GRILLED CHEESE WITH THOUSAND ISLAND DRESSING
A new twist on a classic grilled cheese sandwich! Enjoy with a nice bowl of tomato soup for comfort food on a cold day. Recipe courtesy Greg Morris for Food Network Magazine. I made a few adjustments using veggie bacon.

Steps:
- Cook the bacon in a large nonstick skillet over medium heat until crisp, about 6-8 minutes. Remove and place on a paper towel-lined plate.
- Heat the butter in the skillet over medium heat.
- Add 2 bread slices. Top each with one-quarter of the cheese and 2 strips bacon.
- Spread 2 bread slices with some of the dressing and press them on top of the sandwiches, dressing-side down.
- Cook until the cheese melts and the bread is golden, 3 to 4 minutes per side.
- Repeat to make 2 more sandwiches, adding more butter as needed.

ULTIMATE GRILLED CHEESE

- Preheat the oven to 400 degrees F. Arrange the bacon on a baking rack set over a sheet pan in a single layer and roast for 20 to 30 minutes, until nicely browned. Drain on a plate lined with paper towels and cut into 1-inch pieces.
- Meanwhile, combine the mayonnaise, mustard, parmesan, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a small bowl. Lay 12 slices of bread on a board and spread each one lightly with butter. Flip the slices and spread each one generously with the mayonnaise mixture. Don't neglect the corners!
- Grate the cheeses in a food processor fitted with the largest grating disk and combine. Distribute the bacon evenly on half of the slices of bread. Pile 1/3 cup grated cheese evenly on top of the bacon and top with the remaining bread slices, sauce-side down.
- Meanwhile, heat an electric panini press. When the press is hot, cook the sandwiches for 3 to 5 minutes in batches until the bread is toasted and the cheese is melted. Allow to cool for 2 minutes. Cut in half and serve warm.

What a yummy combination of flavors... I picked this "keeper" out of the Food Network magazine... I never would have thought to add Thousand Island Dressing to a grilled cheese and bacon sandwich... But boy-o-boy am I ever glad that someone else did!!

- 1. Fry bacon until crisp, drain on paper towels Wipe off griddle... Butter one side of all 8 slices of bread Add 4 slices of bread with butter side down to griddle Top each bread slice with a quarter of the cheese, and 2 strips of bacon...spread Thousand Island on the inside of each buttered "top" bread and put down dressing side touching bacon. Flip sandwiches and grill until golden brown

INSIDE OUT BACON GRILLED CHEESE

- Put the bacon in a large nonstick skillet over medium heat and cook, stirring, until golden brown and crispy, about 10 minutes. Transfer to a paper towel-lined plate to drain. Reserve the bacon fat.
- Add the bacon fat to a griddle over medium heat. Place the bread on the griddle and lightly toast one side. Remove from the griddle and arrange toasted-side down on a work surface. Divide 2 cups of the cheese and all of the bacon, tomatoes and chives over 4 slices of bread. Top with the other 4 slices of bread, toasted-side up, to make 4 sandwiches.
- Divide 1/2 cup of the remaining cheese into 4 piles on the griddle and place a sandwich over each pile, pressing down. Griddle for a few minutes until the cheese is browning and melted. Divide the remaining 1/2 cup of cheese into 4 piles on the griddle?one next to each sandwich. Then flip each sandwich onto a pile of cheese and cook for a couple of minutes until the center of each is melted.
GRILLED CHEESE SANDWICHES WITH BACON
A Cheddar-and-Monterey Jack grilled cheese is better with bacon.

- Put 2 slices of bread on a cutting board or work surface. Top each with 1 slice of the Cheddar, 2 slices of bacon, a slice of Monterey Jack cheese, the remaining slice of Cheddar and another slice of bread; press down lightly.
- Heat 1 tablespoon of the butter in a large skillet over medium-low heat. Add the sandwiches and cook until the bread toasts and the cheese is slightly melted, 3 to 5 minutes. Turn with a spatula and add the remaining 1 tablespoon butter to the pan. Cook until the second side is toasted and the cheese is melted, about 3 minutes more, adjusting the heat as needed to keep the bread from burning before the cheese melts.?
1000 ISLAND DRESSING
Steps:
- Mix all the ingredients together in a small serving bowl, whisking with a fork.
- This dressing is delicious spooned over veggie burgers or served as a dip with crudites. I also love it drizzled over a festive vegetarian nut roast the next day in a sandwich. Any unused dressing can be stored in an airtight container in the fridge for up to 4 days.
