Number Of Ingredients 10

4 cups finely chopped green tomatoes
2 cups packed brown sugar, divided
2 tablespoons lemon juice
1 teaspoon lemon extract
3/4 cup butter, softened
1-1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups old-fashioned oats
1/2 cup chopped walnuts

Steps:

  • Drain tomatoes on paper towels for 10 minutes. In a saucepan, combine tomatoes, 1 cup of brown sugar and lemon juice. Simmer, uncovered, for 20-25 minutes or until thickened. Remove from the heat and stir in extract; set aside. , In a bowl, cream the butter and remaining brown sugar. Add flour, baking soda and salt; mix well. Stir in oats and nuts. Press 2-1/2 cups on a greased 13-in. x 9-in. baking pan. Spread tomato mixture over crust. Crumble remaining oat mixture on top. Bake at 375° for 30-35 minutes or until golden brown. Cool.

4 cups green tomatoes, finely chopped
2 cups brown sugar, packed (divided)
2 tablespoons fresh lemon juice
1 teaspoon lemon flavor extract
3/4 cup unsalted butter, at room temperature
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups old fashioned oats
1/2 cup walnuts, chopped

Steps:

  • Drain tomatoes on paper towels for 10 minutes.
  • In a saucepan, add drained tomatoes, 1 cup of the brown sugar, and the fresh lemon juice; simmer,uncovered, for 20-25 minutes or until thickened, stirring occasionally.
  • Remove from the heat and stir in the lemon flavor extract and set aside.
  • In a large bowl, cream the butter and remaining 1 cup brown sugar.
  • Add flour, baking soda, and salt and mix well.
  • Stir in the oats and nuts.
  • Measure out 2 1/2 cups of this dry mixture and press it into the bottom of a greased 9x13" baking pan.
  • Spread the slighly cooled tomato mixture on top.
  • Crumble the remaining dry mixture over the top, like a crumb topping.
  • Bake at 375 F for 30-35 minutes, or until golden brown.
  • Let cool completely, then cut into 24 bars to serve.

This is a moist, spice-type cake...a good way to use some of those extra green tomatoes before frost hits. Sprinkle the finished cake with confectioners' sugar or frost with your favorite caramel or cream cheese frosting.

4 cups chopped green tomatoes
1 tablespoon salt
½ cup butter
2 cups white sugar
2 eggs
2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon baking soda
¼ teaspoon salt
½ cup raisins
½ cup chopped walnuts

Steps:

  • Place chopped tomatoes in a bowl and sprinkle with 1 tablespoon salt. Let stand 10 minutes. Place in a colander, rinse with cold water and drain.
  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  • Cream butter and sugar. Add eggs and beat until creamy.
  • Sift together flour, cinnamon, nutmeg, soda and 1/4 teaspoon salt. Add raisins and nuts to dry mixture; add dry ingredients to creamed mixture. Dough will be very stiff. Mix well.
  • Add drained tomatoes and mix well. Pour into the prepared 9 x 13 inch pan.
  • Bake for 40 to 45 minutes in the preheated oven, or until toothpick inserted into cake comes out clean.

These are wonderful..came up with the recipe while trying to use up green tomatoes at the end of the season.

Number Of Ingredients 11

1 1/2 cups granulated sugar
1/2 cup butter or 1/2 cup margarine, softened
1 egg, well beaten
1/2 cup milk
3 1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons cream of tartar
1/2 teaspoon salt
1/2 cup granulated sugar
1 1/2 cups fresh green tomatoes, chopped
1 lemon, rind and juice

Steps:

  • In a medium saucepan, combine sugar, cornstarch and tomato pieces. Cook over low heat, stirring constantly, until very thick. Add grated rind and juice of 1 lemon, stir well and heat again to bubbling. Chill thoroughly.
  • For the cookie batter, cream granulated sugar and butter till fluffy. Add egg and milk and blend well. In a small bowl, combine flour, soda, cream of tartar and salt. Add to creamed mixture and blend well Chill at least 1 hour.
  • To assemble cookies, roll chilled dough to 1/8" thickness and cut cookies with the outer ring of a doughnut cutter, or cookie cutter. Top half the cookies with 1 tbls of chilled filling. Using the center ring from the remaining half of the cut out cookies and place on top of filled halves. Crimp edges with a fork to seal and bake in a 350* oven 15-20 minutes, or until lightly browned.
