PEPPERONI PIZZA GRILLED CHEESE
When you want a sandwich that will rock the house try my Pepperoni Pizza Grilled Cheese. Just make sure you enough for seconds!

Steps:
- Start building your sandwiches by placing four slices of sourdough bread on the counter Cover each slice of bread with a total of 2 cheese slices on each slice of bread.
- Place the pepperoni on top of the american cheese on each of the bottom slices of the sourdough.
- spread about 1 ounce of pizza sauce on top of the pepperoni on each sandwich
- Place half the mozzarella on top of the pizza sauce on each sandwich.
- Top the two finished sandwiches halves, with the other piece of sourdough that you have cheese already on, with the cheese facing the pepperoni.
- Melt the butter in a small pan over low heat, then using a pastry brush, brush one side of each of the sandwiches liberally with the melted butter
- Heat your pan on the stove top until it is hot enough to toast the bread.
- Place the buttered side down on the pan.
- Turn heat down to medium, and cover the sandwich with a pot lid to keep the heat in and help the cheese to melt. After about 3-4 minutes check the bread on the pan to see how the color is. It should be toasted a dark golden brown.
- Brush butter on the side that is up, then turn it over to repeat the process of toasting the bread. (Use the pot lid again to help melt the cheese) After 3-4 minutes check that side, to see how the color is.
- If the cheese is not fully melted, turn the heat down to low and keep the lid covering the sandwich until the cheese has melted. Just be careful not to burn the bread.
- Place sandwich on plate, cut in half, serve and enjoy!

PEPPERONI GRILLED CHEESE
This elevated recipe takes everything you know and love about garlic bread and pizza, and combines it into a grilled cheese sandwich unlike any other. We slather the outside of the bread with an assertive garlic Parmesan butter to create a delicious golden brown, crispy exterior. Layers of melted mozzarella and pepperoni make up the inside.

- Mash the butter with the Parmesan, garlic, parsley and a pinch each of salt and pepper.
- On a work surface, lay out 4 slices bread. Top each piece of bread with 2 slices mozzarella, 6 slices pepperoni, 1 more slice mozzarella and another slice of bread. Spread some of the herb butter on each sandwich.
- In a large nonstick skillet, cook the sandwiches in batches as needed over medium-low heat until browned and crisp, 3 to 4 minutes per side. Season with salt.
EASY PEPPERONI GRILL CHEESE SANDWICHES
So easy, so tasty. I keep the inexpensive packages of pepperoni on hand just for dressing up a normal grill cheese. You can use any cheese you have on hand, but DH and I like colby and american. Sauerkraught can also be added if desired as well as other bread types.

- butter one side of multi grain bread.
- place 1 slice american cheese,8 slices of pepperoni,and 1 slice american cheese on top of buttered bread.
- Place bread, buttered side down on stove top grill or skillet.
- Cover open faced sandwich with a skillet lid (this melts the cheese while the underside bread browns).
- When bottom side of bread is browned nicely, top open faced sandwich with the other piece of bread that has been lightly spread with dijon. (if adding kraut, do so at this point).
- Butter upper side of bread and turn to brown other side.
- At this point the cheese should be almost melted, so very little time is needed except to make the other side nice and brown.

- Spread 3 tablespoons butter on 1 side of each slice of bread. Place bread, butter side down, in a large cast-iron skillet or electric griddle over medium-low heat until golden brown, 2-3 minutes; remove. In a small bowl, combine cheddar, Monterey Jack and Gruyere. In another bowl, mix together remaining 3 tablespoons butter, mayonnaise, Manchego cheese and onion powder., To assemble sandwiches, top toasted side of 4 bread slices with pepperoni; add sliced Brie. Sprinkle cheddar cheese mixture evenly over Brie. Top with remaining bread slices, toasted side facing inward. Spread the butter-mayonnaise mixture on the outsides of each sandwich. Place in same skillet and cook until golden brown and cheese is melted, 5-6 minutes on each side. Serve immediately.
