespoons Dijon mustard
2 tablespoons orange juice or water
Salt and freshly ground pepper
1/4 cup fresh lime juice
3 cups freshly squeezed orange juice
1/4 cup sour orange juice (optional)
1/2 small red onion, finely chopped
4 cloves garlic, finely chopped
1/2 habanero chile, finely chopped
1 teaspoon whole cumin seed
Salt and freshly ground pepper

Steps:

  • Heat grill to high. Brush pork with oil and season with salt, pepper, and cumin, to taste. Grill for 3 to 4 minutes. Turn the tenderloins over and brush with guava glaze and cook another 4 to 5 minutes, brushing with the glaze every few minutes. Remove from the grill, brush with more of the glaze and let rest for 10 minutes. Slice into 1/2-inch thick slices and drizzle with the Orange-Habanero Mojo. Garnish with mint sprigs.
  • Whisk together ingredients in a small bowl and season with salt and pepper, to taste.;
  • In a saucepan, combine citrus juices, onion, garlic, habanero, and cumin. Cook over medium heat until reduced by 1/2 and season with salt and pepper, to taste. Strain.

1 bag Success® Jasmine Rice, Success® White Rice or Success® Brown Rice
1 cinnamon stick
2 cans (14 1/2 oz.) low sodium chicken broth
1 Tbsp cumin powder
1/2 tsp salt
1/2 tsp pepper
1 pork tenderloin (about 1 lb)
2 Tbsps unsalted butter
1/2 cup onion, minced
4 Tbsps orange juice
1 pkg (10 oz.) frozen spinach, thawed and drained

Steps:

  • Prepare rice according to package directions adding cinnamon stick and using chicken broth for water.
  • Mix together cumin powder, salt and pepper; reserve 1/2 teaspoon. Rub seasoning mix onto pork and grill to desired doneness.
  • Melt butter in a medium skillet over medium heat; add reserved cumin mixture, onions, orange juice, and spinach. Saute for 5 minutes. Stir in cooked rice. Serve with grilled pork.

1/4 cup parsley
1/2 cup orange juice concentrate
2 tablespoons oil
2 tablespoons honey
2 tablespoons tomato paste
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon pepper
8 chicken thighs (or 4 chicken breasts or 16 chicken wings)

Steps:

  • Sti together garlic, parsley, concentrate, oil, honey, tomato paste, cumin, salt, and pepper; blend well.
  • Pour glaze into large bag, add chicken, and toss well.

I got this recipe from GMA's recipe mail. The combination of orange and cumin give this pork a tasty flavor. Enjoy it with the grilled sweet potato salad. I haven't tried it, but it look's like it is very easy to make.

3 1/2 lbs boneless pork loin
2 tablespoons olive oil
1 tablespoon kosher salt
1 1/2 teaspoons ground cumin
1 1/2 teaspoons fresh ground black pepper
1/2 cup freshly squeezed orange juice
1/4 cup freshly squeezed lime juice
1/4 cup white wine vinegar
2 tablespoons orange marmalade
2 tablespoons chopped fresh cilantro

Steps:

  • Preheat the oven to 400 degrees F.
  • Heat a large skillet over medium high heat. Rub the pork loin well on all sides with the olive oil, and season it with the kosher salt, cumin, and black pepper. Place the pork loin, fat side down, in the skillet and cook, turning occasionally, until well-browned on all sides, 10 to 12 minutes. Remove the pork from the skillet and place it in a small roasting pan or baking dish that holds it snugly.
  • In a medium bowl, combine the orange juice, lime juice, vinegar, and marmalade, and whisk well to combine. Drizzle the citrus mixture over the pork.
  • Place the roasting pan in the oven, and cook until the pork reaches an internal temperature of 140°F, basting the pork with the pan juices occasionally. (Take care not to overcook the pork.) Should the pan juices evaporate and begin to scorch before the pork is done, add a bit of water to keep it from burning.
  • Remove the pork from the oven, add the cilantro to the roasting pan, and swirl it in the pan juices. Allow the pork to rest for 7 to 10 minutes before slicing. Serve the pork thinly sliced, drizzled with pan juices.

1 cup orange juice
1/4 cup olive oil
2 cloves garlic, chopped
1 teaspoon salt
2 pork tenderloin (1 1/4 pounds each)
1/3 cup honey

Steps:

  • In a blender, combine the orange juice, olive oil, garlic, and salt, and blend until smooth. Place the tenderloins in a 2.5-gallon resealable plastic bag or a large bowl. Pour the marinade over them, seal or cover with plastic wrap, and marinate in the refrigerator for 8 hours or overnight.
  • Fire up the grill. Remove the tenderloins from the marinade and pat drive. Pour the marinade into a small saucepan, add the honey, and let the mixture boil until it is reduced to a syrupy consistency, about 20 minutes.
  • Meanwhile, brush the grill with oil and grill the pork over medium heat for 20 minutes, turning occasionally. Brush some of the orange glaze over the pork and continue to cook, brushing with more glaze, until an internal temperature of 150°F is reached (check with an instant-read thermometer), about 20 minutes more. Let the pork rest for a few minutes before slicing.
